1 1/2 pounds small red or white-skinned potatoes (or a mixture)
1/8 cup good olive oil
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 tablespoons minced garlic (3 cloves)
2 tablespoons minced fresh rosemary leaves

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, garlic and rosemary; toss until the potatoes are well coated. Dump the potatoes on a baking sheet and spread out into 1 layer; roast in the oven for at least 1 hour, or until browned and crisp. Flip twice with a spatula during cooking to ensure even browning.
  • Remove the potatoes from the oven, season to taste, and serve.

4 large russet potatoes, scrubbed well
2 tablespoons minced garlic
1 tablespoon chopped fresh rosemary leaf, to taste
salt & freshly ground black pepper
extra virgin olive oil

Steps:

  • Cut each potato in 6-8 wedges, depending on size.
  • Place in a plastic bag, add garlic and spices, and shake to coat.
  • Drizzle with olive oil, and shake again.
  • Lightly oil a baking sheet, and transfer potatoes to sheet.
  • Drizzle oil and herbs remaining in bag over potatoes, keeping as much as possible on the potatoes.
  • Place in a preheated 400degF oven, turning as necessary, and bake until soft on the inside and browned and crisp on the outside.
  • If fixing with Breaded Lamb Chops (separate recipe), place in oven while it preheats and all of the time while the lamb chops bake.

Extra-virgin olive oil

Steps:

  • Preheat oven to 400 degrees. Place the potatoes and rosemary on a straight-sided baking sheet. Drizzle with olive oil and season with salt and pepper. Shake pan to coat potatoes. Roast for 30 to 40 minutes, until cooked through and slightly golden.

My dad's recipe. They make a great side dish that can be served with just about anything - my family loves them with bbqed steak and grilled veggie skewers, or fried perch and mushy peas. I love them because they're vegan and take no time to make!

4 potatoes (I like russet or Yukon gold)
2 tablespoons oil
1 tablespoon dried rosemary
salt and pepper, to taste

Steps:

  • Preheat oven to 425.
  • Scrub the potatoes. Peel, if you prefer skinless fries.
  • Slice potatoes lengthwise into strips. Place in large mixing bowl.
  • Pour oil over potatoes. Sprinkle rosemary, salt, and pepper over potatoes and toss to coat.
  • Line a baking sheet with tin foil and coat with non-stick cooking spray.
  • Arrange potatoes in single layer on sheet and bake for 10-12 minutes. Turn potatoes, and continue baking for another 10-12 minutes.

2 pounds small new potatoes (about 24), thoroughly washed and any damaged spots removed
3 tablespoons olive oil
1 tablespoon unsalted butter
1 cup water
1/4 teaspoon salt
2 tablespoons fresh rosemary leaves or 2 teaspoons dried

Steps:

  • Place the potatoes in one layer in a large saucepan and add the oil, butter, water and salt. Bring to a boil, cover and cook over high heat for about 8 minutes. Reduce the heat and continue cooking, covered, over low heat for about 10 minutes to brown the potatoes. Add the rosemary and cook, stirring occasionally, 2 to 3 minutes longer. Serve.
