Puerto Rican Bistec encebollado or steak and onions, is an easy and economical family-style dinner made with tender stewed beef steak.

- In a large resealable bag, combine the steak, olive oil, garlic, oregano, sazon seasoning, onions, vinegar, beef stock, and salt. Seal and shake to mix. Refrigerate for at least 4 hours, or up to a couple of days.
- When you are ready to cook, dump the entire contents of the bag into a large deep skillet. Bring to a boil, reduce heat to low, cover and simmer until the beef is fork tender, about 40 minutes.

- Place the flank steak in a large baking dish and, if using the sliced onion, spread the slices over the meat.
- In a medium-sized bowl mix together the orange juice, lime juice, light beer, Kikkoman soy sauce, vegetable oil, and freshly ground black pepper.
- Pour the marinade over the meat; cover with a plastic film and refrigerate for at least one hour.
- Light up your charcoal grill, or preheat your gas grill. (You can also use a cast iron grill pan, the ones you use over the stove top). And brush your grill with a little vegetable oil as this will prevent the meat from sticking.
- Remove meat from marinade and pat dry. Place meat on the grill and cook for 8 to 10 minutes per side. (Cooking time will depend on the meat thickness and your personal preferences, either medium or well done). Remove meat from grill and place it on your cutting board. Slice it and serve it with corn tortillas and other garnishes mentioned above.
- If you would like to have the same effect as that of the Mexican-American restaurant, place the cooked meat on a preheated cast iron pan, add a few drops of Soy Sauce and serve immediately. Enjoy!

COLOMBIAN CARNE BISTEC - COLOMBIAN STEAK WITH ONIONS AND TOMATOES
Beef lovers, you'll love this quick Colombian Carne en Bistec steak dish cooked with onions, tomatoes and cumin.

- Season steak with 1 teaspoon salt and garlic powder.
- Heat a large frying pan until VERY HOT.
- Add 2 tsp of oil then half of the steak and cook less than a minute on each side until browned.
- Set steak aside, add another teaspoon of oil and cook remaining steak. Set aside.
- Reduce heat to medium, add another teaspoon of oil and add the onions.
- Cook 2 minutes, until soft then add the tomatoes.
- Season with more salt, to taste, about 1/4 to 1/2 teaspoon. Add black pepper and cumin and reduce heat to medium-low.
- Add 1/4 cup of water and simmer a few minutes to create a sauce, add more water if needed and taste adjust seasoning as needed.
- Return the steak to the pan along with the drippings, combine well and remove from heat.
- Serve over rice or veggie rice for a low carb option with a sunny-side up egg on top.

CARNE ASADA (GRILLED STEAK)
Carne asada, or grilled meat, is great backyard grill food. It is enjoyed throughout Central America and Mexico. Many recipes get very elaborate with the marinade ingredients, but the original recipe relies on a simple combination of onions and citrus juice to highlight the flavor of the beef. The ingredient measurements are pretty vague, but it lets you make it according to your own taste. Personally, I would use the maximum amounts of everything. Enjoy!

- In a large stainless steel or glass bowl, mix the meat with the onions, orange juice, salt, pepper and oil. Cover and marinate at least 1 hour, or better yet overnight.
- Start a good fire in your grill, preferably with mesquite charcoal. Remove the meat from its marinade, pat dry and grill over hot flame until the first side is well browned, from 5-7 minutes.
- Turn the meat over and grill on the other side until cooked to desired doneness. Remove to a clean platter.
- Slice meat into thin strips across the grain and serve as a topping for tostadas or as a filling for tacos or burritos.
- VARIATIONS:.
- Add some lime juice along with the orange juice in the marinade. Or use sour orange juice (naranja agria) if you can find it.
- Other possible marinade additions include ground cumin, chili powder and chopped cilantro. Everyone has their own favorites.
