TURKEY BACON MELT SANDWICH
Adobo sauce lends a new flavor to this hot turkey sandwich with crisp bacon and melted American cheese.

Steps:
- Heat broiler.
- Combine mayonnaise and adobo sauce in bowl. Evenly spread on 1 side of each toast slice.
- Layer 4 slices toast, spread-side up, with 1/4 turkey and 2 slices tomato each; sprinkle with black pepper. Top each with 2 slices bacon and 2 slices cheese.
- Place sandwiches onto ungreased baking sheet. Broil 5 to 6 inches from heat 1-2 minutes or until cheese begins to melt.
- Top sandwiches with lettuce leaves and remaining toast slices, spread-side down.

- In 12-inch nonstick skillet, cook bacon until crisp; drain on paper towels.
- Meanwhile, spread butter on one side of each bread slice. Spread rounded tablespoons of the tomatoes on unbuttered side of 4 of the bread slices. Top each with one slice of the cheese, turkey, bacon, the second slice of cheese and the remaining bread slice, buttered side up.
- Heat griddle or 12-inch nonstick skillet over medium heat. In hot skillet, cook sandwiches 3 minutes or until cheese is slightly melted and bread is browned. Turn sandwiches over; cook 3 minutes longer or until cheese is melted and sandwich is deep golden brown.

These are are wonderful comfort food that can be prepared for lunch or dinner with a side salad or soup...... The dressing gives this sandwich a kick and if you used sharp cheddar instead of regular it would be that much better...... I adapted this recipe from the Pillsbury 2008 Annual Recipes Cookbook

- IN small bowl,mix mayonnaise and dressing.
- Spread on one side of each slice of bread.
- Top each of 4 bread slices with turkey, baconk, tomato,cheese and remaining bread slices, mayonnaise mixture side down.
- Spread butter on one side of each sandwich.
- In a 12 inches skillet, place sandwiches butter side down.
- Spread butter over top of each sandwich.
- Cover; cook over medium-low heat for 6-8 minutes or until bottoms are golden brown.
- Turn sandwiches; cover and cook 5-6 minutes longer or until bottoms are golden brown and cheese is melted.

ROAST TURKEY, AVOCADO AND BACON SANDWICH
Steps:
- Preheat the oven to 400 degrees F.
- To prepare the Roast Turkey: toss the herbs and butter into the bowl of a food processor and pulse until green and smooth. Rub the turkey breast with half of the herbed butter and with salt and pepper. Place the turkey on a rack in a roasting pan and put in the oven. Let the turkey cook for 1 hour, basting every 20 minutes with the butter and pan juices. The turkey is done when it reaches an internal temperature of 165 degrees F. Let rest for 15 minutes on the cutting board.
- To assemble the sandwich: spread a thin layer of the remaining butter on 1 piece of the bread. Place 1 slice of the cheese and several slices of the turkey breast on unbuttered side of the bread. Peel and slice the avocado, toss with the lemon juice, olive oil, salt and pepper. Add avocado slices, crispy bacon slices, lettuce and another slice of fontina cheese to the top of that. Sprinkle again with salt and pepper. Slather the remaining piece of bread with the butter and place on unbuttered side out, on top of the bacon.
- Heat a cast-iron or other heavy skillet over medium-low heat. Add 1 tablespoon of butter and let it melt, swirling the pan around to coat. Put the sandwich in the pan and weigh it down with a heavy pot or can (or wrap an ordinary brick in aluminum foil and set it on top to compress the sandwich.) Toast for 1 minute, turn the sandwich over before the bread begins to burn. Repeat with remaining sandwiches. Cut the sandwiches in half and serve.

- Bread: Use 3 slices of a good white sandwich bread (pain au lait or Pullman loaves are ideal). Be sure to toast it!
- Lettuce: Bibb and Boston lettuce both have nice small, soft leaves that fit well on the sandwich; shredded iceberg can be unruly.
- Tomatoes: Add 2 slices of tomato to each layer of a club; season with salt and pepper before you continue building the sandwich.
- Turkey: Fresh roasted turkey is key. Rub a 2 1/4-pound skinless, boneless turkey breast with olive oil; sprinkle generously with Italian seasoning, salt and pepper. Roast 10 minutes at 425˚ F, then reduce to 350˚ F and roast until the internal temperature is 160˚ F, 15 to 20 minutes. Let cool, then slice.
- Mayonnaise: Spread a thick layer of mayo on each slice of toasted bread.
- Bacon: You'll want 3 slices per sandwich (1 1/2 slices in each layer). Halve the slices first, then cook in a skillet over medium heat until crisp.

- Cook bacon in large skillet over medium heat until crisp. Transfer to paper towels. Pour off fat from skillet; reserve skillet.
- Mash mayonnaise and blue cheese in bowl to coarse puree; season with pepper. Place bread on work surface. Divide cheese mixture among bread slices, spreading evenly. Divide bacon, radicchio, and turkey between 2 bread slices. Top with remaining bread, cheese side down. Melt 2 teaspoons butter in reserved skillet over medium heat. Place sandwiches in skillet. Spread 2 teaspoons butter on top pieces of bread. Cover with lid that is slightly smaller than skillet. Cook sandwiches until lightly browned, about 4 minutes per side.
