I love this flatbread pizza because it combines so many different flavors and textures. You can use it as an appetizer or a light lunch. And, it's so easy to change the flavor by trying various store-bought tapanades.-

2 tablespoons olive oil
4 whole pita breads
2 packages (4 ounces each) herbed fresh goat cheese
4 ounces thinly sliced prosciutto
2 cups Moroccan Tapenade
2 tablespoons thinly sliced fresh basil

Steps:

  • Spread oil over both sides of each pita bread. Place on a griddle. Cook over low heat for 2-4 minutes on each side or until golden brown and crispy., Spread with goat cheese; top with prosciutto. Spread each with 1/2 cup tapenade; sprinkle with basil. Cut into four wedges. Serve immediately.

2 ounces roasted red peppers
1 tablespoon roasted garlic
1 tablespoon toasted pine nuts
1 tablespoon black olives
2 tablespoons olive oil
10 ounces goat cheese
6 thin slices of prosciutto
1 tablespoon rosemary
6 rounds of baguette, toasted

Steps:

  • Preheat oven to 350 degrees. Puree the roasted red peppers, roasted garlic, pine nuts, black olives, olive oil, and set aside. This is the tapenade. Season goat cheese with rosemary and wrap in prosciutto. Bake until cheese melts. Spread the tapenade on the toasted baguette and top with prosciutto and goat cheese.;

For tapenade
1 cup brine-cured black olives (such as Kalamata; about 5 ounces), pitted
1/2 cup raisins
1/4 cup chopped fresh parsley
3 canned anchovy fillets, drained
2 medium shallots, sliced
2 tablespoons fresh lemon juice
1 tablespoon fennel seeds
1/2 teaspoon cayenne pepper
1/2 cup olive oil
For dressing
5 tablespoons fresh lemon juice
1/4 cup (packed) grated Parmesan cheese
3 tablespoons coarse-grained Dijon mustard
2 tablespoons finely chopped drained canned anchovy fillets
2 tablespoons finely chopped drained capers
2 tablespoons chopped garlic
1 cup olive oil
3 hearts of romaine lettuce, torn into pieces
4 ounces thin prosciutto slices, cut crosswise into strips
Pecorino Romano cheese shavings

Steps:

  • Make tapenade:
  • Blend olives, raisins, parsley, anchovies, shallots, lemon juice, fennel seeds and cayenne in processor until almost smooth, occasionally scraping down sides of bowl. With machine running, add oil and process until blended. Season to taste with salt and pepper.
  • Make dressing:
  • Whisk lemon juice, Parmesan, mustard, anchovies, capers and garlic in medium bowl until well blended. Gradually whisk in oil. Season with salt and pepper. (Tapenade and dressing can be made 2 days ahead. Cover separately and refrigerate. Bring to room temperature before using.)
  • Place lettuce in large bowl. Toss with enough dressing to coat generously. Divide lettuce among 6 plates. Dot perimeter of each plate with teaspoonfuls of tapenade. Top each salad with prosciutto and cheese and serve.

Adding chopped dried figs to tapenade lends a fruity note that contrasts with the briny Kalamata olives in this thick, garlic-spiked spread. Here, it's served alongside silky slices of prosciutto and juicy persimmon to echo and round out those sweet-salty flavors. If you're starting with soft, plump dried figs, you don't need to soak them first. Just chop them up and add to the food processor with the olives. Leftover tapenade will keep for at least a week or two in the fridge, and makes a terrific condiment for sandwiches, or serve it with roasted chicken or meats.

1/2 cup dried figs, stems trimmed
1/2 cup pitted Kalamata olives
2 anchovy fillets
1 teaspoon fresh lemon juice, more to taste
1 small garlic clove, coarsely chopped
3/4 teaspoon minced fresh rosemary
1/4 cup extra-virgin olive oil, more if needed
Prosciutto, for serving
Persimmon wedges, for serving
Toasted country bread, crackers or breadsticks, for serving

Steps:

  • Place figs in a bowl and cover with boiling water. Let sit until soft and pliable, 5 to 10 minutes, then drain and coarsely chop.
  • In a food processor, combine chopped figs, olives, anchovies, lemon juice, garlic and rosemary. With the motor running, slowly drizzle in olive oil, and process until mixture becomes a paste, 1 to 3 minutes, scraping down the sides once or twice. Taste and add more lemon juice and olive oil if you like.
  • Spoon tapenade into a bowl or crock and serve alongside thinly sliced prosciutto, persimmon wedges and bread, crackers or breadsticks.

Pesto:
2 tablespoons coarsely chopped walnuts
1/4 cup extra-virgin olive oil
1/4 cup (1 1/2 ounces) grated Parmesan cheese
1 garlic clove
2 cups (lightly packed) fresh basil leaves (about 3 1/2 ounces)
Sandwiches:
8 1/3- to 1/2-inch-thick slices country-style white bread
Olive oil (for brushing)
Citrus Tapenade
6 ounces thinly sliced prosciutto
8 ounces fresh mozzarella cheese, cut into 1/4-inch-thick slices
4 tablespoons aged balsamic vinegar

Steps:

  • For pesto:
  • Toast walnuts in small skillet over medium heat until golden brown, stirring often. Cool. Puree walnuts, olive oil, Parmesan cheese, and garlic in processor to paste, stopping occasionally to scrape down sides of bowl. Add half of basil leaves; puree. Add remaining basil; blend until coarse puree forms. Season pesto to taste with salt and pepper.
  • For sandwiches:
  • Brush 1 side of each bread slice with olive oil. Heat griddle or heavy large skillet over medium-high heat; grill bread, oiled side down, until golden brown, about 1 minute. Transfer grilled bread to clean work surface; let stand until cool. Turn 4 bread slices over (grilled side down) and spread thin layer of Citrus Tapenade evenly over each. Top with prosciutto slices, then mozzarella cheese slices. Drizzle with pesto. Drizzle 1 tablespoon balsamic vinegar over ungrilled side of each of 4 remaining bread slices. Place bread, grilled side up, atop sandwich filling. Cut sandwiches in half and serve.

Zest of half a lemon
Freshly ground pepper, to taste
1 teaspoon Dijon mustard, optional
2 tablespoons chopped parsley, optional
1 to 2 tablespoons extra-virgin olive oil

Steps:

  • Coarsely chop olives garlic, capers, anchovies, and lemon zest on a parchment covered cutting board. Place chopped mixture in a bowl. Add pepper, mustard, parsley, and stir in enough olive oil to bind the mixture together.
