HOLIDAY TOFFEE BARS

Steps:
- Heat oven to 350°F. Spray 13x9-inch pan with cooking spray. In large bowl, mix butter, brown sugar, vanilla and egg yolk. Stir in flour and salt. Press in pan.
- Bake 25 to 30 minutes or until very light brown (crust will be soft). Immediately sprinkle chocolate chips on hot crust. Let stand about 5 minutes or until chocolate is soft; spread evenly. Sprinkle with nuts.
- Cool 30 minutes in pan on cooling rack. For bars, cut into 8 rows by 4 rows.

- In a large bowl, cream butter and brown sugar until light and fluffy. Beat in egg yolk and vanilla. Gradually add flour and salt, beating until smooth. , Press into a greased 15x10x1-in. baking pan. Bake at 350° for 17-19 minutes or until light golden brown. Immediately place chocolate bars on top; return to the oven for 1 minute. Spread melted chocolate over bars; sprinkle with pecans.

- In large bowl, combine flour and sugar. With pastry blender or 2 knives, use in scissor fashion, cut in butter until mixture resembles coarse crumbs. Combine egg yolk and vanilla. Add to crumb mixture, stirring until dough holds together. Press into 15x20-inch jellyroll pan. Bake 15-20 minutes at 350F until lightly browned.
- Remove from oven and immediately place chocolate bars over hot cookies. Let stand until chocolate is softened. Spread chocolate evenly over dough, then sprinkle with walnuts. Cool completely on wire rack. Cut into bars.

TOFFEE BARS
My mom made these bars when I was a child, and she still does, so they bring back a lot of memories for me. This recipe is my own variation that I developed in recent years; I love the colors of the cranberries and white chocolate - they're very festive. But sometimes I make them just like Mom with milk chocolate and walnuts. Most of the time I forget to add the salt, and I find it doesn't make any difference - they always taste delicious and are always a hit!

- Preheat the oven to 350 degrees F.
- In a mixer, beat the butter, sugar, egg yolk, and vanilla. Gradually mix in flour, then salt, and continue beating until well blended, scraping down the sides of the bowl as necessary. Transfer batter to a 9 by 13-inch pan, and flatten out with a rubber spatula.
- Bake until slightly browned, about 20 to 25 minutes. Remove from the oven and immediately place squares of white chocolate on top, gently spreading with an off-set spatula or dull knife as they melt. Sprinkle with nuts and cranberries. Allow to set, about 15 minutes, and then cut into squares.

- Preheat oven to 400 degrees F (205 degrees C).
- Line cookie sheet with saltine crackers in single layer.
- In a saucepan combine the sugar and the butter. Bring to a boil and boil for 3 minutes. Immediately pour over saltines and spread t cover crackers completely.

- Preheat oven to 350°.
- Line a cookie sheet or jellyroll pan with aluminum foil.
- Line pan tightly with crackers broken into fourths.
- In a large saucepan bring butter and brown sugar to a boil.
- Let boil for 3 minutes, stirring occasionaly.
- Spread butter/sugar mixture evenly over crackers.
- Bake for 350° for 5 minutes.
- They are done when crackers appear to be floating.
- Sprinkle with semi sweet morsels.
- Spread evenly as they melt, if not melting well, return pan to oven briefly.
- Sprinkle walnuts over chocolate and press firmly.
- Refrigerate until hard.
- Peel foil from cookies and break apart into separate pieces.
