BULGOGI (KOREAN BBQ BEEF)
How to make the most delicious bulgogi (Korean BBQ beef) from scratch. Don't forget to read my best cooking tips from above!

Steps:
- Blend the marinade ingredients in a mixer or food processor until smooth. Set aside.
- Place the thinly sliced meat in a mixing bowl and pour the marinade over it. Mix them well together while gently massaging the meat with your hands. (Wearing a food prep glove is very handy here!)Add the sesame oil and mix it into the meat. (I prefer adding the sesame oil separately as opposed to mixing it in the marinade sauce. I read somewhere that the oil can prevent the other sauce getting absorbed effectively into the meat.)Cover the bowl with cling wrap (or move the marinated meat into a glass container with a lid) and marinate the meat for at least 4 hours in the fridge. (If you have more time, you can also marinate it overnight to deepen the flavour even more).
- Preheat a skillet / bbq grill on medium high heat until well heated. Add the cooking oil and spread it well. Add the meat (and vegetables) and cook it on medium high to high heat for 3 to 5 mins (until the meat and vegetables cook to your desired doneness). Toss in the sesame seeds and stir them quickly.
- Serve the bulgogi with steamed rice and other Korean side dishes. (refer above for more tips)

THE KIM FAMILY KOREAN BEEF RECIPE
This has been a family favorite for over 40 years, since my parents' friends, the Kims, from Korea, gave it to them. It was, believe it, or not, our usual "camping fare," since it could be prepped at home, marinated at the campsite, and then grilled on a Hibatchi. Warning: The smell of the meat marinating is absolutely intoxicating!

Steps:
- Slice beef thinly, if using beef. (If using pork or chicken, cubes will work.).
- Mix all other ingredients together in a large baggie, or sealable container.
- Marinate meat for 3-48 hours (the longer, the better). If you can't marinate it too long, pierce the meat, to help the marinade permeate the meat better.
- Skewer the meat, and grill to desired doneness. I've also cooked it in a "grill basket," but it has better flavor when the meat can get kind of crispy on the edges, and the skewers allow for more surface area to become crispy.

STIR-FRIED KOREAN BEEF
Whip up a speedy beef, beansprout and spinach stir-fry seasoned with sweet mirin, garlic, sesame seeds and soy sauce

- In a small bowl, mix together the soy, mirin or honey, and cornflour paste. Heat the oil in a wok or large frying pan. Season the beef and sear in batches, then remove to a plate and cover with foil to keep warm. Fry the garlic and chilli, then add the spring onions and beansprouts, and stir-fry for 2 mins.
- Return the beef to the wok and add the spinach along with the sauce. Keep stir-frying for another 2-3 mins until the spinach has wilted. Serve sprinkled with the sesame seeds and some rice, if you like.

- Heat a large skillet over medium-high heat. Add beef and cook, stirring and crumbling into small pieces until browned, 5 to 7 minutes. Drain excess grease.
- Add garlic, ginger, and sesame oil, stirring until fragrant, about 2 minutes. Stir in soy sauce, brown sugar, and red pepper. Cook until some of the sauce absorbs into the beef, about 7 minutes. Add 1/2 of the chopped green onions.
- Serve beef over hot cooked rice; garnished with sesame seeds and remaining green onions.

- Heat the sesame oil in a large, heavy-bottomed skillet or frying pan over medium high heat. Break up the ground beef over it and cook, breaking the pieces up smaller and smaller with a wooden spoon, until the beef is browned and cooked most of the way through. Drain off any fat that accumulates and return the pan to medium high heat.
- Add the garlic and ginger to the beef and stir-fry until fragrant, about 1 minute. Add the soy sauce, pear or apple juice, honey or sugar, and gochujang to the pot and stir to evenly distribute. Bring to a boil and let it cook until the sauce has reduced and thickened a bit and clings to the beef. Remove from heat and serve over rice garnished with the thinly sliced green onions, sesame seeds, and a small drizzle of toasted sesame oil, if desired.
