These started as muffins but I thought they were a tad bland, so I made it into a bread.

cooking spray
2 cups all-purpose flour
1 ½ cups white sugar
1 tablespoon cinnamon sugar
2 teaspoons ground nutmeg
1 teaspoon baking powder
1 cup milk
2 eggs
¼ cup pumpkin butter
¼ cup canola oil
½ cup toffee bits

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a loaf pan with cooking spray.
  • Mix flour, white sugar, cinnamon sugar, nutmeg, and baking powder together in a bowl.
  • Whisk milk, eggs, pumpkin butter, and canola oil in a bowl until eggs are lightly beaten. Add flour mixture and mix until flour is no longer visible. Pour into the prepared loaf pan; sprinkle toffee bits on top.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 30 minutes. Cool in the pan, about 10 minutes. Invert onto a wire rack to cool completely.

Wow, your friends and family with this gorilla bread (aka monkey bread). Biscuits are stuffed with pumpkin and cream cheese. It's a fantastic flavor combination that adds tons of flavor to the treat. With the cinnamon, sugar, butter coating, the gorilla bread alone is quite tasty. The addition of toffee sauce, though, makes it even better. It's buttery and has a slight flavor of Southern Comfort. Altogether, it's a dreamy autumn dessert. Don't let the steps scare you. Seems like a lot, but it's easy to make.

PUMPKIN GORILLA BREAD
1 stick(s) butter (1/2 cup)
1 cup(s) brown sugar
3 tablespoon(s) cinnamon
1/2 cup(s) white sugar
2 can(s) giant refrigerator biscuits (like Pillsbury Grands)
1 box(es) cream cheese (regular 8 oz. sized brick)
1/2 cup(s) pureed pumpkin (like Libby's)
SOUTHERN COMFORT TOFFEE SAUCE
2 stick(s) butter (1 cup)
1 cup(s) brown sugar
1/2 cup(s) heavy cream
1 teaspoon(s) Southern Comfort

Steps:

  • Melt 1 stick of butter and 1 cup of brown sugar in a small pot over low heat.
  • Stir together the white sugar and the cinnamon. Set aside.
  • Open up the cream cheese and cut into 16 evenly sized cubes.
  • Next, open up the cans of biscuits and flatten each biscuit to about 1/2 inch. Place one cube of cream cheese, a dollop of pumpkin, and a sprinkle of cinnamon sugar in the center of each flattened biscuit.
  • Now seal up each biscuit to make individual dumplings.
  • Now, spray a Bundt pan with non-stick cooking spray. Pour 1/3 of the melted butter/brown sugar into the bottom of the Bundt pan.
  • Next, place 1/2 of the pumpkin/cream cheese/biscuit dumplings into the pan. Sprinkle with cinnamon sugar. Then pour another 1/3 of the melted butter/brown sugar on top of the dumplings.
  • Layer the rest of the pumpkin/cream cheese/biscuit dumplings.
  • Then sprinkle with more cinnamon sugar. Then top with the rest of the melted butter/brown sugar.
  • Bake in a 350-degree oven for 45 minutes.
  • To make the SoCo Toffee Sauce, place all ingredients into a saucepan over medium heat. Stir, bring to a boil. Once it boils, turn the heat down to low. Continue cooking/stirring until it comes together and is smooth and velvety.
  • Once the Pumpkin Gorilla Bread is baked, wait 5 minutes and invert onto a serving dish.
  • Serve with warm SoCo Toffee Sauce. Be prepared to be asked to make this for every potluck moving forward. NOM NOM NOM

This no-bake pie is rich, creamy, and sets up in about 1 hour. This makes quite a bit of filling, so you can make it in a 10-inch pie crust, or spoon the leftover in individual serving cups.

1 (1 ounce) package instant sugar-free butterscotch pudding mix
⅔ cup nonfat dry milk powder
⅓ cup water
1 cup frozen whipped topping, thawed
1 teaspoon pumpkin pie spice
2 tablespoons chopped pecans
2 tablespoons toffee baking bits
1 (9 inch) graham cracker crust

Steps:

  • In a large bowl, whisk together the pumpkin, dry pudding mix, dry milk powder and water. Blend in 1/4 cup whipped topping and pumpkin pie spice.
  • Pour filling into pie crust, top with remaining whipped topping, sprinkle with pecans and toffee chips. Refrigerate for 1 hour.
