Steps:
- Preheat the oven to 425 degrees F (220 degrees C). Lightly grease a baking sheet.
- In a large bowl, mix the flour, oats, sugar, baking powder, salt, and currants. Make a well in the center. In a small bowl, beat egg until frothy, and stir in melted butter and milk. Pour into the well, and mix to create a soft dough. Pat dough into two 1/2 inch thick circles. Place on the prepared baking sheet. Score 8 wedges into each circle of dough.
- Bake 15 minutes in the preheated oven, until risen and browned. Split wedges, and serve warm.

THE CHEESEBOARD COLLECTIVE'S OAT SCONES
Cheeseboard, in Berkeley, CA, makes some of the best oat scones known to mankind: light, airy, and not too sweet. This is the recipe from their cookbook, although I think it is missing the pinch of magic that they add to everything they make!

Steps:
- Preheat oven to 375 degrees F. Line a baking sheet with parchment paper or a baking mat.
- Sift together flours, baking soda and baking powder into a large bowl.
- Add salt, brown sugar, and oats. Stir with a wooden spoon until combined.
- Add butter and cut in with a pastry cutter until it is the size of small peas. Using the spoon, mix in currants.
- Make a well in the center; add buttermilk and cream. Mix briefly, until ingredients just come together; add more buttermilk or cream if the dough seems too dry.
- Let the dough stand for 10 minutes.
- Place the dough on a well-floured surface and using a rolling pin and a generous helping of flour, roll it into a one-inch thick rectangle. Fold the rectangle in half, and roll it again until one inch thick. Repeat twice, and the third time, roll into a rectangle of approximately 6 x 12 x 1.25in.
- Using a cookie cutter or a glass, cut three inch rounds from the dough and place them on the prepared pans about 2 inches apart. The scraps can be rolled out again and the process repeated until all the dough is used.
- Brush the tops with the beaten egg.
- Place the scones on the middle rack of the oven and bake for 30-35 minutes, or until the scones are golden brown. Transfer the scones to a wire rack to cool.

- Sprinkle oats onto an ungreased baking sheet. Bake at 400° for 8-10 minutes or until lightly browned and toasted; cool. In a bowl, combine the oats, flour, 1/3 cup sugar, baking powder, baking soda and salt. Cut in butter until mixture resembles coarse crumbs. Stir in pecans. Whisk together the egg and buttermilk; add to dry ingredients just until moistened. Turn onto a floured surface; knead 10 times., Transfer dough to a greased baking sheet. Pat into an 8-in. circle. Cut into eight wedges, but do not separate. Combine cinnamon and remaining sugar; sprinkle over dough. Bake at 400° for 17-20 minutes or until golden brown. Serve warm.

LEMON CRANBERRY OAT SCONES
Yum. Made this recipe up this morning, based on my usual scone recipe, but I goofed with the amount of oats and it was a happy mistake! I hope you like them! I should note that this is a more healthy, grainy, scone, not a buttery & flaky one - DH & I have really come to enjoy this for a more stick-to-your-ribs scone. Edited Nov '10 to only fresh or frozen cranberries, as the moisture is essential to the scone's texture.

- Heat oven to 400 degrees Fahrenheit.
- Mix dry ingredients together (flour, oats, baking powder, lemon zest, sugar).
- Stir oil into dry ingredients.

- Stir until the dry ingredients are damp and will clump together.
- Drop into four mounds (six if you like your scones smaller) on parchment paper lined or greased baking sheet.

SAVOURY OAT SCONES --
I've been making these scones for years -- first in sweet and later in savory versions.Try using cheddar, feta, swiss, blue or any other strong cheese. Use fresh parsley and thyme if you have them, otherwise use dried. I really like using dried onions in this particular recipe, but you can experiment, because the recipe is very friendly to adaptations. The amount of chilie pepper flakes is spot on because you don't want a hot-tasting scone. When you bit into an occasional pepper flake you get a flavor zing!

- Whisk, or sift, dry ingredients. Combine butter, milk and egg, add to dry ingredients, stir until just moistened.
- Mix in the cheese, parsley, time, onion and red chilie flakes. Line a baking sheet with parchment paper.

VERY TASTY CHEESY CHEDDAR AND OAT SCONES
Great served fresh from the oven - split open and douse dangerously with butter.....naughty but very, VERY nice!! These also keep very well in an airtight tin or container and can be toasted next day or gently warmed through in a low oven. Ideal for freezing - will keep in freezer bags for up to 2 months. Great picnic fare - split them open and spread with garlic & chive soft cream cheese, (Boursin or Philadelphia type) or make cheese & ham scone sandwiches or even cucumber scone sandwiches!! The oats give them a great texture - I use fairly coarse porridge oats. This recipe is easily doubled for larger crowds or greedy people!!!

- Preheat oven to 220C - gas 7.
- In a large roomy bowl rub softened butter into flour until they resemble breadcrumbs.
- Stir in oats & cheese, then add the milk - if it feels too dry, add a touch more milk.
- Bring it all together and make a soft dough.
- Lightly dust a surface with flour and roll out the dough until NO thinner than 2cm.
- Using a 4cm scone/cookie cutter firmly stamp out the rounds - do NOT twist as you stamp as it stops the scones from rising evenly!
- Re-roll all the trimings and stamp out some more rounds until the dough is finished.
- Place on a non-stick baking tray/sheet or one which has been lined with non-stick baking paper. Dust with a little more flour OR glaze with a little milk & add some extra grated cheese for the topping if desired.
- Bake for 12-15 minutes until well risen and golden.
- Cool on a wire rack - if you can manage it!
- Serve on their own or with Boursin soft cheese, Philadelphia cream cheese, sliced ham, cucumber, cress or just with BUTTER!
- Cheese variation for the topping is grated parmesan mixed with a little paprika or cayenne pepper.

CHEESE BOARD CORN CHERRY SCONES
This is one of many scone recipes in "The Cheese Board Collective Works,", and one of the best scones I've ever had. The golden nuggets have a slight cornmeal crunch and are studded with plump cherries. Cheese Board baker Carrie Blake says that while you can use a mixer, it's better to mix the dough by hand.

- Preheat oven to 425°. Adjust rack in center of oven. Line 1 or 2 baking sheets with parchment paper or a baking mat.
- Sift together flour, baking soda and baking powder into a large bowl.
- Add salt, 2/3 cup sugar, and the cornmeal. Stir with a wooden spoon until combined.
- Add butter and cut in with a pastry cutter until it is the size of small peas. Using the spoon, mix in cherries.
- Make a well in the center; add buttermilk. Mix briefly, until ingredients just come together; some loose flour should remain at bottom of bowl.
- Let the batter stand for 5 minutes.
- Gently shape the dough into balls about 2 1/4 inches in diameter (they should have a rough, rocky exterior) and place them on the prepared pans about 2 inches apart.
- Sprinkle the 1/4 cup sugar on top of the scones.
- Place the scones on the middle rack of the oven and immediately turn the temperature down to 375°.
- Bake 20-25 minutes, or until the scones are golden. Transfer the scones to a wire rack to cool.
