I found this recipe in a cookbook and made some changes to it. My husband likes to have it for his birthday cake. We live with my husband's family on a 27,000-acre ranch in the mountains and raise cattle, grain and hay.

4 large eggs
2 cups sugar
1-1/3 cups vegetable oil
2-1/2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground allspice
1 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1 teaspoon salt
2 cups finely shredded carrots
2 cups finely shredded zucchini
1 cup coarsely chopped pecans or walnuts
FROSTING:
1 package (8 ounces) cream cheese, softened
1/2 cup butter, softened
5 cups confectioners' sugar
2 teaspoons vanilla extract
Whole or chopped pecans or walnuts for garnish, optional

Steps:

  • In a large bowl beat eggs and sugar until frothy. Gradually beat in oil. Combine dry ingredients; add to batter. Beat 4 minutes. Stir in carrots, zucchini and nuts. Pour into three greased 9-in. round baking pans. Bake at 350° for about 35 minutes or until top springs back when lightly touched. Cool 5 minutes before removing from pans. Cool thoroughly on a wire rack. , For frosting, beat cream cheese and butter in a large bowl until smooth. Add sugar and vanilla. Continue beating until sugar is dissolved. Spread between the layers and over the top and sides of the cake. Garnish with whole or chopped nuts if desired.

3 cups carrots (peeled and grated)
2 cups all-purpose flour
1 tsp baking soda
1 1/2 tsp baking powder
1/2 tsp salt
1 1/2 tsp cinnamon
4 eggs
1 cup honey
1/2 cup canola oil (or extra light olive oil for an even healthier cake!)
2 tsp vanilla extract
1 cup applesauce
1 cup crushed walnuts (toasted on a skillet (optional - I omitted since not everyone in my family eats nuts).)
2 cups powdered sugar
16 oz cream cheese
2 sticks unsalted butter
1 Tbsp pure vanilla extract
1/2 cup walnuts (coarsley chopped and toasted on a skillet)
1/4 cup to drizzle over the top

Steps:

  • Preheat the Oven to 350 degrees F. Butter and flour 2 round cake pans.
  • In a medium bowl, whisk together 2 cups flour, 1 tsp baking soda, 1 1/2 tsp baking powder, 1/2 tsp salt and 1 1/2 tsp cinnamon.
  • In a large bowl beat eggs on high speed until foamy (1 min), Add 1 cup honey and beat on high another 4 min. Blend in 1/2 cup canola oil, 2 tsp vanilla and applesauce.
  • Add in the flour mixture 1/2 cup at a time and mix until it is just incorporated into the batter.
  • Use a spatula to fold in the grated carrots and walnuts (if using) just until combined.
  • Divide the batter equally among the two cake pans and bake at 350 degrees F for 25-30 minutes; a toothpick inserted in the center should come out clean (mine was closer to 30 min).
  • Tip: While cakes are in the oven make your frosting and refrigerate frosting until ready to use.
  • Remove cakes form the oven and once they are cool enough to handle, remove from cake molds and let them cool completely to room temp before assembling and frosting your cake. Note: if the cakes are still warm, your frosting will melt.
  • In the bowl of a stand mixer fitted with the whisk attachment, mix the 2 sticks of butter with 2 cups powdered sugar on low speed or until combined (1 min) Don't start on high speed or you will be surrounded in a cloud of powdered sugar. Increase speed to high and beat until the mixture is pale and fluffy (2 min).
  • Add cream cheese 1-piece at a time and mix until combined. (I waited maybe 3 seconds in between each piece; it's one after another really. Once all of the cream cheese is incorporated. continue to beat 1 more minute.
  • Add 1 Tbsp vanilla and mix until combined (1 min). Refrigerate frosting until ready to use.
  • Place your first (fully cooled) cake layer down on a cake platter. Cover the top generously with frosting.Top with the second cake layer and frost the top and sides until smooth.
  • I pulled the frosting up all around the cake (If you don't have an icing knife, you can use a spoon) to make the "column" effect on the sides. I then used my WILTON 1M large frosting tip and a pastry bag to pipe the pattern all around the top rim of the cake.
  • Top the cake (staying inside the border) with toasted coarsely chopped walnuts and drizzle generously with honey. This cake is best eaten the same day, but refrigerate the cake if not serving right away and let it sit at least 1 hour at room temp before serving to give the frosting and cake a chance to soften up.

½ cup honey
1 (16 ounce) package confectioners' sugar
1 cup crushed pineapple, well drained
1 (8 ounce) package cream cheese, softened
½ cup chopped walnuts
¼ cup butter, softened
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 8-inch round cake pans.
  • Mix sugar, all-purpose flour, whole wheat flour, cinnamon, salt, and baking soda in a bowl.
  • Combine oil, eggs, carrots, and zucchini in a large bowl; beat with an electric mixer on low speed until well blended. Beat in honey. Stir in sugar mixture gradually; beat on medium speed until batter is smooth, about 3 minutes.
  • Divide batter evenly among prepared cake pans.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 30 minutes. Cool in the pans for 5 minutes. Invert onto a wire rack; allow to cool completely, about 25 minutes.
  • Combine confectioners' sugar, pineapple, cream cheese, walnuts, butter, and vanilla extract in a large bowl; beat until frosting is smooth. Spread over cooled cakes and stack.

This sheet pan cake with zucchini, carrots, and coconut is incredibly moist since it is soaked with freshly squeezed orange juice right after baking. Make sure you squeeze out most of the liquid of the vegetables, otherwise the cake will get too moist.

1 cup shredded coconut
6 teaspoons baking powder
1 pinch salt
1 ⅛ cups unsalted butter, at room temperature
1 ¼ cups white sugar
4 teaspoons vanilla sugar
6 eggs
2 ¼ cups finely grated zucchini, excess moisture squeezed out
2 ¼ cups finely grated carrots, excess moisture squeezed out
4 tablespoons milk, or more as needed
1 large orange, juiced

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a large, rimmed baking sheet with butter.
  • Combine flour, coconut, baking powder, and salt in a bowl.
  • Combine butter, sugar, and vanilla sugar in a large bowl; beat with an electric mixer until very smooth and creamy, about 5 minutes. Add eggs one at a time, and beating well after each addition. Fold in zucchini and carrots.
  • Stir in flour mixture alternately with milk until batter is well combined. Spread onto the prepared baking sheet.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes. Pour orange juice over warm cake immediately after removing from the oven, so it can soak up the liquid.

I started out with a basic carrot cake recipe and added my own touches. It's more than just a carrot cake. Sort of a carrot, zucchini, nut and pineapple cake.The batter will be very stiff when you combine everything.

1 1/2 cup(s) flour
1 1/2 cup(s) sugar
1 teaspoon(s) ground allspice
1 teaspoon(s) ground nutmeg
1 1/2 teaspoon(s) ground cinnamon

1 1/2 teaspoon(s) baking powder
1/4 teaspoon(s) salt
4 - eggs
1 cup(s) oil
1 - 2 teaspoon(s) vanilla
2 cup(s) grated carrots
1 cup(s) chopped or ground walnuts or pecans
1 can(s) crushed pineapple - small can
1/2 cup(s) grated zucchini (or more)
1 cup(s) raisins, optional

Steps:

  • Sift together: 1-1/2 cups flour 1-1/2 cups sugar 1 teaspoon ground allspice 1 teaspoon ground nutmeg (I like fresh ground nutmeg) 1-1/2 teaspoon ground cinnamon (I grind the cinnamon too.) 1 teaspoon baking soda 1 1/2 teaspoon baking powder 1/4 teaspoon salt
  • Mix together in another bowl: 4 eggs 1 cup oil 1 to 2 teaspoons vanilla (I use 2 teaspoons) 2 Tablespoons water if batter is dry
  • Combine all above. Add: 2 cups grated carrots 1 cup chopped or ground walnuts or pecans (I prefer ground walnuts) 1 small can crushed pineapple - undrained ½ cup of grated zucchini) 1 cup raisins - Optional
  • Mix well. Pour in greased/floured tube pan. Bake at 350 degrees for 1 hour. You may use one of the following, not both.
  • Optional Glaze: Melt in small saucepan and heat until just starting to simmer: • 1/8 lb. butter • 1/8 cup water • 1/2 cup granulated sugar Remove from heat and add 1/8 cup rum (optional) Brush glaze over top and sides of baked cake. Let seep in.
  • Optional Icing: • 4 oz cream cheese, softened • 1-1/2 cups confectioners' sugar • 1/4 cup (1/2 stick) butter • 1 teaspoon vanilla • Optional: 1 cup grated coconut, 1/4 cup chopped pecans Blend together first 4 ingredients: add coconut & nuts if desired. Mix. Spread evenly over top and sides of cake.

Steps:

  • In a large bowl, combine the first six ingredients. Gradually add the buttermilk, applesauce, carrots, zucchini and vanilla. In a small bowl, beat egg whites until soft peaks form; gradually beat in sugar, 1 tablespoon at a time, until stiff peaks form. Gently fold into batter., Pour into a 13x9-in. baking dish coated with cooking spray. Bake at 350° for 30-40 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. , For frosting, in a large bowl, beat the cream cheese, marshmallow creme, orange juice and vanilla just until combined. Frost cake.
