EGG FOO YUNG (FRIED RICE WITH EGGS AND BEAN SPROUTS)

Egg Foo Yung (Fried Rice With Eggs and Bean Sprouts) image

Make and share this Egg Foo Yung (Fried Rice With Eggs and Bean Sprouts) recipe from Food.com.

Provided by Pinaygourmet 345142

Categories     Rice

Time 30m

Yield 4 serving(s)

Number Of Ingredients 11

3 eggs, beaten
1 pinch five-spice powder (optional)
3 tablespoons peanut oil
4 spring onions, sliced
1 garlic clove, crushed
1 small green pepper, seeded and chopped
115 g fresh bean sprouts
3 cups cooked long-grain rice
3 tablespoons light soy sauce
1 tablespoon sesame oil
salt & fresh ground pepper

Steps:

  • Season the eggs and beat in the five-spice powder, if using. In a wok or large frying pan, heat one tablespoon of the oil and when quite hot, pour in the egg.
  • Cook the egg, lifting the mixture away from the sides and allowing the liquid to slip underneath, until the omelette is firm. Then tip out and slice into small strips.
  • Heat the remaining oil and stir-fry the onion, garlic, pepper and bean sprouts for about 2 minutes, stirring and tossing continuously.
  • Mix in the cooked rice and heat throughly, stirring well. Add the soy sauce and sesame oil and adjust the seasoning if necessary. Add the omelette strips and mix in well. Serve hot.

THAI PORK FRIED RICE

Thai Pork Fried Rice image

Thai pork fried rice with bean sprouts for some crunch. Make sure all of the ingredients are at room temperature before starting. Cold ingredients cool down the wok, which makes it difficult to stir-fry properly. Make sure the rice is not moist. I use rice that is was cooked about three days prior. If you're cooking the rice just to make this dish, use 10 to 15% less water.

Categories     Main Dish Recipes     Rice     Fried Rice Recipes

Time 45m

Yield 4

Number Of Ingredients 15

3 tablespoons peanut oil
2 cloves garlic, minced
¾ pound boneless pork chops, cut into bite-size pieces
1 cup leftover cooked rice, preferably several days old
2 teaspoons soy sauce
1 teaspoon fish sauce
1 cup mung bean sprouts
½ small white onion, chopped
10 grape tomatoes, halved
3 dried Thai chile peppers, or more to taste
¼ cup chopped fresh cilantro
1 egg, beaten
1 green onion, chopped
¼ teaspoon ground white pepper
½ lime, juiced

Steps:

  • Heat a large wok over high heat until small wisps of smoke rise from the wok. Pour peanut oil into the wok and quickly stir garlic into the hot oil, followed by pork. Cook and stir until pork is browned and no longer pink inside, about 5 minutes.
  • Stir rice into pork mixture; add soy sauce and fish sauce. Cook and stir mixture for about 30 seconds. Mix mung bean sprouts, onion, grape tomatoes, dried chiles, and cilantro into rice. Cook and stir until mung bean sprouts are slightly wilted and translucent, 2 to 3 minutes.
  • Push the fried rice up the sides of the wok, leaving a bare spot in the center. Pour beaten egg into the bare spot and scramble egg until firm and no longer runny, about 1 minute. Stir fried rice with scrambled egg, sprinkle with green onion and white pepper, and remove from heat. Squeeze lime juice over the top and toss rice lightly to combine. Remove dried chiles before serving.

  • First, make the sauce. Take the tamarind pulp (a block about 1 x 2 in (2.5 x 5 cm) and mix it with ½ cup boiling water (you can add a little more if needed to dissolve the paste). Break up the pulp in the hot water, and then press the mixture through a fine-meshed strainer. Discard the solids. To the liquid tamarind concentrate you just made, add the sugar, fish sauce, Thai black soy sauce, Thai sweet soy sauce (if using), and white pepper. Set aside.
  • Soak the pad thai noodles in hot water for about 20 minutes, and drain in a colander. If the noodles are in really long strands, you will want to cut them into 10- to 12-inch lengths to make stir-frying easier.
  • Marinate the sliced chicken by combining it with 1 teaspoon each of Thai thin soy sauce, cornstarch, and water. Set aside.
  • Next, prepare the dried shrimp, mincing them down into a coarse powder (we used a food processor). Prepare the garlic, shallots/red onion, preserved Chinese mustard stems (zha cai), eggs, mung bean sprouts, garlic chives, and peanuts. You want to have everything ready to go before you turn on the stove.
