QUICK BLACKBERRY APPLE TART
Fresh blackberries and apples are a great combination and this fool-proof blackberry apple tart recipe is an easy way to impress your family and friends - you must go and make this dessert!

- Preheat your oven to 425 degrees F. In a small pot, heat the blackberries with 2 teaspoons of sugar and a teaspoon of vanilla until thick and syrupy. You can also skip this step and just use heated blackberry preserves instead. Take the sliced apples and toss with the lemon juice and zest.
- On a baking sheet lined with parchment paper, roll out the puff pastry square a little bit until there are no seams.
- Spread the blackberry mixture over the pastry, leaving about an inch at the edges. Arrange the apples across the pastry, and brush with the warm honey (just pop it in the microwave for a few seconds). Dot the tart evenly with butter and bake for 18-20 minutes until the apples are tender and the pastry is golden brown.

THE FASTEST BLACKBERRY AND APPLE TART
When it's blackberry time, we are overloaded with Bramley apples in the garden, and here is the quickest homemade tart in the world. It could of course be made even more quickly if you used bought pastry (though in practice this is quicker than going out to buy it). It has to be eaten very fresh, preferably warm. So if there is any left over (unlikely), it's best to freeze it to keep the freshness.

- Begin by sifting the flour into a bowl, then rub in the butter until it's crumbly. After that mix in the sugar, make a well in the centre and break the egg into it. Using a small palette knife mix the egg into the rest, then finish off with your hands and bring it together to soft dough. Now transfer the dough to the tin and spread it out with the palm of your hand so that it covers the base and comes halfway up the sides of the tin. Next quarter and core the apples (but leave the skins on) then cut each quarter into three slices, arranging the slices on the pastry as you go and sprinkling them with a dusting of sugar. After that spread the blackberries over the top of the apples and sprinkle with 1 tablespoon sugar. Then straight into the oven with it, and bake the tart for 45 minutes, sprinkling with the remaining 1 tablespoon of sugar when it comes out of the oven. - Preheat oven to 425 degrees F (220 degrees C).
- Melt butter in a saucepan over medium-low heat; stir in flour to make a smooth paste. Whisk water, white sugar, brown sugar, and lemon juice into butter mixture. Bring to a simmer and whisk constantly until mixture is thick, about 3 minutes. Stir 6 blackberry halves into sauce, reduce heat to low, and continue cooking while you complete remaining steps. Stir sauce occasionally.
- Line a 9-inch pie dish with a crust. Place apples and remaining blackberries into crust. Cut remaining crust into strips about 1 inch wide. Weave pie crust strips into a lattice crust on top of the pie; pinch ends of strips to edge of bottom crust to seal. Spoon hot blackberry sauce over pie, letting it soak through the openings in the top crust. Place pie onto a baking sheet to catch drips.
- Bake in the preheated oven for 15 minutes. Reduce oven heat to 350 degrees F (175 degrees C) and continue baking until crust is golden brown and sauce is bubbling, 35 to 45 more minutes.

BLACKBERRY & APPLE PIE

- Heat oven to 180C/fan 160C/gas 4. Sift the flour and salt into a bowl. Cut the butter into small pieces and rub in until the mixture resembles fine breadcrumbs.
- Mix in the sugar, lemon zest, egg yolk and a splash of milk to form a dough. Knead the dough lightly.
- Spoon the apples and blackberries into a shallow 1.2ltr/900ml dish, then sprinkle over sugar to taste.
- Roll out the pastry on a lightly floured surface, large enough to cover the pie. Place the pastry over the filled pie dish, then seal and flute the edges. Glaze the top of the pie with a little milk, then bake for 40-45 mins until golden.

- On a lightly floured surface, roll out half the dough to fit a 9-in. pie plate; trim to 1 in. beyond rim of plate. Top with a thin layer of apples. - Heat oven to 190C/170C fan/gas 5. Tip 120g plain flour and 60g caster sugar into a large bowl.
- Add 60g unsalted butter, then rub into the flour using your fingertips to make a light breadcrumb texture. Do not overwork it or the crumble will become heavy.
- Sprinkle the mixture evenly over a baking sheet and bake for 15 mins or until lightly coloured.
- Meanwhile, for the compote, peel, core and cut 300g Braeburn apples into 2cm dice.
- Put 30g unsalted butter and 30g demerara sugar in a medium saucepan and melt together over a medium heat. Cook for 3 mins until the mixture turns to a light caramel.
- Stir in the apples and cook for 3 mins. Add 115g blackberries and ¼ tsp ground cinnamon, and cook for 3 mins more.
- Cover, remove from the heat, then leave for 2-3 mins to continue cooking in the warmth of the pan.
- To serve, spoon the warm fruit into an ovenproof gratin dish, top with the crumble mix, then reheat in the oven for 5-10 mins. Serve with vanilla ice cream.
