TOFFEE BLONDIES
Yum, these toffee blondies are one of my favorites treats out there. For those who don't know, blondies are 'white' brownies. But just as delicious! (Maybe a little more?!)

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
- Beat brown sugar, butter, and eggs together in a large bowl with an electric mixer. Stir in flour, baking powder, baking soda, and salt. Stir in 1 cup toffee bits and chocolate chips. Spread evenly into the prepared pan.
- Bake in the preheated oven until golden brown and edges have started to pull away from the sides of the pan, 23 to 28 minutes. Remove from the oven and immediately sprinkle evenly with 1 tablespoon toffee bits.

- Preheat oven to 350. Butter a 10 x 15 pan and set aside. In medium bowl combine flour, baking powder & salt. Set aside. In large bowl beat butter, sugar & vanilla. Slowly beat in eggs. On low speed gradually add in flour mixture. Stir in toffee & pecans. Spread in pan. Bake 20-25 minutes. Let cool & cut. You can drizzle melted chocolate chips over if desired.

- In a large bowl, combine brown sugar, butter, eggs and vanilla just until blended.
- Combine flour, baking powder and salt; add to brown sugar mixture.
- Stir in chocolate chips.
- Spread into a a greased 13x9 pan.
- Bake at 350 for 18-20 minutes or until a toothpick inserted near the center comes out clean.
- Cool on a wire rack.
- Cut into bars.

CHEWY TOFFEE PECAN CHOCOLATE CHIP COOKIES
Absolutely the best cookies ever! I made enough to fill two gallon-size plastic bags and they were gone within a day. This recipe was a runner-up in a contest that was in the Paula Deen magazine. (Her recipe says this makes three dozen, but I came out with about eight dozen) I used chocolate covered toffee bits instead of the plain toffee bits and it was fantastic so don't worry if you can't find the plain ones. The cooking time is cumulative for all batches (and is approximate).

- Preheat oven to 350 degrees. Line baking sheets with parchment paper.
- In the work bowl of a food processor, add flour, pecans, baking soda, cream of tartar, and salt: process until nuts are finely ground into flour.
- In a large bowl, beat butter, shortening, white and dark brown sugars at medium-high speed with an electric mixer until fluffy, about 3 minutes.
- Add molasses, eggs, and vanilla; beat on low speed just until blended.
- Gradually add flour mixture, beathing just until dough forms.
- Stir in chocolate morsels and toffee bits.
- Roll dough into 1-inch balls; then roll balls in turbinado sugar. Do not flatten. NOTE: You may need more turbinado sugar - just use more if you need more. I ended up with probably closer to 2 cups.
- Place 2 inches apart on prepared baking sheets. Bake 10-12 minutes, or until lightly browned and slightly flattened.
- Let cool on pans for 15 minutes. Remove from pans, and cool completely on wire racks.
- NOTE: you may find it useful to rinse and dry hands every so often, as that helps the dough roll into a ball more easily.

- Preheat oven to 350 degrees. Line a 9X13 baking dish with parchment paper. Combine melted butter, brown and white sugar in a bowl. Mix with spoon. Next add in, eggs, vanilla, salt, baking powder and flour.
- Continue to mix with a spoon until combined. Next fold in toffee bits and pecans. I didn't use a mixer when I made this and it worked really well.
- Next press mixture into your 9X13 dish. I sprinkled extra pecans and toffee bits on top. Bake for 30 minutes or until center test done. These are a mixture between a brownie and a piece of cake.

- Preheat the oven to 350°F degrees. Line an 8-inch square baking pan with an 8x11-inch piece of parchment paper, leaving a 2-inch overhang on two sides. You'll have to create seams in the corners and along the edges of the pan to get it to stay put (you can always add a few dots of butter underneath if necessary).
- In a large bowl of an electric mixer, beat the melted butter with the brown sugar and granulated sugar until well combined, about 2 minutes. Beat in the egg and vanilla. On low speed, mix in the flour and salt until just blended. Stir in the chocolate chips and nuts. Transfer the batter to the prepared pan and spread evenly with a rubber spatula.
- Bake for 25 to 30 minutes, until the top is set and lightly golden. Set the pan on a wire rack to cool. Store the blondies in an airtight container at room temperature or freeze for longer storage.
- Freezer-Friendly Instructions: The blondies can be frozen for up to 3 months. After they are completely cooled, double-wrap them securely with aluminum foil or plastic freezer wrap. Thaw overnight on the countertop before serving.
