1 1/3 c. Shortening (may Substitute Butter)
1 1/2 c. Sugar
1 tsp. Orange Zest
1 tsp. Vanilla
2 whole Eggs
8 tsp. Whole Milk
4 c. All-purpose Flour
3 tsp. Baking Powder
1/2 tsp. Salt
2 jars (13 Ounces Each) Marshmallow Creme
2 packages (8 Ounces Each) Cream Cheese
Peaches
Kiwi Fruit
Blueberries
Pears
Raspberries
Other Fruit Optional

Steps:

  • Preheat oven to 350 F.In a large bowl, cream shortening (or butter), sugar, orange peel and vanilla thoroughly. Add in eggs and beat until light and fluffy. Add in the milk and mix.In a medium-sized bowl, sift together the dry ingredients (flour, baking powder and salt), then blend this into the cream mixture. Slightly flatten between two sheets of waxed paper, then refrigerate for one hour (or freeze for 20 minutes).Press dough into a sheet cake pan OR divide the dough in half and roll each half into a large round, then transfer to pizza pans. Bake for 12-15 minutes until cookie dough is cooked and golden brown, but not overly crisp. Remove from oven and allow to cool completely.Using a mixer with a whisk attachment, whip together Marshmallow Creme and cream cheese until light. Spread onto cooled "pizza" crust, then decorate the top generously with sliced fruit. Slice into squares or wedges and serve.

½ cup butter, softened
¾ cup white sugar
1 egg
1 ¼ cups all-purpose flour
1 teaspoon cream of tartar
½ teaspoon baking soda
¼ teaspoon salt
1 (8 ounce) package cream cheese
½ cup white sugar
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream together the butter and 3/4 cup sugar until smooth. Mix in egg. combine the flour, cream of tartar, baking soda and salt; stir into the creamed mixture until just blended. Press dough into an ungreased pizza pan.
  • Bake in preheated oven for 8 to 10 minutes, or until lightly browned. Cool.
  • In a large bowl, beat cream cheese with 1/2 cup sugar and vanilla until light. Spread on cooled crust.
  • Arrange desired fruit on top of filling, and chill.

1 tube (16-1/2 ounces) refrigerated sugar cookie dough
1 package (8 ounces) cream cheese, softened
1/4 cup confectioners' sugar
1 carton (8 ounces) frozen whipped topping, thawed
2 to 3 kiwifruit, peeled and thinly sliced
1 to 2 firm bananas, sliced
1 can (11 ounces) mandarin oranges, drained
1/2 cup red grape halves
1/4 cup sugar
1/4 cup orange juice
2 tablespoons water
1 tablespoon lemon juice
1-1/2 teaspoons cornstarch
Pinch salt

Steps:

  • Pat cookie dough into an ungreased 14-in. pizza pan. Bake at 350° for 15-18 minutes or until deep golden brown; cool. , In a bowl, beat the cream cheese and confectioners' sugar until smooth. Fold in whipped topping. Spread over crust. Arrange fruit on top. , In a saucepan, bring the sugar, orange juice, water, lemon juice, cornstarch and salt to a boil, stirring constantly for 2 minutes or until thickened. Cool; brush over fruit. Chill. Store in refrigerator.

  • CRUST: In a large bowl beat butter and sugar with a hand mixer on medium speed for 1 minute. Add the egg and run the mixer for 1 minute, then add vanilla and almond extract and mix for a few seconds. Add 1 ⅓ cups flour and baking powder and mix until the flour is almost incorporated. Dump the dough out onto parchment paper. Lightly sprinkle flour on top of the dough and on a rolling pin. Roll the dough out into a 11½-inch circle. Transfer parchment to a pizza pan. Place crust with pan in the freezer for 10-12 minutes while the oven preheats.
  • BAKE: Position a rack in the center of the oven and preheat the oven to 350ºF. Bake for 11-15 minutes or until puffy and cooked. We prefer it under-baked so I usually bake for exactly 11 minutes. But you can bake for 13-15 minutes for a more firm crust.
  • FROST AND TOP: Whip the cream cheese and butter together on medium speed until smooth, about 2 minutes. Add the sugar, lemon juice, and vanilla and continue to whip until combined. If the cream cheese mixture is stiff, add ½ teaspoon of milk. When the crust is cooled, spread frosting on top using an offset spatula and decorate with fruit as desired!
