DAD'S PAD THAI
This is the best Pad Thai recipe ever. My father's Pad Thai is better than most Thai restaurants! I like it because of all the fresh ingredients, it is not greasy. It's satisfying and healthy. There is no meat in this recipe.

Steps:
- Bring a pot of water to a boil. Blanch the bean sprouts in boiling water for approximately 30 seconds, remove, and drain well. When the water returns to a boil, add noodles. Cook for 3 to 5 minutes until tender but firm; drain and rinse under cold water
- Beat the eggs with a pinch of salt in a small bowl. Stir together the lime juice, ketchup, brown sugar, and fish sauce in a separate bowl; set aside.
- Heat the oil in a wok or large skillet over medium-high heat. Fry the garlic for a few seconds. Add the pepper flakes and carrot, and cook for one minute, then remove. Add the beaten egg, and gently scramble. When the eggs have set, pour in the carrots, sauce, bean sprouts, noodles, peanuts, and green onion; toss together.

TRADITIONAL CHICKEN & SHRIMP PAD THAI
Thailand's most famous noodle dish. This dish comes together quickly, so it's handy to have the ingredients prepped and ready before you begin. I don't care for cilantro so I leave it out, but I posted the recipe as it was written.

Steps:
- Prepare rice noodles according to the package. Drain and rinse under cold water; set aside in a bowl.
- Combine water, soy sauce, fish sauce, brown sugar and red pepper flakes in a small bowl; set aside.
- Heat one tsp oil in a pan or wok over medium heat. Add beaten egg and stir fry. Remove scrambled egg from pan and add to noodles.
- Add one tsp oil to heated pan, stir in garlic, chicken and shrimp. Stir fry just until chicken turns opaque and loses its pink color.
- Add green onions and cook an additional minute.
- Add noodle-egg mixture and sauce, cook until thoroughly heated.
- Remove from heat; toss with bean sprouts and cilantro.
- Sprinkle with peanuts. Serve immediately.
PAD THAI
This is a traditional Pad Thai recipe used by a friend's mother. You can use chicken, pork, beef, tofu, or a combination. You may want to start with less pepper, and work your way up.

Steps:
- Soak rice noodles in cold water 30 to 50 minutes, or until soft. Drain, and set aside.
- Heat butter in a wok or large heavy skillet. Saute chicken until browned. Remove, and set aside. Heat oil in wok over medium-high heat. Crack eggs into hot oil, and cook until firm. Stir in chicken, and cook for 5 minutes. Add softened noodles, and vinegar, fish sauce, sugar and red pepper. Adjust seasonings to taste. Mix while cooking, until noodles are tender. Add bean sprouts, and mix for 3 minutes.

This isn't really authentic, but it's easy and very tasty. It comes from a Canadian low fat cookbook called "Crazy Plates" by sisters Janet & Greta Podleski.

Steps:
- Cook noodles in boiling water for 3 minutes, or until tender.
- Drain.
- Rinse with cold water and drain again.
- Set aside.
- To make sauce, combine ketchup, soy sauce, lime juice, brown sugar, vinegar, oil and crushed red pepper flakes in a small bowl.
- Set aside.
- Heat oil in a large, non-stick wok or skillet over medium heat.
- Add onions and garlic.
- Cook and stir until onions are tender, about 3 minutes.
- Add sauce and bring to a boil.
- Add cooked noodles, bean sprouts, carrot, green onions and cilantro.
- Mix well.
- Cook until noodles are heated through, about 2 minutes.
- Srpinkle individual servings with chopped peanuts.

JASMIN'S PAD THAI

- Get your mise completely ready to go, because this dish only takes about 5 minutes to cook.
- In a wok (of course you can use a frying pan, but it's just not the same; even those cheap stainless steel ones work better than a pan), fry the red onion in a little peanut or olive oil. Add the shrimp (or calamari, chicken, or pork). Cook for a minute. They'll continue so don't worry too much if they're still slightly opaque, and move them over to the side. Make a well in the center. Crack the egg in there and scramble with a fork till cooked. Push over to the side along with the shrimp.
- Break the noodles in half (unless your wok is the huge industrial size), and add to the center with about 1/4 cup of the stock, the fi sh sauce, tamarind sauce, palm sugar (dissolve it in a little hot water if too thick), and red chile flakes. Mix well into the noodles, leaving the shrimp and scrambled egg off to the side.
- Cook the noodles in the sauce for a few minutes, stirring lightly to ensure that they don't clump together. The noodles should be just softened-you want them nice and chewy. Taste and adjust the seasoning-and add more stock if necessary.
- Now add the bean sprouts and the scallions, stir everything together, and heat it through. Immediately turn onto large plate and top with the chopped cashews. Garnish with lime and cucumber slices.
- You now just need a pair of chopsticks and an ice cold Singha.
TED'S PAD THAI
I have always loved Pad Thai, so I decided to figure out how to make it. My recipe doesn't use tamarind juice or shrimp, but it does taste delicious! Or so my wife says... If you do want a more authentic Pad Thai, reduce the chicken to a 1/2 lb. and add a 1/2 lb. of shrimp to the recipe. Be sure not to marinate the shrimp, and to add at the same time as the eggs. Also, replace the rice vinegar with tamarind juice. Enjoy!

- Cut chicken into 1/2 inch cubes and marinate in the 2 teaspoons of wine for 10 minutes.
- Prepare rice noodles according to package.
- Mince the garlic.
- Lightly beat the eggs.
- Cut the green onions into 2 inch lengths.
- Rinse the bean sprouts.
- Chop the peanuts.
- Cut the lime into wedges.
- Place a stir-fry pan or wok over high heat until hot. Add vegetable oil and swirl it around the sides of the pan.
- Add garlic and stir-fry till fragrant, about 15 seconds.
- Add chicken and stir-fry till done, about 3 minutes.
- Push the chicken to one side of the pan, then add the eggs and scramble on the other side.
- Add noodles, fish sauce, rice vinegar, brown sugar, and chili garlic sauce all at once. Continue stir-frying until everything is well mixed.
- Add the green onions and bean sprouts and continue cooking till heated through.
- Place Pad Thai in a serving dish or on separate plates and garnish with the peanuts and lime.
