TACO SKILLET BURGERS
Classic from when I was a kid. Big plate of smothered, comfort food deliciousness! My kids love this recipe.

Steps:
- Mix ground beef, onions, and taco seasoning mix in a bowl. Shape into 4 hamburger patties.
- Cook patties in a large skillet over medium heat until no longer pink in the center, about 4 minutes per side. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Drain fat and wipe the skillet with a paper towel.
- Mix soup and water in a bowl. Pour over patties in the skillet; simmer until soup mixture is heated through, about 5 minutes. Mix in tomato, Cheddar cheese, corn chips, and olives. Scoop out the taco burgers and serve once cheese has melted.

- In a Dutch oven, cook beef, red pepper and onion over medium heat until beef is no longer pink and vegetables are tender, breaking beef into crumbles, 8-10 minutes. Drain., Stir in tomatoes, corn, tomato sauce, chili powder and salt; bring to a boil. Add rice; heat through. Serve in taco shells with toppings of your choice.

- In a large bowl, combine the corn chips, taco seasoning, onion and egg. Crumble beef over mixture and mix well. Shape into six patties. , Grill, covered, over medium heat or broil 4 in. from the heat for 7-8 minutes on each side or until a thermometer reads 160° and juices run clear., Top each burger with a cheese slice; heat just until cheese begins to melt. Serve on buns with lettuce, tomato and, if desired, salsa.

- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Mix ground beef and taco seasoning together in a bowl with your hands. Separate mixture into 5 equal portions. Form into patties.
- Cook patties on the preheated grill for 5 minutes. Flip, top with pepper Jack cheese slices, and continue to grill until no longer pink or to desired doneness, about 5 minutes more. An instant-read thermometer inserted into the center of a patty should read at least 160 degrees F (70 degrees C).
- Spread sour cream and salsa on buns, add patties, and top with cilantro, tomato, avocado, and onion.

Steps:
- Brown ground chuck and onions in skillet on medium high till meat is no longer pink.
- Add taco seasoning (do not add water to mix) and toss with the meat to coat, cooking for about 5 more minutes.
- Lightly butter the inside of the buns and toast in skillet or under broiler till nice and brown.
- Spread the taco sauce on the inside of each bun, add taco meat, shredded lettuce, cheese and tomato.
- Enjoy!

- In a medium bowl, working gently, mix ground beef with all burger ingredients except buns.
- Divide the mixture into 4 quarters and lightly form into patties about 1" thick.
- Place patties on an oiled outdoor grill (or you can cook in a skillet) and cook, turning once, about 10-15 minutes or until cooked to desired doneness. You can add the cheese slices onto the burgers a few minutes before they are done to melt if desired.
- Meanwhile, open buns and toast on grill until lightly browned. Place cooked burgers on buns and top with desired toppings.

- Following package instructions cook beef and seasonings, but use only HALF of recommended water. Cook until no longer "drippy".
- Spread sour cream among the four buns.
- Place lettuce on bottom of each bun. Top with taco meat.
- Top meat with onion, cheese, tomato, salsa.
- Top with bun top.
- I double the meat portion of this recipe and freeze half. Then just microwave for a second meal later on.

This recipe came from my husband's mother (who had 7 kids). It's a great way to "stretch" burger. My kids just love it when I make this. I think it's called Texas Burgers (Tex Burgers) cuz she made it on Texas Toast bread. The hamburger juice gives the bread a great flavor

Steps:
- Mix raw ground beef with all ingredients. You can add anything else, like green peppers or leave out anything except for the mayonnaise.
- Add enough mayonnaise so it becomes the consistency of ham salad (spreadable). Spread burger mixture on bread (Texas Toast bread or regular bread) very thinly all the way to the edges (it shrinks up as it cooks). Put all on a cookie sheet and broil until meat is done and the bread edges are toasted. My kids laugh because the smoke alarm always goes off when I broil, and they yell, "Dinner's done!".
- You should have about 8 sandwiches per pound of burger.
- Serve open-faced -- either "naked" like I like them or any condiments you choose. Really a different taste instead of just boring burgers.

- Mix the ground meat and taco seasoning with your hands.
- Make 4 patties.
- Spray grill with nonstick cooking spray before igniting.
- Heat to medium, then put burgers on.
- Cook about 5 minutes per side, or until done.
- Place on chile and 1 slice of cheese on each burger, and cover until cheese is melted.
- Serve on buns with sour cream, salsa, lettuce and tomato, or preferred garnishes.
- You can make these on the stove as well, just cook them like you would a regular hamburger.
- Make sure to use some cooking spray though!
