TANGLEWOOD MANOR HOUSE RESTAURANT'S TAR HEEL PIE

Steps:

• Mix softened cream cheese with sugar. Whip cream until stiff peaks form. Carefully fold cream into cheese mixture and mix until thoroughly blended. Slice bananas and place in bottom and sides of pie shell. Pour cheese mixture over bananas and chill until firm. Blueberry Glaze: Combine all ingredients and cook over low heat until thick. Be careful not to break up the berries. Cool to room temperature. Spoon Glaze evenly over cheese mixture and chill several hours or overnight.

TAR HEEL PIE

Steps:

• Preheat oven to 350 degrees F (175 degrees C.)
• In a large bowl, pour warm melted butter over 3/4 cup chocolate chips. Stir until smooth. Mix together flour, brown sugar, and white sugar, then stir into chocolate mixture. Stir in eggs and vanilla. Fold in pecans, coconut, and 1/4 cup chocolate chips. Pour into pie crust.
• Bake in preheated oven for 35 to 40 minutes. Top should be set, and may crack slightly, but the pie is best if under-baked.

Steps:

• Pour melted butter over sliced apples and soak a few minutes. Combine sugar, flour, and spices. Remove apples from butter (reserve any that is left and use in Topping). Coat apples with sugar mixture; pour into pastry shell. Topping: Combine ingredients and crumble over apples. Bake at 400° for 40-45 minutes, or until brown and apples are tender. Serve warm with a scoop of vanilla ice cream.
