This simple recipe for homemade buckeyes is the perfect combination of chocolate and peanut butter. Buckeyes are sure to become a often requested family favorite!

1 cup butter, melted
1 jar (15 ounces) smooth peanut butter
4.5 - 5 cups powdered sugar
1 1/2 cups semi-sweet Ghiradelli chocolate chips
1/3 bar paraffin

Steps:

  • First, stir together the melted butter and peanut butter.
  • Stir in the powdered sugar. Gradually add powdered sugar until mixture is not sticky. Mix until smooth, using your hands.
  • Roll the dough into balls. The buckeye balls should be quarter size or smaller. Place the peanut butter balls on a cookie sheet covered with wax paper. Chill in the refrigerator for one hour, or until they are firm enough to hold a toothpick.
  • While the buckeyes are in the refrigerator, melt 1 1/2 cups semi-sweet chocolate chips with 1/3 bar paraffin in a double broiler.
  • When the chocolate is melted and the buckeyes hardened, it's time to dip the buckeyes. Put a wooden toothpick in the middle of a buckeye. Gentle lower into the chocolate and rotate so the buckeye is covered with a small hole remaining around the toothpick.
  • Lift the buckeye carefully out of the chocolate. Allow the excess chocolate to drip into the pan. Place the buckeye on a plate covered with wax paper. Remove the toothpick and repeat.
  • One batch makes around 80 buckeyes. Store your buckeyes in the refrigerator or freezer.

This buckeye recipe is one you'll reach for again and again! Perfectly fudgy chocolate covers peanut butter balls for a naturally gluten-free treat the entire family will love.

Number Of Ingredients 13

1 ½ cups smooth peanut butter (I use Skippy smooth)
1 cup butter, softened
1 tsp vanilla extract
4-5 cups confectioners' sugar
4 cups semisweet chocolate chips
2-4 Tbsp shortening
mixing bowl

measuring spoons
cookie sheet(s)
waxed paper or parchment paper
several dozen toothpicks

Steps:

  • Beat together the peanut butter and softened butter. Add the vanilla, mix again, then scrape the bowl. Add the confectioners' sugar 1 cup at a time, mixing well and scraping down the bowl after each cup. You want the dough to be firm enough to be able to roll into balls without being sticky but not too dry.
  • Roll the dough into quarter size balls (if they are bigger or smaller it's okay too) and place on a cookie sheet lined with waxed paper. (You can use parchment paper too, but waxed works best.) These buckeyes will not spread because they will not be baked, so you can put them closer together on the cookie sheet than you would for baked cookies. Stick a toothpick into each buckeye and chill in your freezer for about 30 minutes.
  • Melt the chocolate chips and 2 tbsp shortening in a double boiler on low heat and stir often until melted and smooth. OR you can microwave by placing in a medium microwave-safe glass bowl and heating for 30 seconds. Stir, then microwave for 15-20 seconds more. Continue heating and stirring each time until the chocolate chips are fully melted. Do not overcook. Add 1-2 more tbsps of shortening to thin out the chocolate mixture if desired. I usually use 3-4 tbsp total as I prefer thinner melted chocolate as it's easier to use.
  • Dip the chilled peanut butter balls using the toothpick. Dip about ¾ of the way in, leaving a small part of peanut butter visible at the top. This is what gives them a 'buckeye' look. Place back on the cookie sheet and refrigerated.
  • These cookies are best kept refrigerated even though they won't spoil if you leave out. They are best enjoyed within 5-6 days.

1 cup butter, softened
½ teaspoon vanilla extract
6 cups confectioners' sugar
4 cups semisweet chocolate chips

Steps:

  • In a large bowl, mix together the peanut butter, butter, vanilla and confectioners' sugar. The dough will look dry. Roll into 1 inch balls and place on a waxed paper-lined cookie sheet.
  • Press a toothpick into the top of each ball (to be used later as the handle for dipping) and chill in freezer until firm, about 30 minutes.
  • Melt chocolate chips in a double boiler or in a bowl set over a pan of barely simmering water. Stir frequently until smooth.
  • Dip frozen peanut butter balls in chocolate holding onto the toothpick. Leave a small portion of peanut butter showing at the top to make them look like Buckeyes. Put back on the cookie sheet and refrigerate until serving.

Number Of Ingredients 6

1 1/2 cups peanut butter
1/2 cup margarine or 1/2 cup butter
1 lb powdered sugar
1 teaspoon vanilla
1 1/2 cups chocolate chips
use 1/2 tsp of shortening per oz of chocolate instead paraffin wax

Steps:

  • Mix peanut butter, margarine or butter, powdered sugar, and vanilla in bowl (It helps to soften the margarine).
  • Shape into 1" balls.
  • Refrigerate balls.
  • Meanwhile, melt chocolate with a bit of crisco (so the chocolate will harden. Without crisco, chocolate will remain soft.) in double boiler.
  • Insert toothpick into refrigerated balls and dip into chocolate, leaving small area resembling a buckeye.
  • Cool on wax paper and store in refrigerator or freezer.

2 1/2 cups sifted confectioners' sugar
1 cup smooth peanut butter
6 tablespoons unsalted butter, melted
1/2 teaspoon pure vanilla extract
1/4 teaspoon kosher salt
8 ounces semisweet or bittersweet chocolate, chopped
1 teaspoon vegetable shortening

Steps:

  • Line a baking sheet with parchment. Beat the confectioners' sugar, peanut butter, butter, vanilla and salt with an electric mixer in a medium bowl until well combined. Scoop 2-teaspoonful mounds, and roll into balls; arrange them on the prepared baking sheet. Refrigerate until firm, about 20 minutes.
  • Microwave the chocolate and shortening in a microwave-safe medium bowl in 30-second increments, stirring in between, until the mixture is completely melted and smooth, about 2 minutes.
  • Stick a toothpick or skewer into the top center of a peanut butter ball. Dip the ball into the melted chocolate, leaving a circle of peanut butter visible on top. Let the excess chocolate drip off, then return the buckeye to the baking sheet. Repeat with the remaining peanut butter balls and chocolate.
  • Chill the buckeyes until firm, about 30 minutes. Smooth out the hole left by the toothpick with an offset spatula. Serve at room temperature or well chilled. Refrigerate in an airtight container for up to 5 days.

1 teaspoon vanilla extract
1/2 teaspoon salt
3 -4 cups powdered sugar
2 cups semi-sweet chocolate chips
2 tablespoons Crisco® All-Vegetable Shortening

Steps:

  • COMBINE peanut butter, butter, vanilla and salt in large bowl. Beat with an electric mixer on LOW until blended. Add 2 cups powdered sugar, beating until blended. Beat in additional powdered sugar until mixture, when shaped into a ball, will stay on a toothpick. Shape into 1-inch balls. Refrigerate.
  • PLACE chocolate chips and shortening in microwave-safe bowl. Microwave on MEDIUM for 30 seconds. Stir. Repeat until mixture is smooth. Reheat as needed while coating peanut butter balls.
  • INSERT toothpick in peanut butter ball. Dip 3/4 of ball into chocolate, leaving top uncovered to resemble a buckeye. Remove excess. Place on wax paper-lined tray. Remove toothpick. Smooth over holes. Refrigerate until firm.
  • Variation:.
  • SPICY BUCKEYES: ADD 1 teaspoon ground cinnamon and 1/2 teaspoon cayenne pepper with peanut butter mixture in step 1. Continue recipe as directed.
