Today is February 5, 2011. We just made this soup for lunch today. It was a big hit with the children and adults! This is an easy recipe full of veggies! Enjoy!

2-4 large chicken legs/with thighs
1 large onion (chopped)
3 cup(s) stir fried veggies of choice
3 package(s) ramen chicken noodle soup
1/2 teaspoon(s) each: salt and pepper
1 teaspoon(s) each: poultry seasoning and garlic powder

Steps:

  • Put chicken legs in a large sauce pan. Fill the pan 3/4 full with water. Bring to a boil for 15 minutes on high. Reduce heat and simmer on medium - low for 35 minutes (or until the chicken is done and tender). Remove the chicken from the pan, let cool. Add the onion and stir fry vegetables to the pan. Cook until the vegetables are done to your liking, while the veggies are cooking, remove the meat from the bones. Add the meat to the pan and add seasonings inclucing the packets from the ramen noodles. Add the ramaen noodles. Cook about 5 - 10 minutes more.
  • This is an easy and tasty soup.

Black sesame seeds, bean sprouts, and cilantro garnish this delicious chicken stir-fry dish.

3 tablespoons peanut oil
2 cloves garlic, smashed
1 fresh 3-inch piece ginger, peeled and cut into long, thin strips
2 whole boneless chicken breasts, (1 1/2 pounds), cut into strips
12 shiitake or white mushrooms, stems removed
1 red pepper, julienned
4 scallions, green parts, cut into 3-inch lengths
1 cup low-sodium chicken stock, skimmed of fat
2 teaspoons cornstarch, mixed with 2 teaspoons cold water
4 tablespoons soy sauce
2 teaspoons rice-wine vinegar
1 pound somen, soba, linguine, or spaghetti noodles, cooked
1 cup fresh bean sprouts, as garnish
1 small bunch fresh cilantro, as garnish
Black or white sesame seeds, as garnish

Steps:

  • Heat 2 tablespoons oil in a wok or heavy skillet. Add garlic and half the ginger; cook slowly until brown. Discard garlic and ginger.
  • Brown chicken in wok. Add mushrooms, remaining ginger, pepper strips, and scallions; cook until soft, 3 to 4 minutes.
  • Add stock, soy sauce, vinegar, and cornstarch mixture to the wok. Bring to a boil, and cook for 2 minutes. Transfer to a bowl, and keep warm.
  • In wok, heat 1 tablespoon oil. Add noodles and a few spoonfuls of sauce, and heat. Top with chicken mixture; garnish, and serve.

Number Of Ingredients 4

1/2 pound lean pork
1 stalk leek
1/2 pound spinach
2 tablespoons oils

Steps:

  • 1. Shred pork and leek. Stem spinach and cut leaves in half. 2. Heat oil. Add pork and stir-fry until it loses its pinkness (1 to 2 minutes). 3. Add leek and spinach stir-fry 1 minute more. 4. Arrange mixture as a topping over noodles in soup and serve. VARIATION: * For the spinach, substitute 2 cups Chinese lettuce, cut in 2-inch sections and stir-fry in step 3 until softened. 1/2 cup bamboo shoots
1/2 pound spinach
2 slices smoked ham
2 tablespoons oils
1/4 teaspoon salt
2 teaspoons soy sauce

Steps:

  • 1. Soak dried mushrooms. 2. Slice chicken. Combine soy sauce, sugar, salt and pepper. Add to chicken and toss to coat. 3. Slice bamboo shoots and soaked mushrooms. Shred spinach and mince ham. 4· Heat oil. Add remaining salt, then chicken and stir-fry until it loses its pinkness (about 2 minutes). 5. Add bamboo shoots, mushrooms and spinach stir-fry 2 minutes more. Sprinkle with remaining soy sauce. 6. Arrange mixture as a topping over noodles in soup. Garnish with minced ham and serve. VARIATIONS: * For the chicken, substitute shelled and deveined shrimp. * For the spinach, substitute 2 tablespoons cloud ear mushrooms (soaked), sliced and 1/4 cup lily buds (soaked), cut in two. 1/2 cup water chestnut
2 tablespoons oils
1/2 teaspoon salt
1/2 cup Stock, Chicken or favorite stock
2 teaspoons cornstarch
2 tablespoons water

Steps:

  • 1. Slice chicken, fresh mushrooms and water chestnuts. 2. Heat oil. Add salt, then chicken, and stir-fry until chicken loses its pinkness (about 2 minutes). 3. Add mushrooms and water chestnuts stir-fry until mushrooms begin to soften (about 1 minute more). 4. Add stock and heat quickly. Then simmer, covered, 3 to 4 minutes over medium heat. 5. Meanwhile blend cornstarch and cold water to a paste then stir in to thicken chicken mixture. Arrange as a topping over noodles in soup and serve. VARIATIONS: * For the water chestnuts, substitute bamboo shoots. * After step 3, sprinkle the chicken and vegetables with 1 to 2 teaspoons soy sauce. * In step 5, add to the cornstarch paste 1 to 2 teaspoons soy sauce, 1/4 teaspoon salt, 1/4 teaspoon sugar and a dash of pepper. Basic Noodles In Soup II: Simple Toppings or Stir-Fried Toppings
1/2 pound egg Parboiled Noodles I or II
2 teaspoons soy sauce
1 teaspoon peanut oil
few drops sesame oil
1/8 teaspoon pepper
6 cups Stock, Chicken or favorite stock

Steps:

  • 1. Prepare any of the simple or stir-fried toppings. 2. Parboil noodles (from the Edit Tap, click to open recipe and follow instructions). 3. Place noodles in a bowl. Add soy sauce, peanut oil, sesame oil and pepper, and toss well. Keep noodles warm. Meanwhile bring stock to a boil. 4. Transfer noodles to a large tureen or to individual soup bowls. Arrange topping over noodles then pour heated stock over and serve at once. NOTE: When stir-fried toppings are used, the stock is added first in step 4, then the topping. VARIATIONS: * Leave the noodles unseasoned. Season the stock instead with 1/2 teaspoon salt and the pepper. * After step 2, brown the noodles in a little oil before placing them in soup bowls.   • Boil 8 cups of water and remove from the heat. Add the noodles and stir to cover. Set aside, stirring frequently and separating the noodles. Soak the noodles for about 8 minutes until tender. Drain, drizzle lightly with 1/2 tablespoon oil and toss well to separate.
  • Set a large mixing bowl next to the stove. In a glass measuring cup or small bowl, stir together 1/2 cup soy sauce, chili paste, sugar, ginger, and garlic. Set the prepared sauce next to the empty mixing bowl by the stove.
  • In a large stainless skillet, over high heat, warm 1/2 tablespoon oil until shimmering. Add the carrots, stir and cook 1 minute. Add the broccoli, stir, cover with lid and cook 1 minute. Add the mushrooms and the remaining 2 tablespoons of soy sauce. Scrape the bottom of the pan as needed and toss to coat everything with sauce. Add the cabbage to the skillet and continue cooking for about 2-3 minutes. The vegetables should be brightly colored and barely tender.
  • Transfer the vegetable mixture to the mixing bowl next to the stove. Add 1 tablespoon oil to the empty skillet over high heat. Add the chicken and sprinkle with cornstarch. Stir well to coat. Continue cooking for 2 minutes, turning or stirring the pieces frequently.

  • Cook noodles in a large pot of lightly salted boiling water according to package directions, using a pair of tongs or chopsticks to encourage noodles to loosen up and separate. Drain noodles in a colander and rinse under cold running water to remove any excess starch. Transfer noodles to a large bowl and toss with 2 tsp. grapeseed oil to prevent them from sticking together. Set noodles aside.
  • Separate dark green tops from white and pale green parts of scallions; thinly slice tops and set aside. Thinly slice white and pale green parts of scallions and set aside separately. Heat 1 Tbsp. grapeseed oil in a large skillet (at least 12" if you’ve got one) over medium-high. Cook cabbage, tossing occasionally, until charred in spots but still quite crisp, about 4 minutes. Season lightly with salt and transfer to a large bowl.
  • Wipe out skillet, pour in 1 Tbsp. grapeseed oil, and return to medium-high heat. Cook onion, carrots, and celery, tossing occasionally, until crisp-tender, about 3 minutes; season lightly with salt. Transfer vegetables to bowl with cabbage. Wipe out skillet again and let cool slightly.
  • Heat remaining 1 Tbsp. grapeseed oil in skillet (still over medium-high), then cook chile, ginger, garlic, and reserved white and pale green parts of scallions, stirring often, until fragrant, about 30 seconds. Add chicken; stir to coat, then spread out in an even layer. Cook, undisturbed, 1 minute. Season with salt, then stir and continue to cook, stirring occasionally, until chicken is cooked through, about 3 minutes.
