Jamaican Spinners (Dumplings) image

Spinners are a type of Jamaican dumpling used primarily in soups and stews. Make them with just three ingredients-flour, water, and salt.

1 cup all-purpose flour
1/2 teaspoon salt
Water (as needed)

Steps:

  • Gather the ingredients.
  • In a small bowl, combine the flour and salt. Add just enough water, one tablespoon at a time, to make a stiff dough. Let the dough rest for 10 minutes.
  • Pinch off about 1/2 ounce of dough and roll it between the palms of your hands to form a softly tapered cylindrical shape. Repeat until all of the dough has been transformed into spinners.
  • The spinners can be cooked in a pot of boiling salted water for about 5 to 7 minutes or added to a soup or stew 5 minutes before the dish is due to finish cooking. To test for doneness, cut one open to make sure the dough is fully cooked.
  • Serve and enjoy!

Flat fried buttery dough usually served with cod fish in Jamaica, as a big weekend breakfast, slightly different from the American dumplings.

4 cups all-purpose flour
2 teaspoons baking powder
1 ½ teaspoons salt
½ cup butter
½ cup cold water
1 cup vegetable oil for frying

Steps:

  • In a large bowl, stir together the flour, baking powder and salt. Rub in the butter until it is in pieces no larger than peas. Mix in water 1 tablespoon at a time just until the mixture is wet enough to form into a ball. The dough should be a firm consistency. Knead briefly.
  • Heat the oil in a large heavy skillet over medium heat until hot. Break off pieces of the dough and shape into a patty - kind of like a flat biscuit. Place just enough of the dumplings in the pan so they are not crowded. Fry on each side until golden brown, about 3 minutes per side. Remove from the pan and drain on paper towels before serving.

1/2 cup finely chopped scallion
1/4 cup finely chopped onion
3/4 teaspoon curry powder
1/4 teaspoon dried thyme
4 cups vegetable oil, divided
1/2 pound ground beef
2 tablespoons fine dry bread crumbs
Hot sauce (preferably Jamaican)
About 30 dumpling or wonton wrappers

Steps:

  • Cook scallion, onion, curry powder, and thyme in 1 1/2 tablespoons oil with 1/2 teaspoon salt and 1/4 teaspoon pepper in a 10-inch skillet over medium heat, stirring occasionally, until softened, about 5 minutes. Stir in beef and bread crumbs and cook until meat is just cooked through, about 3 minutes. Season with hot sauce. Cool.
  • Put a rounded teaspoon filling in center of a wrapper. Lightly brush edge of wrapper with water, then fold in half (diagonally if square) and press to seal. Form remaining dumplings.
  • Heat 1 inch oil to 350°F in a 12-inch skillet. Fry dumplings in 3 batches, turning once or twice, until golden-brown, 2 to 3 minutes per batch.
