ORANGE SNOWBALL COOKIES

A fast, simple, and delicious holiday cookie

Number Of Ingredients 7

1 cup butter (softened to room temperature)
1 cup powdered sugar
2 tablespoons juice from 1/2 of a small orange
3 cups all-purpose flour
1 cup granulated sugar
2 tablespoons Edible glitter ((yellow or white.) Optional.)
2 tbsp Orange zest

Steps:

  • Preheat oven to 325 °F.
  • Using bowl mixer, combine butter and powdered sugar until creamed together.
  • Next, add 1 tablespoon of orange peel, reserving the remaining.
  • Mix in orange juice, then gradually add flour and mix until well incorporated.
  • Roll dough into small (golf ball size) rounds and place on non-greased baking sheet, about 2 inches apart.
  • Bake for 20 minutes or until firm.
  • While cookies are baking, combine granulated sugar and remaining orange peel, place in small food processor and incorporate fully. If you don't have a food processor, mix the two together in a small bowl.
  • When the cookies are finished baking, allow to cool for a few minutes on the baking sheet. While cookies are still warm, roll them in the sugar and orange peel mixture.
  • Garnish with optional edible glitter and/or some orange zest.

Just found this recipe and, while I haven't tried it, just had to post it for all the Zaar orange lovers!

Number Of Ingredients 7

1 cup butter, softened (no substitutes)
3/4 cup sifted icing sugar
1 tablespoon orange juice
2 2/3 cups all-purpose flour
1 tablespoon finely grated fresh orange zest
2 teaspoons finely grated fresh orange zest
3/4 cup white sugar, plus more as needed

Steps:

  • Using an electric mixer on medium-high speed, beat the butter in a large mixing bowl for 30 seconds; add the icing sugar and beat until combined, scraping the sides of the bowl occasionally.
  • Beat in the orange juice until combined.
  • Beat in as much of the flour as you can with the mixer.
  • With a wooden spoon, stir in 1 tbsp of the orange peel, plus the remaining flour.
  • Shape the dough into 1-1/4-inch balls.
  • Roll each one in granulated sugar.
  • Place the balls 2 inches apart on an ungreased cookie sheet.
  • Bake in a preheated 325°F oven for 15 minutes, or until the bottoms are lightly browned.
  • Cool on cookie sheet for 5 minutes.
  • Meanwhile, in a food processor or blender, blend together the 3/4 cup of granulated sugar and the remaining 2 tsp orange peel.
  • Roll the warm, baked cookies in this mixture.
  • Cool on wire racks.

These are technically Mexican Wedding Cakes or Russian Teacakes, but my grandmother gave up on us calling them that years ago!

Number Of Ingredients 8

1 cup butter
½ cup confectioners' sugar
¼ teaspoon salt
1 teaspoon vanilla extract
2 ¼ cups all-purpose flour
1 cup chopped pecans
⅓ cup confectioners' sugar for dusting, or as needed
¼ cup finely crushed peppermint candy canes

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cream the butter with 1/2 cup of the confectioners' sugar and the vanilla. Mix in the flour, pecans, and salt. Roll about 1 tablespoon or so of dough into balls and place on an ungreased cookie sheet.
  • Bake in preheated oven until bottoms are golden, about 15 minutes. Do not allow these cookies to get too brown: it's better to undercook them than to overcook them. While cookies are still hot, roll them in confectioners' sugar. Once they have cooled, roll them in confectioners' sugar once more.

An old recipe from my mom in North Dakota, they used to be reserved only for weddings and special occasions. 1 cup butter, softened
1-1/4 cups confectioners' sugar, divided
1 teaspoon grated orange zest
1/2 teaspoon orange extract
1/2 teaspoon vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
1/2 cup finely chopped walnuts
1/2 cup finely chopped hazelnuts

Steps:

  • In a large bowl, cream butter and 3/4 cup confectioners' sugar until light and fluffy. Beat in orange zest and extracts. Combine flour and salt; gradually add to creamed mixture and mix well. Stir in nuts., Shape into 3/4-in. balls. Place 1 in. apart on ungreased baking sheets. Bake at 350° for 10-12 minutes or until bottoms are lightly browned. Remove to wire racks to cool completely., Place remaining confectioners' sugar in a large resealable plastic bag. Add cookies, a few at a time, and shake to coat. Store in an airtight container.

6 cups all-purpose flour
1-1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
2 cups butter, softened
1 cup sugar
1 cup packed brown sugar
3 large eggs
1 teaspoon vanilla extract
1 teaspoon lemon extract
2 cups chopped nuts

Steps:

  • Sift together first five ingredients; set aside. In a bowl, cream butter and sugars. Add eggs, vanilla and lemon extract; beat well. Add dry ingredients; mix well. Stir in nuts. , Divide dough into four parts and shape into 11x1-1/2-in. rolls. Wrap in foil and chill overnight. , Slice cookies 3/8 in. thick. Bake on greased baking sheets at 350° for about 10 minutes.
