1 egg, lightly beaten, or 1/4 cup fat-free cholesterol-free egg product
1 teaspoon salt, if desired
1/2 teaspoon poultry seasoning
1 can (16 oz) jellied cranberry sauce
1/2 cup water

Steps:

  • In medium bowl, mix all ingredients except cranberry sauce and water. Shape mixture into about 45 (1-inch) balls.
  • Heat 10-inch nonstick skillet over medium heat. Add meatballs; cover and cook 8 to 10 minutes, turning occasionally, until thermometer inserted in center of meatballs reads 165°F.
  • Gently stir in cranberry sauce and water. Reduce heat to medium-low; cook 3 to 4 minutes, stirring frequently, until cranberry sauce is melted and smooth.

Healthy cranberry turkey meatballs with apples, sage, and a homemade cranberry-orange sauce. A perfect Thanksgiving or Christmas appetizer!

1 pound 93% lean ground turkey
1/2 cup plain breadcrumbs
1 tablespoon extra virgin olive oil
1 large egg (lightly beaten)
1 cup shredded tart apple (such as Granny Smith, washed with peel on)
1 1/2 tablespoons fresh sage
1 teaspoon garlic powder
1 teaspoon onion powder
3/4 teaspoon kosher salt
1/2 teaspoon black pepper
Chopped fresh parsley (optional for garnish)
1 cup whole berry cranberry sauce
1/4 cup unsweetened applesauce
2 tablespoons pure maple syrup
Zest of 1 orange
1 tablespoon freshly squeezed orange juice

Steps:

  • Place a rack in the center of your oven and preheat the oven to 425 degrees F. Place an ovenproof baking rack on top of a large, rimmed baking sheet, then lightly coat with cooking spray. Set aside.
  • In a large mixing bowl, combine the turkey, breadcrumbs, olive oil, egg, apple, sage, garlic powder, onion powder, salt, and pepper. With your hands or two forks, lightly mix to combine, being careful not to compact the meat.
  • Roll the mixture into 1 1/2 to 2-inch balls, using a small scoop to help portion as desired.
  • Arrange the meatballs on top of the prepared baking rack. Bake in the oven for 12-14 minutes, just until cooked through.
  • Meanwhile, prepare the sauce. In a saucepan large enough to hold the meatballs, combine the cranberries, applesauce, maple syrup, orange zest, and orange juice. Heat over medium to warm through.
  • Add the cooked meatballs to the sauce, then spoon the sauce over gently to coat. Transfer to a serving platter to enjoy immediately or place in a slow cooker set to the lowest heat to keep warm. Garnish with fresh parsley as desired and serve.

1 small green bell pepper, cut into chunks
1/2 small white onion, cut into chunks
1 small celery stalk, cut into chunks
1 clove garlic, smashed
1 tablespoon fresh rosemary leaves
1 tablespoon fresh thyme leaves
1 1/2 pounds ground turkey
3/4 cup panko
2 tablespoons mayonnaise
1 large egg
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
3 tablespoons unsalted butter
2 jalapenos, stemmed and seeded, finely chopped
6 ounces fresh or frozen cranberries
1/4 cup light brown sugar
1 teaspoon orange zest plus the juice of 1 orange
Kosher salt and freshly ground black pepper

Steps:

  • Position an oven rack in the top third of the oven and preheat to broil.
  • Make the meatballs: Pulse the bell pepper, onion, celery, garlic, rosemary and thyme in a food processor or blender until finely chopped; transfer to a large bowl. Add the turkey, panko, mayonnaise, egg, paprika, cayenne, 2 teaspoons salt and a generous amount of black pepper and mix together using a rubber spatula until just combined.
  • Dampen your hands with water and shape the mixture into 26 meatballs, each about 1 1/2 inches in diameter (a 1-ounce ice cream scoop is helpful for portioning); arrange them on a rimmed baking sheet. Broil, rotating the sheet halfway through, until the meatballs are golden brown and firm, 9 to 10 minutes.
  • Meanwhile, make the cranberry glaze: Melt the butter in a large skillet over medium-high heat and add the jalapenos. Cook, stirring occasionally, until they start to soften, 3 to 4 minutes. Add the cranberries, sugar, orange zest and juice, 1/4 teaspoon salt and a few grinds black pepper and cook, stirring constantly, until the cranberries begin to soften, and the skin starts to crack, about 2 minutes. Mash the cranberries with a potato masher and stir until the liquid from the cranberries begins to simmer and thicken, 2 to 3 minutes.
  • Transfer the meatballs to the skillet and toss to coat with the cranberry glaze. Transfer to a platter and serve with toothpicks.

1 pkg. (16 oz.) egg noodles

Steps:

  • Preheat oven to 350 degrees.
  • In large mixing bowl, combine turkey, egg, cranberry sauce, pepper and stuffing mix. Form into 1-inch balls. Place on foil-lined cookie sheet. Bake 20-25 minutes.
  • While meatballs are baking, put gravy in a large skillet and heat. When meatballs are done, add to gravy.
  • Cover; simmer on low heat while you prepare noodles.
  • Cook noodles according to package directions.
  • Serve meatballs over cooked noodles.

2 (2 lb) bags cocktail meatballs, 1-inch in size
1 (16 ounce) can ocean spray jellied cranberry sauce
1 (12 ounce) bottle chili sauce
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper

Steps:

  • Combine cranberry sauce, chili sauce, cumin and cayenne pepper in a large saucepan.
  • Cook over medium heat, whisking occasionally, until the cranberry sauce is melted and smooth.
  • Add meatballs; stir gently to coat.
  • Cook over medium-low heat, stirring occasionally, 30 minutes or until the meatballs are heated through.

1/2 cup Progresso™ plain bread crumbs
1/2 teaspoon salt
1/8 teaspoon pepper
2 eggs, slightly beaten
1 bottle (12 oz) chili sauce (1 1/2 cups)
1/2 can (16-oz size) jellied cranberry sauce (1 cup)
60 fresh cranberries, if desired

Steps:

  • Heat oven to 375°F. In large bowl, stir meatball ingredients until well mixed. Shape into 1-inch balls; place in ungreased 15x10x1-inch pan.
  • Bake 25 to 30 minutes or until meatballs are thoroughly cooked and no longer pink in center.
  • Meanwhile, in 3-quart saucepan, stir sauce ingredients until well blended. Heat to boiling over medium heat. Reduce heat to low; simmer 5 minutes, stirring occasionally.

1 tablespoon vegetable oil
1 pound ground pork
1 pound ground turkey
2 large eggs
2 garlic cloves, finely chopped
1 cup fresh breadcrumbs
2/3 cup whole milk
1/2 teaspoon crushed fennel seeds
4 teaspoons finely chopped sage, plus whole leaves for garnish (optional)
2 1/2 teaspoons kosher salt, divided
3/4 teaspoon freshly ground black pepper, divided
1 (14-ounce) can jellied cranberry sauce
2 tablespoons fresh orange juice
2 tablespoons dark brown sugar
1 tablespoon finely chopped fresh ginger

Steps:

  • Preheat oven to 450°F. Coat a rimmed baking sheet with oil.
  • Using your hands, mix pork, turkey, eggs, garlic, breadcrumbs, milk, fennel, 4 tsp. chopped sage, 2 tsp. salt, and 1/2 tsp. pepper in a large bowl until incorporated. Roll into 1" balls, making sure to pack firmly.
  • Transfer balls to prepared baking sheet, packing them snuggly. Roast meatballs until firm and cooked through, about 15 minutes.
  • Meanwhile, cook cranberry sauce, orange juice, brown sugar, ginger, and remaining 1/2 tsp. salt and 1/4 tsp. pepper in a medium saucepan over medium heat, whisking constantly, until smooth, about 5 minutes.
  • Using a pastry brush, generously coat meatballs with 1/3 cup cranberry sauce mixture. Return meatballs to oven and continue to bake until glaze is shiny and caramelized, about 5 minutes more.
  • Shake sheet to coat meatballs with sauce. Transfer remaining sauce to a serving bowl and transfer meatballs to a serving platter. Top meatballs with sage leaves before serving, if using.

½ teaspoon garlic salt

1 large egg, beaten
¼ cup milk
½ cup plain bread crumbs
1 tablespoon olive oil
1 cup canned jellied cranberry sauce
½ cup orange marmalade
½ cup chicken broth
1 tablespoon minced jalapeno pepper
1 tablespoon minced Fresno pepper
1 pinch salt and ground black pepper to taste

Steps:

  • Mix the turkey, poultry seasoning, garlic salt, onion powder, salt, pepper, Worcestershire sauce, and cayenne pepper together in a bowl. Stir in the egg, milk, and bread crumbs. Cover with plastic and refrigerate for 1 hour.
  • Heat olive oil in skillet over medium heat. Roll the turkey mixture into balls, about one tablespoon each. Place the meatballs in a single layer in the skillet. Brown meatballs on all sides, flipping occasionally. Place browned meatballs on a clean baking sheet. Set aside.
  • Combine cranberry sauce, marmalade, and chicken broth over medium heat in the skillet used to cook the meatballs. Stir in the jalapeno and Fresno peppers, then return meatballs to skillet. Reduce heat to medium-low, and continue to cook until the meatballs are no longer pink in the center and glaze is reduced. Season with salt and pepper.
