Lime and tequila-marinated shrimp grilled on skewers make an easy appetizer to enjoy all summer.

2 tablespoons lime juice
2 tablespoons tequila
¼ cup olive oil
1 pinch garlic salt
1 pinch ground cumin
ground black pepper to taste
1 pound large shrimp, peeled and deveined
6 (10 inch) wooden skewers
1 large lime, quartered

Steps:

  • Whisk together the lime juice, tequila, olive oil, garlic salt, cumin, and black pepper in a bowl until well blended. Pour into a large resealable plastic bag; add the shrimp, seal bag and turn to coat evenly. Refrigerate 1 to 4 hours before grilling.
  • Soak skewers at least 30 minutes in water to prevent burning.
  • Preheat outdoor grill for medium-high heat. Lightly oil grill grate, and place about 4 inches from heat source.
  • Drain and discard marinade from shrimp. Thread shrimp onto prepared skewers, 5 to 6 per skewer.
  • Cook, uncovered, on preheated grill until shrimp turn pink, turning once, for 5 to 7 minutes. Serve with lime wedges for garnish.

5 garlic cloves, minced
1/2 teaspoon salt
1/4 to 1/2 teaspoon cayenne pepper
1/2 cup butter
3 tablespoons lime juice
1 tablespoon minced fresh parsley
Hot cooked pasta

Steps:

  • In a large skillet, saute the shrimp, garlic, salt and cayenne in butter until the shrimp turn pink, about 5 minutes. Stir in lime juice and parsley. Serve with pasta.

3 tablespoons butter, divided
1 shallot, minced
2 garlic cloves, minced
1/4 cup tequila
1-1/2 teaspoons grated lime zest
2 tablespoons lime juice
1 tablespoon olive oil
1 pound uncooked shrimp (31-40 per pound), peeled and deveined
2 medium zucchini, spiralized (about 6 cups)
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup minced fresh parsley
Additional grated lime zest

Steps:

  • In a large cast-iron or other heavy skillet, heat 2 tablespoons butter over medium heat. Add shallot and garlic; cook 1-2 minutes. Remove from heat; stir in tequila, lime zest and lime juice. Cook over medium heat until liquid is almost evaporated, 2-3 minutes., Add olive oil and remaining butter; stir in shrimp and zucchini. Sprinkle with salt and pepper. Cook and stir until shrimp begin to turn pink and zucchini is crisp-tender, 4-5 minutes. Sprinkle with parsley and additional lime zest.

1/4 cup lime juice, fresh
1/4 cup tequila
1 garlic clove, minced
2 shallots, minced
1/2 teaspoon cumin
1/2 cup olive oil
salt
pepper
1 lb large shrimp
8 ounces cream cheese
2 tablespoons tequila
2 tablespoons lime juice
2 teaspoons cilantro, chopped
2 teaspoons lime zest

Steps:

  • Combine first 8 ingredients to make marinade.
  • Place the shrimp in a flat dish and cover with the marinade.
  • Marinate one hour.
  • If you are using bamboo skewers, soak them in cold water for at least 30 minutes. Thread shrimp on skewers. Grill about 3 minutes a side.
  • For sauce, stir remaining ingredients together until well blended.

1/2 lb angel hair pasta
2 tablespoons extra virgin olive oil
1 lb medium shrimp, peeled and deveined (can be cooked or uncooked, see steps for instructions for each)
2 teaspoons garlic, chopped
1 teaspoon salt
1 teaspoon pepper
1 cup chicken broth (can substitute half with white wine to increase flavor)
1/8 teaspoon crushed red pepper flakes
1 tablespoon lemon peel, grated fresh
1/4 cup lemon juice, squeezed fresh
1/2 cup Italian parsley, chopped
1/3 cup parmesan cheese, grated

Steps:

  • Cook pasta according to package instructions and drain.
  • While pasta cooks, heat one tablespoon of the olive oil in a large skillet over medium-high heat. Add the garlic, shrimp (if using uncooked shrimp), and 1/2 tsp each of salt and pepper. Saute two minutes or until shrimp are barely pink and/or garlic is soft.
  • Add broth and crushed red pepper. Increase heat to high.
  • Add cooked shrimp (if not using uncooked shrimp in step 2).
  • Cook on high heat for 2-3 minutes (just one minute if you used uncooked shrimp earlier), until shrimp are warmed through.
  • Stir in lemon peel and juice.
  • Put the pasta in a serving bowl, add the remaining tablespoon olive oil and 1/2 teaspoon each salt and pepper. Toss to coat.
  • Add the shrimp mixture, parsley, and cheese (gradually so as not to clump up the cheese). Toss to mix and serve immediately.

1 shallot, minced

juice of 1/2 lime
2 chipotles in adobo, minced (make your own if you can)
(sub 2 tsp (or to taste) Tony Roma's chipotle sauce)
1 cup Mexican crema (sub 0% greek yogurt)
1 tablespoon kosher salt
1/2 tablespoon fresh ground black pepper
1 teaspoon ground cumin
1 tablespoon chopped fresh oregano (sub 1 teaspoon dried)
(1/4 cup grated cotija cheese) add to calculation seperately
6 oz (uncooked) cooked pasta

Steps:

  • Heat the oil in a large saucepan or skillet over medium high heat and add the shallots and garlic. Cook just until fragrant about 1 to 2 minutes. Carefully (don’t set your house on fire) add the tequila and Grand Marnier, then the lime juice, chipotles, cumin, oregano and salt and pepper. Let this mixture cook for about 5 minutes to help meld the flavors. Now add the shrimp and cook until just opaque, stirring frequently. Finally whisk in the crema a little bit at a time until the sauce in the pan reaches the desired thickness. Serve over fresh cooked pasta and top with an equal portion of the cotija cheese.

1/2 cup lime juice
1/2 cup tequila
1/4 cup white wine vinegar
1 1/2 cups cream, plus 2 tablespoons (or can use half-and-half cream or evaporated milk)
1 shallot, finely minced
3 garlic cloves, minced
3 tablespoons butter
1 teaspoon cornstarch
12 ounces fettuccine pasta
4 green onions, finely chopped
4 roma tomatoes, diced
grilled chicken, shrimp or salmon

Steps:

  • Combine garlic and shallot with tequila, lime juice and vinegar. Cook until reduced to about 1/4 cup.
  • Add cream and cook until reduced by half. Strain out garlic and shallot if desired. Return sauce to heat and whisk in butter.
  • Mix cornstarch with 1 tablespoon water until smooth. Whisk into sauce to thicken.
  • Cook pasta according to package directions. Drain pasta. Add green onions and tomatoes to hot pasta pot and stir. Add drained pasta and sauce and mix well.
  • Serve garnished with fresh cilantro, if desired. You can also top the pasta with grilled chicken, shrimp or salmon for a heartier meal.
