8 cups water
1/4 cup extra virgin olive oil
2 cups whole milk
2 cups quick-cooking polenta or 2 cups fine cornmeal
salt and pepper
3 tablespoons softened butter
2 cups fresh ricotta
1 cup fresh mozzarella cheese, cut into small dice
1 cup grated Fontina cheese
1/2 cup grated parmesan cheese

Steps:

  • Preheat oven on broil setting.
  • Bring water, olive oil, and milk to a boil in 4-quart sauce pan. Add polenta in a thin stream, stirring constantly with a whisk. Lower heat and cook while stirring until polenta is thick as porridge, about 5 to 7 minutes.
  • Remove from heat and whisk in ricotta evenly through polenta then fold in mozzarella and fontina; cheeses will begin to melt. Season with salt and pepper.
  • Butter an 8x12-inch casserole or gratin dish evenly. Pour hot polenta into casserole and spread evenly with a spatula. Sprinkle grated Parmesan cheese evenly across top of polenta. Place in oven on broiler setting on middle rack and bake for 3 to 5 minutes, or until top of polenta is golden brown. Remove from oven, set aside for 5 to 7 minutes and then serve. Letting polenta rest will allow cheese to melt evenly inside casserole, which also needs to cool down because of it being so hot.

1 1/2 teaspoons salt

  • In a food processor, combine basil, garlic, cheese, salt and pepper.
  • Process until a coarse paste forms. With machine on, slowly add oil.
  • Use immediately or stir in the refrigerator up to 4 days. Or freeze.

20 ounces boneless skinless chicken breasts (cut in strips)
1 cup olive oil
1 (32 ounce) can Italian plum tomatoes
2 shallots (sliced)
2 cups mushrooms (sliced)
1 red pepper (sliced)
1/2 cup pitted Spanish olives (sliced in half)
3 tablespoons chopped fresh basil
2 tablespoons chopped fresh rosemary
2 teaspoons ground black pepper
1 teaspoon celery salt
2 tablespoons sugar
1/2 cup heavy cream
1/2 cup grated cheese

Steps:

  • In saucepan over medium heat, place ½ cup olive oil.
  • When hot, add mushrooms, shallots and red peppers.
  • Cook for 3 to 4 minutes or until mushrooms start to soften.
  • Turn to low heat.
  • Crush plum tomatoes by hand and add.
  • Stir thoroughly.
  • Add basil, rosemary, black pepper, celery salt and sugar, and simmer for 15 minutes.
  • Add Spanish olives.
  • This sauce can be made ahead of time if desired.
  • When ready to eat, cut chicken in thin strips, approximately l ounce.
  • Lightly coat with flour and place in hot frying pan, over medium heat, containing ½ cup olive oil.
  • When chicken is golden brown, turn it over.
  • Add prepared sauce to chicken and add ½ cup heavy cream.
  • Stir thoroughly.
  • Serve Chicken Genovese over pasta or white rice.
  • Top with grated cheese and fresh parsley, if desired.

4 halibut steaks, fresh
1 teaspoon salt
1/2 teaspoon black pepper, freshly ground
1/4 cup flour, all purpose
1/4 cup butter
1/4 cup white wine, dry
1 lemon, juiced
1/2 cup whipping cream
4 tablespoons basil, fresh, finely chopped
2 tablespoons parsley, fresh, finely chopped
2 tablespoons capers, drained
1/2 teaspoon salt
1/4 teaspoon black pepper, freshly ground
2 tablespoons parsley, fresh, finely chopped, garnish

Steps:

  • Rinse the halibut and pat dry. Season with salt and pepper and dust with the flour.
  • Fry the steaks in butter for 4 - 5 minutes per side until golden brown, then remove and place on platter, set aside and keep warm.
  • Deglaze the pan with the white wine, add the lemon juice and mix in, then add the ceam and mix it in also, simmer for 3 minutes.
  • Next add the basil, parsley and capers, season with salt and pepper.
  • Spoon the sauce over the halibut and sprinkle with the parsley and serve immediately.

1/2 cup olive oil
1 medium onion, chopped
2 garlic cloves, minced
2 -3 cups savoy cabbage, shredded
2 stalks celery, chopped
2 carrots, chopped
1 quart beef broth (preferably rich)
1 quart water
4 ounces tomato paste
1/4 cup fresh herb, minced (parsley, basil, or marjoram)
3 small zucchini, cut into half-moon slices
1 cup Italian cut green beans, sliced (fresh or frozen, regular green beans are fine, too)
1 (15 ounce) can cannellini beans or 1 (15 ounce) can great northern beans
1 (15 ounce) can kidney beans or 1 (15 ounce) can pinto beans
6 ounces genoa salami, diced in small cubes
1/2 cup pasta, small (like small shells)
salt and black pepper, freshly ground (to taste)
2 tablespoons pesto sauce (see our Poppy Seed Pie)
parmesan cheese, freshly grated

Steps:

  • In a large saucepan, heat oil.
  • Saute onion and garlic 2-3 minutes.
  • Add cabbage, celery, and carrots. Saute 5 minutes.
  • Add broth, water, tomato paste, and herbs. Partially cover pan and simmer 30 minutes.
  • Add zucchini, beans, and salami; cook 15 minutes.
  • Add pasta; cook until al dente.
  • Add salt and pepper.
  • Stir in pesto sauce just before serving.
  • Serve in large bowls with grated cheese.

PESTO ALLA GENOVESE

This is a proper pesto, with the cheese, garlic, and pignoli providing subtle accompaniment to the bright freshness of basil. The mortar-and-pestle preparation keeps it from turning black, as it would if made with a knife or food processor. You can keep this pesto in the fridge up to six months, as long as you keep a thin film of oil floating on top. This is a thin sauce, not the thick, gloppy stuff you get in the supermarket.

1 bunch fresh basil, washed and thoroughly dried (80 medium sized leaves, about 1.5 ounces by weight)
2 garlic cloves, peeled
1 pinch salt
2 tablespoons pine nuts, toasted
3 tablespoons freshly grated parmigiano-reggiano cheese
3 tablespoons freshly grated pecorino cheese
1 cup extra virgin olive oil

Steps:

  • Pound the basil, garlic, salt and pine nuts together in the mortar until they are a paste. Start by grinding the mass against the sides of the mortar, using a twisting motion of the pestle. Once everything has been reduced to a paste, you can start pounding.
  • Slowly add the cheeses, about a tablespoon at a time, continuing to pound.
  • Once the cheeses are fully incorporated, scrape it into a bowl and begin slowly adding the olive oil, stirring constantly.
  • Transfer any leftovers into a sealable jar, and float a thin layer of oil on top.

CANNELONNI GENOVESE

A favorite from a local Italian restaurant, here is a group effort to duplicate the taste at home. It is the result of many conversations with the owner, whi was very reluctant to share his recipe but gladly answered questions about our technique and ingredients. It is a work in progress; thankfully each version has been tasty so far. At the time of this posting, Rosatella is not a recognized ingredient. You will need a batch of it to cover the stuffed canneloni.

2 tablespoons butter
1 onion, peeled and chopped
8 ounces spinach, chopped
16 ounces mushrooms, sliced
2 lbs ground veal
8 ounces ricotta cheese (1 cup)
3/4 cup parmesan cheese
1 large egg
1/2 teaspoon nutmeg, ground
3/4 teaspoon salt
4 cups Fontina cheese (about 1 lb)
2 cups mozzarella cheese (optional)
1/4 cup white wine

Steps:

  • Melt butter in a large saute pan over medium-high heat. Add onion and stir until limp but not brown, 3 to 5 minutes. Add veal (breaking up) and wine cook to lightly browned ; cover pan, reduce heat, and simmer gently until veal is cooked. Add spinach and cook until soft.
  • Add ricotta cheese, parmesan cheese, egg, nutmeg, and salt to food processor; whirl until mixture is finely ground. You can also blend in the pan.
  • Stuff mixture into cannelloni shell. Alternately, you can use lasagna noodles and roll as you would a burrito or egg roll. I have also found that making pasta is rather easy. Roll the pasta dough out and cut in rectangles, 3x5 is a good size. Place a row of the filling down the center, fold long sides together.
  • In each of two shallow 9- by 13-inch baking dishes, spread a layer of the Rosatella Sauce over bottom to coat lightly. Set the cannelloni, seam down, in sauce, spacing equally. Carefully spoon the remaining sauce over cannelloni to coat well.
  • Scatter fontina (and mozerella) over cannelloni.
  • Bake cannelloni, uncovered, in a 375° oven until sauce is bubbling, cheese is melted, and filling is hot in the center, 25 to 35 minutes. Transfer to plates with a wide spatula and spoon some of the sauce around each serving. Alternatively, bake in individual baking dishes.
  • Garnish with chopped parsley.
