APPLE PIE WITH CHEESE, PLEASE
This apple pie has Cheddar cheese baked right inside! Cheddar lines the bottom of the crust and perfectly harmonizes with the apples. Just like you'd find flatbread with goat cheese and honey, the cheese baked right in with the apples provides a buttery and melty texture.

- Preheat the oven to 425 degrees F (220 degrees C).
- Line the bottom of the pie crust with Cheddar cheese slices. Place apples into the crust in a circular fashion, layering slices on top of one another. Set aside.
- Melt butter in a medium saucepan over medium heat. Add flour and mix well to combine, removing any lumps. Add white sugar, brown sugar, and 1/4 cup water. Bring to a slight simmer and cook, stirring occasionally, for 5 minutes. Remove from heat and let cool, 5 to 10 minutes.
- Pour butter mixture over apples to cover all slices. Top with additional pie crust; seal edges. Pierce the top with a fork to allow steam to release. Mix egg white and 1 teaspoon water together in a small bowl; baste over pie crust using a basting brush.
- Bake in the preheated oven for 15 minutes. Reduce oven temperature to 350 degrees F (175 degrees C).
- Continue to bake until golden and set, about 35 minutes more.

- Position an oven rack on the bottom third of the oven and preheat to 400 degrees F. Butter the sides and bottom of a 9-inch-diameter glass or ceramic pie dish.
- Cut the apple quarters into 3 wedges. Mix the apples, cheese, sugar, butter, flour, cinnamon, nutmeg and salt in a medium bowl.
- Unroll one crust and place in the buttered pie dish. Brush the inside of the crust with some of the egg white to coat. Pour the apple filling into the crust. Unroll the second crust and place on top of the filling. Pinch the edge of the top crust and the edge of the bottom crust together to seal. Fold the double edge under and crimp, making a decorative edge. Brush the top of the pie with more of the egg white. Cut several slits in the top crust to allow steam to escape.
- Bake the pie until the crust is deep golden and the filling is bubbling through the slits, about 1 hour. Cover the edges of the pie with foil if the crust browns too quickly. Cool the pie for about 20 minutes before serving.

- Prepare pie crust for 2-crust pie in your usual manner.
- Combine sugar, 1/4 cup corn syrup, 1 T. butter, cornstarch, cinnamon and salt.
- Mix well.
- Mix in apples.
- Heat oven to 425.
- Roll out bottom pie shell and put in 9-inch pan.
- Fill with apples.
- Roll out top pastry and place on filling.
- Seal edges and flute.
- Cut 6 slashes on top crust.
- Bake for 10 minutes.
- Reduce heat to 350 and bake until crust is light golden about 30 minutes.
- Meanwhile make topping by mixing brown sugar, flour, walnuts, 3 T. corn syrup and 3 T. melted butter.
- Remove pie when baked and pour on topping.
- Return to oven for 5 more minutes.
- Cool on wire rack 10 minutes.
- Serve warm.

- Chop the apples into small chunks. Heat the butter in a pan over a medium-high heat until sizzling, then scatter in most of the sugar, reserving about 1 tsp. Bubble until the sugar has dissolved and the mixture is sticky. Tip in the apples and stir to coat. Season with a small pinch of sea salt flakes and cook for 5-6 mins until the apples have softened and started to caramelise and any juices they have released have evaporated. Remove from the heat and set aside to cool completely. Once cooled, will keep chilled for up to a day.
- Heat the oven to 200C/180C fan/gas 6 with a baking tray inside on the middle shelf. Unravel the pastry on its baking parchment. Spoon the apple mixture over the right side of the pastry, leaving about a 1-2cm border around the edge, then brush the border all around the pastry with some of the beaten egg yolk. Fold the left side of the pastry over the apple filling to enclose it. Crimp or pinch the edge, or use a fork to seal. Use the back of a knife to score six triangles over the top of the pie, and make a few small slits in the centre of each. Brush all over with the rest of the egg yolk, then scatter with the reserved 1 tsp sugar.
- Carefully lift the pie, still on its parchment, onto the hot baking tray in the oven. Bake for 25-30 mins until puffed up and deeply golden. Leave to cool for 10 mins, then cut into wedges using the marked-out triangles as a guide.

- Preheat oven to 375.
- Crust: Combine walnuts & flour; mix in melted butter. Press into bottom and 1-2 inches up sides of 9" springform pan.
- Filling: In large bowl beat cream cheese, add milk, apple juice and eggs. Beat only until combined. Stir in chopped apples.
- Place springform pan on shallow baking pan. Bake for 40-45 minutes. While baking, poach apple slices for 1-2 minutes, or until soft. Drain and refrigerate until needed.
- Cool cheesecake on wire rack for 15 minutes. Loosen crust from sides. Cool 30 more minutes; remove pan sides. Cool completely. Refrigerate 5 hours or overnight.
- Arrange apple slices on top of cheesecake. Drizzle with warm caramel topping and serve.

- To make the pastry, pulse the flour, spices, icing sugar and butter in a food processor until the mixture resembles fine breadcrumbs. Next, add the egg a little at a time, and mix. Do this in a food processor, or by hand with a knife. Once the mixture comes together into a ball, wrap and chill for at least 30 minutes.
- Preheat the oven to 180°C, fan 160°C, gas 4. Peel and core the apples, then chop into 2cm chunks and put them in a large pan. Mix the lemon juice with the cornflour to make a paste and add to the apples. Heat gently and add the caster sugar and spices. Reduce the heat to very low and cook for 10 minutes, stirring regularly, then remove from the heat. Stir through the caramel to coat the apples, then leave to cool.
- Meanwhile, break off p.p1 {margin: 0.0px 0.0px 0.0px 0.0px; font: 12.0px 'Lucida Grande'} ¾ of the pastry (set the other ¼ aside for the lattice) and roll out on a lightly floured surface to about 5mm thick to line a 24cm pie dish, about 4-5cm deep, with an overhang. Line with scrunched- up baking paper, fill with baking beans and blind-bake for 20 minutes. Remove the paper and beans and cook for another 10 minutes or until the pastry looks crisp and golden. Once the base is baked, add the cooled filling.
- Roll out the remaining pastry to a 5mm thickness and slice into strips about 1cm wide, long enough to reach right across the pie dish. Create a lattice over the pie using the strips, sticking them to the pastry with a bit of beaten egg. Trim off excess pastry, brush the top with beaten egg and sprinkle with demerara sugar. Bake for 35-40 minutes on a baking tray until the pastry is golden brown and the filling is bubbling. Let the pie cool for 15-20 minutes before serving with ice cream.
