- Preheat oven to 350 degrees F. Spray mini muffin tin with non stick cooking spray.
- Whisk together wet ingredients: eggs, milk, oil, and syrup in a medium bowl. In a separate large bowl mix together dry ingredients: flour, baking powder, and salt. Then add dry mixture to wet ingredients, and stir just until mixed (don't over mix, it's okay if the batter is lumpy). This will ensure that your pancake bites are fluffy and not dense.
- Pour batter into each muffin tin about 3/4 of the way full.
- Add in chocolate chips, blueberries, or toppings of choice.
- Bake for 10-12 minutes until edge of each pancake bite is golden brown. Adjust cooking time as needed based on individual oven.
- Serve warm, or store in an airtight container.
