TINY APPETIZER BISCUITS
These little gems were being demonstrated at a local bulk food store - the are wonderful . To serve slice them in half and fill with some ham spread, smoked salmon or a bite of sausage - use your imagination They can be frozen

Steps:
- Combine all the dry ingredients in a bowl.
- Add the water and mix in lightly.
- Knead on a board 4 or 5 times.
- Pat down to 1/2" thickness.
- Cut out small circles 1" to 1 1/2" (I used a campange flute).
- Bake on a lightly sprayed cookie sheet or line with parchment paper.
- Bake in a 425F oven for 10-12 minutes or until golden.

MINI BISCUITS - PARTY BISCUITS RECIPE
Follow our easy, step-by-step, photo illustrated, instructions for making these cute little Mini-Biscuits. Call them Party Biscuits, call them Mini Biscuits....just call them quick, easy and very good. Perfect for Christmas or any time of the year.

Steps:
- Place sifter in a large mixing bowl, add flour and sift into bowl.
- Create a well in the middle of the flour.
- Add lard.
- Add buttermilk.
- Squish lard and buttermilk between fingers until fairly smooth.
- Stir the wet ingredients into the flour using small circular motions. Draw the flour into the wet ingredients slowly as you continue to stir.
- When the dough ball forms, flip the dough and knead it a few times, working in flour as needed until a soft, smooth dough ball is achieved. Use a light touch as you work without pressing the dough too hard.
- Sprinkle your work surface with flour.
- Place the dough ball on the floured work surface, sprinkle dough lightly with flour.
- Lightly flour rolling pin then, gently roll the dough out until it's about ½ inch thick.
- Dip your biscuit cutter into some flour, press into dough, cut and remove biscuits.
- Place the formed biscuit in a pan that has been lightly greased with lard.
- Repeat the process until all dough is used.
- Bake at 500º for about 8-10 minutes or until the tops start to lightly brown.
- Remove from oven, brush with butter, cover with a clean cloth and let rest.
- Serve warm and enjoy.
MINI CHEESE BISCUITS
Steps:
- Preheat oven to 450º F.
- Add 2 cups flour, bacon (be sure it's cooled), cheese, and herbs/spices to a medium bowl. Make a well in the middle and pour in cold half and half. Stir with a wooden spoon until mixed.
- Dust the counter with 1/2 cup of flour, and add biscuit dough on top. The dough will be sticky, fold the dough in thirds (like a letter) 3-4 times, until about 1/2 the flour has been mixed into the dough and it is no longer sticky. Pat into a rectangle about 1" thick.
- Cut biscuits with a 1¾" biscuit cutter (or small shot glass). Press down and bring straight up. Do not twist biscuit cutter. Pat excess dough out, cut, and repeat process again. You will have about 35 mini biscuits.
- Place biscuits on a cookie sheet about 1" apart. Bake for 10-12 minutes, until golden. Serve with herbed butter or cheese dip.

- Preheat oven to 400°. Cut biscuits in half to make half-circles; place 2 in. apart on ungreased baking sheets. Spread mustard over tops. Bake until golden brown, 8-10 minutes. Cool completely on wire racks., Mix butter and green onions. In another bowl, mix mustard, mayonnaise and honey. Split each biscuit into 2 layers., Spread biscuit bottoms with butter mixture; top with ham, cheese, romaine and biscuit tops. Spoon mustard mixture over tops. Thread 1 olive onto each toothpick; insert into stacks. Serve immediately.
