Time 3h30m

Yield 6 to 8 servings

Number Of Ingredients 21

1 1/2 tablespoons extra-virgin olive oil, plus more for brushing
2 pounds ground moose or beef
2 cups chopped Vidalia or other sweet onions
6 cloves garlic, minced
2 28-ounce cans fire-roasted peeled whole tomatoes
1 8-ounce can tomato sauce
1 cup diced bell peppers (any color)
2 tablespoons chopped fresh parsley
1 mild green chile pepper (such as Anaheim), seeded and chopped (or a 4-ounce can green chiles, drained)
2 jalapeno peppers, seeded and finely chopped
1/2 red or orange habanero chile pepper, seeded and finely chopped
1 New Mexico chile pepper, seeded and finely chopped
2 1/2 tablespoons chili powder
1 teaspoon ancho chile powder
1/2 teaspoon chipotle chile powder
Kosher salt
1 1/2 tablespoons ground cumin
1 1/2 teaspoons dried oregano
Freshly ground pepper
1/2 cup beer (or use water)
3 tomatoes

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Add the ground meat and cook, stirring and breaking up the meat, until no longer pink, about 10 minutes. Add half each of the onions and garlic and cook, stirring, 10 more minutes; set aside.
  • Combine the fire-roasted tomatoes and tomato sauce in a large pot over medium heat and crush with a potato masher. Stir in the reserved meat, the remaining onions and garlic, the bell peppers, parsley, green chile, jalapenos, habanero and New Mexico chile. Add the chili powder, ancho chile powder, chipotle chile powder, 2 teaspoons salt, the cumin, oregano, 1/2 teaspoon pepper and the beer. Reduce the heat to medium low and simmer, stirring occasionally, 1 hour.
  • Meanwhile, preheat the oven to 200 degrees F and lightly brush a baking sheet with olive oil. Cut the tomatoes in half and set cut-side down on the prepared baking sheet. Brush the tomatoes with more olive oil and sprinkle with salt; bake until darkened and wrinkled, about 1 hour.
  • Crush the tomatoes with the potato masher and add to the pot; cover and simmer 2 more hours. Season with salt.

THE BEST CHILI

The Best Chili image

There are a thousand ways to make chili, but this is the quintessential, totally classic version. We used ground beef, kidney beans and the perfect blend of spices. You can slather it on hot dogs and burgers or serve it as a dip, but it can surely stand on its own. Chances are, you have everything you need right in your pantry. Top it with your favorite garnishes and serve with plenty of tortilla chips.

Categories     main-dish

Time 1h30m

Yield 4 to 6 servings

Number Of Ingredients 16

1/4 cup vegetable oil
1 pound ground beef chuck, preferably coarse grind (see Cook's Note)
1 large yellow onion, diced
1 jalapeno pepper, seeded and diced
4 cloves garlic, minced
2 tablespoons chili powder
1 tablespoon ground cumin
1 tablespoon paprika
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
2 teaspoons tomato paste
1 1/2 cups low-sodium beef broth
One 28-ounce can whole peeled tomatoes, crushed
Two 15.5-ounce cans kidney beans, undrained
Sour cream, shredded Cheddar and sliced scallions, for serving
Tortilla chips, for serving

Steps:

  • Heat 2 tablespoons of the oil in a Dutch oven or large pot over medium-high heat. Add the beef and cook, breaking up the meat with a wooden spoon, until just browned, about 4 minutes. Transfer to a plate with a slotted spoon.
  • Reduce the heat to medium and add the remaining 2 tablespoons oil. Add the onions and cook, stirring occasionally, until softened and lightly golden, about 10 minutes.
  • Add the jalapeno and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring frequently, until fragrant, about 30 seconds.
  • Add the chili powder, cumin, paprika, cayenne, 1/2 teaspoon salt and the tomato paste. Cook, stirring frequently, until coated and fragrant, about 1 minute.
  • Stir in the beef broth and crushed tomatoes and bring to a boil over high heat. Stir in the cooked ground beef and any accumulated liquid, then reduce the heat to medium-low. Simmer the chili, partially covered, until the beef is tender and the sauce is slightly thickened, about 30 minutes.
  • Stir in the beans and their liquid and simmer uncovered until the beans are softened and the chili is thickened, about 30 minutes more. Season with salt and pepper.
  • Top with sour cream, Cheddar and scallions. Serve with tortilla chips.

  • New Mexico Style Pork Green Chili. Forget the red, make this mild green pork chili for a new take on the theme. Plenty of Hatch peppers give it color and a mild flavor, while pork butt adds protein.
  • Black Bean and Sweet Potato Chili. Black beans and sweet potatoes give this vegetarian chili a different twist that anyone can enjoy, even dedicated meat-eaters.
  • Hearty Slow Cooker Chicken Chili. For a different twist on classic chili, swap out the ground beef for shredded chicken breasts or thighs. It's a lighter take than the meat version that doesn't skimp on flavor.
  • Vegetarian and Vegan Chili. Textured vegetable protein stands in for ground beef or turkey in this simple homemade chili recipe. TVP doesn't have much flavor on its own, so canned beans and plenty of spices lend a hand in this one-pot dish.
  • Chicken and Red Bean Chili. Shredded chicken breast has a different texture than ground turkey or beef, but this hearty chili doesn't skimp on flavor. Canned red beans and tomatoes keep things simple and on the quicker side.
  • 30-Minute Chili With Ground Beef and Beans. For those days when you need to get dinner in some bellies fast, turn to this easy beef chili. A zippy spice mixture, ground beef, canned beans, and diced tomatoes come together for a meal that works great for a weekday dinner or as part of a game-day spread or potluck.
  • Crock Pot Sausage-Beef Chili. Adding smoked sausage like andouille or chorizo to slow-cooker chili gives it a meat-lovers flare that will please the whole potluck.
  • Best Classic Chili. If you get a craving for chili on your way home from work, this quick and easy stovetop recipe can take care of that. Customize it to your family's tastes by adding chopped peppers, leaving out the onions, swapping in turkey for the beef, or using different bean varieties.
  • Low-Carb, Meaty Chili. Meat-lovers, look no further than this low-carb chili that has five whole pounds of beef. It makes a big batch, so try this recipe for your next tailgate, get-together, or potluck supper.
  • Turkey Green Chili. Try switching out turkey for beef or pork and green chilis for red, and you have a totally new dish the whole family will love. It comes out with a more soup-like texture than the traditional version, but don't let that fool you.
