When I started experamenting with Diabetic recipes I had to throw out two Whole batches of candies, however I messed around and found some wonderful recipes and this is ofcourse, one. I hope you enjoy it as much as I did.

Number Of Ingredients 8

1/2 cup margarine
3 teaspoons granulated sugar substitute
2 eggs
2 teaspoons water
2 cups flour
1 teaspoon cinnamon
1 egg white (slightly beaten)
1/2 cup pecans (chopped)

Steps:

  • Cream Margarine and Sugar Replacement unfil fluffy.
  • Beat in Whole Eggs, one at time.
  • Add Water, Flour and Cinnamon, mixing thoroughly.
  • Spread into well-greased 15x10 cookie sheet.
  • Pat with hand to level the surface.
  • Brush beaten Egg White over top and sprinkle with Pecans.
  • Press slightly into cookie dough.
  • Bake at 300* for 40-45 Minutes, or until golden.
  • Cut into 11/2-in. squares.

To heighten the toffee flavor, substitute toffee baking bits for half of the chopped almonds.

Number Of Ingredients 10

Crust
1 cup (2 sticks) unsalted butter, at room temperature
1 cup firmly packed light brown sugar
1 large egg yolk
1 teaspoon vanilla extract
1/4 teaspoon salt
2 cups all-purpose flour
Topping
7 to 8 ounces milk chocolate, broken into pieces, or 1 1/2 cups milk chocolate chips
1 cup chopped almonds, toasted

Steps:

  • 1. Preheat the oven to 350°F. Line a 9-by-13-inch baking pan with parchment.
  • 2. Prepare the crust. In a large bowl, with an electric mixer, beat together the butter and sugar on medium speed until light, about 2 minutes. Beat in the egg yolk, vanilla, and salt. On low speed, gradually beat in the flour just until mixed. The dough will be stiff. Pat the dough evenly over the bottom of the baking pan.
  • 3. Bake in the center of the oven until pale gold on top, about 20 minutes.
  • 4. Remove the pan from the oven and scatter the chocolate pieces evenly over the crust. Return the pan to the oven for 1 minute. Remove the pan again and, using a knife, spread the chocolate evenly over the crust. Sprinkle evenly with the almonds.
  • 5. Let cool completely in the pan on a wire rack. Using a sharp knife, cut into small squares, then carefully remove from the pan with a small offset spatula or an icing spatula.

These shortbread bars are really easy and have a great toffee taste!

1 cup butter, softened
1 cup packed brown sugar
1 teaspoon vanilla extract
1 large egg yolk
2 cups all-purpose flour
¼ teaspoon salt
⅔ cup milk chocolate chips
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
  • Beat butter, brown sugar, vanilla extract, and egg yolk in a large bowl; stir in flour and salt. Press dough into prepared baking dish.
  • Bake in preheated oven until crust is light brown, 25 to 30 minutes.
  • Immediately sprinkle chocolate chips over hot crust. Let stand until soft, about 5 minutes, and spread evenly; sprinkle with nuts. Cool pan on wire rack for 30 minutes.

My mother made this toffee every Christmas and had to hide it from us kids.

Number Of Ingredients 6

1 cup white sugar
½ pound butter
¼ cup water
⅛ teaspoon salt
1 teaspoon vanilla extract
6 (1.45 ounce) bars dark chocolate candy

Steps:

  • Grease a 9x13 inch baking pan.
  • Combine sugar, butter, water, and salt in a heavy saucepan. Cook, stirring continuously until the mixture reaches light crack stage (310 degrees F, 160 degrees C) on a candy thermometer). Remove the pan from heat and stir in vanilla. Pour mixture into the prepared baking pan.
  • Lay chocolate bars on top of the hot mixture and spread the melting chocolate over the top of the mixture. Chill well. Crack into pieces to serve.

  • Preheat the oven to 400°F grease or line 12 cupcake cups. Melt and slightly cool your butter. In a mixing bowl, whisk together the flour, baking soda, baking powder, allspice, cinnamon, nutmeg, and salt. Do not use an electric mixer to mix up the batter, be sure to use a whisk. In a separate mixing bowl, whisk butter, egg whites, and stevia. Fold in the Greek yogurt, until all the larger lumps are gone.
  • Add 1/4 of your flour to the wet mix and then add about 1/3 of your milk. Alternate between adding the flour mixture and milk, stirring until just incorporated. Then carefully fold in the carrots.
  • Split the batter between the prepared muffin cups. Bake at 400°F for 9 mins, then without opening the oven, reduce the oven temperature to 350°F and continue to bake for an additional 12-17 minutes, or until the tops are firm to the touch. Cool in the pan for about 8 minutes and then transfer to a cooling wire rack to cool completely.
  • While your cupcakes cool, make your frosting. In a stand mixer or with a hand mixer, cream the cream cheese and Greek yogurt together until smooth. Continue mixing and add the heavy, mixing on high until whipped. Once whipped, add the vanilla extract and stevia and blend. This recipe makes about 1 1/2 cups total. Chill until ready to frost.
