Potato Chip Chicken image

Boneless chicken breasts marinated overnight, then baked in onion-flavored potato chips. Serve with twice-baked potatoes, if desired.

2 pounds skinless, boneless chicken breast meat
2 tablespoons butter, melted
1 teaspoon salt
1 teaspoon ground black pepper
1 cup crushed potato chips

Steps:

  • To Marinate: Put chicken breasts in a nonporous glass dish or bowl. Drizzle melted butter or margarine over chicken and season with salt and ground black pepper. Cover dish and refrigerate overnight.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Put potato chip crumbs in a shallow dish or bowl. Roll chicken in crumbs until well coated, then place in a lightly greased 9x13 inch baking dish.
  • Bake at 375 degrees F (190 degrees C) for 45 minutes or until chicken juices run clear.

This is a quick, easy and yummy recipe that is like a gourmet version of chicken schnitzel. From the cookbook, "Gatherings: Creative Kosher Cooking from Our Families to Yours" (Netivot HaTorah). Tips: To crush chips and still maintain texture, put them into a sealable plastic bag and use a rolling pin for crushing. For a finer texture, crush chips in a food processor.

1/2 cup all-purpose flour
1 tablespoon garlic powder
1/2 teaspoon salt
1/2 teaspoon pepper
6 boneless chicken breasts
1 egg
1 tablespoon Dijon mustard
1 teaspoon lemon juice
1 teaspoon lemon & herb seasoning
1 (170 g) bag terra chips, crushed or 1 (170 g) bag other vegetable chips
1/3 cup margarine

Steps:

  • Preheat oven to 350°F.
  • In a small bowl, combine flour, garlic powder, salt and pepper. Dredge chicken breasts in mixture. Set aside.
  • In another small bowl, beat egg, mustard, lemon juice and lemon and herb spice together. Set aside.
  • Place crushed chips in a large bowl. Dip chicken first in egg mixture, then in crushed Terra chips. Place chicken breasts in roasting pan.
  • In a small saucepan, melt margarine. Drizzle on top of chicken. Place roasting pan, uncovered, in oven. Bake for 30 to 45 minutes.

This is from "Christmas Memories Cookbook". The book describes it as "piquant and festive" and suggests serving with a rice or wheat pilaf. Be sure to allow time for the sauce to reduce. This can be prepared the day before and baked when needed.

8 boneless skinless chicken breasts
1 -2 cup breadcrumbs
1 egg
1 tablespoon water
salt
pepper
paprika
1/4 cup butter
1 cup chili sauce
1 cup red currant jelly
1 cup dry sherry

Steps:

  • Preheat oven to 400 degrees.
  • Flatten each chicken breast.
  • Combine egg and water. Dip each breast into egg mixture then into bread crumbs. Season with salt, pepper and paprika. Roll and secure with a toothpick. Season again.
  • Saute in butter until light golden, turning gently with two forks or tongs to brown evenly. At this point, you can refrigerate or freeze for later use. You can also remove the toothpicks.
  • Make sauce by combining chili sauce, jelly and sherry in a 1-quart sauce pan. Heat over low/medium heat, stirring occasionally until thickened, 30 to 45 minutes. Set aside or refrigerate.
  • When ready to serve, place chicken in shallow pan or baking dish, cover with sauce and bake about 20 minutes or until done.

I found this recipe on a calendar at the Doctor's office and wrote it down. It has been a family favorite. I like dipping it in Ranch Dressing, but it can be served with any dipping sauce of your taste. The egg is suppose to help the chips stay on the chicken, but I found that it doesn't really help. It does however, help keep the juices in.

6 -8 boneless skinless chicken breasts
2 eggs
2 tablespoons milk
1 (10 ounce) bag potato chips (Original, Sour Cream and Onion, BBQ, or any other you prefer)

Steps:

  • Preheat oven to 400 degrees.
  • Crush the bag of chips.
  • You can use a plastic bag, but the original bag works great.
  • Mix the egg and milk in a small bowl.
  • Dip breasts in egg/milk mixture and then drop in bag of chips.
  • Make sure all of it is coated.
  • Remove chicken from bag and place in a glass cake pan.
  • After all the chicken is coated sprinkle the remainder of the crushed chips on the chicken.
  • Bake for 15 minutes.
  • Turn chicken over and bake an additional 15 minutes (I have found that I need to cook it a little longer).

This has been a long time favourite in my house, it's a great way to use up any leftover potato chips ;-) You can season the crushed potato chips with black pepper if desired.

1 (20 ounce) package potato chips, crushed
1 (16 ounce) container sour cream
3 lbs chicken breasts
1 tablespoon garlic powder
1/2 cup butter, melted

Steps:

  • Grease an 8 x 8-inch baking dish (for 3-4 breasts).
  • Set oven to 425 degrees.
  • Place sour cream in a medium bowl.
  • Coat all sides of the chicken in sour cream.
  • Coat with crushed potato chips.
  • Place chicken in greased baking sheet.
  • Bake for 5 mins, then reduce heat to 375 degrees, and bake for 10-15 mins longer.
  • While the chicken is baking, melt butter; add garlic powder to butter, mix.
  • Set oven back to 450 degrees.
  • Remove chicken from oven; brush with melted butter/garlic mixture.
  • Return to oven and bake for additional 5 mins, or until chicken is golden brown.
  • Delicious!

This is a unique and delicious salad. THe salad tastes great on its own, so you can omit the nuts if you'd like. Its from the Salad Time cookbook.

1 head romaine lettuce (I use 1 bag of pre-packed lettuce)
1 red pepper, cut into thin strips
1 yellow pepper, cut into thin strips
1 avocado, peeled, pitted, and cubed
1 (6 ounce) package slivered almonds
1 (4 ounce) package pine nuts
1 (6 ounce) package terra chips (or Terra Sticks)
1/3 cup oil
1/3 cup red wine vinegar
1/4 cup sugar (or splenda)
3 tablespoons ketchup
2 tablespoons grated onions

Steps:

  • Tear lettuce and combine with the peppers and avocado in a large bowl. Sprinkle with almonds and pine nuts.
  • Combine Oil, vinegar, sugar, ketchup and onion in a jar or cruet. Cover tightly and shake vigorously.
  • To serve, add dressing, tossing to coat. Crumble 3/4 package chips and sprinkle on top. Arrange whole chips around edge of bowl as a garnish.
