2 sticks butter
1 cup minced bell pepper
1 cup minced onion
3 cloves garlic minced
1 bottle hot sauce (recommended: Frank's)
2 tablespoons mustard
2 cups ketchup
3/4 cup brown sugar
Salt and freshly ground black pepper
3/4 cup Worcestershire sauce
1/2 cup vinegar
1/8 cup dark molasses
Chili powder
Ground allspice
Crushed red pepper flakes
28 ounces tomato sauce
1/4 cup olive oil
1 bottle light beer (recommended: Labatts Blue light)
Chili powder
Paprika
Roasted garlic powder
Basil
Black pepper
White pepper
Cayenne
Celtic sea salt
Brown Sugar
36 to 48 chicken wings

Steps:

  • Preheat oven to 350 degrees F.
  • For the sauce:
  • In a medium saucepan, over medium heat add the butter and let it melt. Add all the vegetables, including the garlic, and saute until tender. Stir in all of the liquid ingredients and Bring a large pot of salted water to a boil over medium-high heat.
  • To a boil, add dry ingredients, use hand blender, add beer, blend more to smooth.
  • Combine all the rub ingredients in a small bowl. Coat the wings with the dry rub and let sit 10 minutes. Chant to the wing Gods.
  • Place in oven box and slow cook. When ready to plate hit with sauce and place on grill to ready to present.

PIGSKIN PORK FILLET

1 cup brown sugar
1 cup salt
1/4 cup bourbon
1/4 cup soy sauce
1/4 cup honey
2 tablespoons peppercorns
2 quarts water
2 pounds pork loin
5 tablespoons butter
4 garlic cloves, minced

Steps:

  • Combine all of the brine ingredients in a large container. Add pork loin and let it brine in the refrigerator overnight.
  • Brown the butter in a small pan over low heat. Combine the bourbon, honey, garlic, and soy sauce in a small bowl. Set aside.
  • Preheat a grill to 450 degrees F.
  • Remove the pork loin from the brine and cut it, lengthwise, into quarters. Grill the pork strips until the internal temperature reaches approximately 120 degrees F on an instant-read thermometer, about 10 minutes.
  • Transfer the pork to a cutting board and slice into 1/2-inch sections. Reheat the browned butter over medium heat and add the pork. Stir in the bourbon mixture and saute until the pork reaches 155 degrees F on an instant-read thermometer, approximately 5 minutes.
  • Transfer the pork to a serving dish and serve.

One 13-ounce package kielbasa
All-purpose flour, for rolling
One 17.3-ounce package frozen puff pastry, thawed
1 large egg, lightly beaten
1/3 cup mustard, such as Dijon, whole grain, spicy brown or yellow, for dipping

Steps:

  • Split the kielbasa in half lengthwise and then cut each half into six 3/4-inch pieces, slicing on an angle. Cook the pieces in a large nonstick skillet over medium heat until the skin is crisped and some of the fat has been released, about 5 minutes. Transfer the kielbasa to a paper towel-lined plate to cool.
  • Preheat the oven to 425 degrees F.
  • On a lightly floured surface, roll one piece of puff pastry out to form an 8- by 11-inch rectangle. Using a 3 1/2-inch round cookie cutter, cut out 6 circles from the pastry; cut the circles out as close together as possible and reserve the scraps. Repeat with the second sheet of puff pastry.
  • Wrap a circle of puff pastry around each of a kielbasa, pinching the seams together to seal all the way around so no kielbasa is exposed and gently pulling on the ends to make a tapered football shape. Place on an ungreased baking sheet, seam-side down, and repeat with the remaining pastry and sausage.
  • Brush the rolled sausages with the beaten egg. Use bits of the pastry scraps to make laces on each "football" by placing 1 strip lengthwise on top of each and laying 3 smaller strip crosswise over it. Press down gently to adhere and brush the laces with a bit more egg.
  • Bake until the pastry is browned and crisped, 25 to 30 minutes. Serve the pigskins with mustard for dipping.

BACON-WRAPPED PIG WINGS

Who says pigs can't fly? Take a few boneless pork chops, add some bacon and a little creativity, and Pig Wings are on the menu! The bacon adds great flavor and keeps the loin meat from getting dry. These look delicious and are a little unusual, so they make a fabulous smoked appetizer with barbecue sauce for dipping. The kids will love them.

Four 1-inch-thick boneless pork chops
12 slices bacon (do not use thick sliced)
Barbecue Rub #67
Barbecue sauce, for dipping

Steps:

  • Cut each pork chop into three strips. To wrap the "wings," start by overlapping the bacon on one end of a pork strip, then wrapping it up and around in a candy-cane fashion. Secure the bacon at the top with a toothpick. If you need to use a toothpick at both ends, go ahead. Season the bacon-wrapped wings liberally with the rub.
  • Prepare your cooker to cook indirectly at 235°F using medium pecan wood for smoke flavor. Place the wings directly on the cooking grid and cook for 90 minutes, or until the bacon is cooked. You may want to finish these on a hot grill or under the broiler to crisp the bacon. Serve hot with barbecue sauce for dipping.
