CREAMY DAIRY-FREE MASHED POTATOES
Mashed potatoes can be creamy without butter, milk, or cream. Either chicken stock or broth can be used, although stock has fewer ingredients. These are luscious and super healthy.

Steps:
- Cut each potato into quarters. Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes. Drain and let dry.
- Return potatoes to the same pot. Add chicken stock and garlic and mash potatoes with a potato masher. Add more stock if needed for desired consistency. Season with salt and pepper. Garnish with parsley.

- While the water is coming to a boil, chop the potatoes into 1″ cubes. I like to leave the skins on, but feel free to peel the potatoes if you prefer no skins.
- When the water is boiling, add the potatoes to the water and continue to boil for 15-20 minutes, until the potatoes are tender and a fork is easily inserted and removed from the potato.
- Drain the potatoes in a colander, then return the potatoes back to the pot. Turn off the heat. Add 1.5 cups chicken stock, and start mashing with a potato masher. You want the potatoes to become smooth and velvety. Continue adding chicken stock until the potatoes are smooth with no lumps. It usually takes me the whole 2 cups chicken stock, but it will depend on your potatoes.

- Meanwhile, place potatoes in a large saucepan. Fill with cold water to cover by 2 inches. Add 2 tablespoons of the salt, and bring to a boil over high. Reduce heat to medium-high, and gently boil until potatoes are tender, about 12 minutes. Remove from heat, and drain. Return cooked potatoes to saucepan.
- Mash potatoes to desired degree of smoothness. Stir in chicken broth, caramelized onions, pepper, and remaining 2 1/2 teaspoons salt. Transfer to a bowl or platter, and sprinkle with chives.
