Sirloin Tip Steak is juicy and flavorful with a crunchy crust on the outside. A simple balsamic and honey marinade turns this lean cut into a tender and melt-in-your mouth delicious meal.

2 tablespoons balsamic vinegar
3 tablespoon honey
1/3 cup olive oil
2 cloves garlic (minced)
1/3 cup low sodium soy sauce
1/2 teaspoon freshly ground black pepper
1 1/2 pounds sirloin tip steak

Steps:

  • In a medium bowl, whisk together the balsamic vinegar, honey, olive oil, garlic, soy sauce, and ground pepper.
  • Add the steak to the mixture and use a spoon to coat the meat evenly on all sides.
  • Cover with plastic wrap and marinate for 4 hours and up to overnight in the refrigerator.
  • Let the steak sit in the marinade at room temperature for 30 minutes before cooking. Remove the steak from the marinade and wipe off excess liquid with paper towels. This is to help better searing.
  • Preheat grill to 450°F (232°C). Grease the cooking grates with oil to prevent sticking.
  • Place the steak on the grill, cover and cook for 2-3 minutes with the lid closed. (Make sure the grates are hot enough before putting the steak on.)
  • Open the lid and flip the steak. Cover and grill the other side for 2-3 minutes.
  • Check doneness: Insert an instant meat thermometer into the thickest part of the steak. Remove the steak from the grill at 120°F (51°C) for rare, 125°F (52°C) for medium-rare, and 135°F (57°C) for medium. (The temperature will rise a few degrees while resting)
  • Rest the Meat: Remove your steak to a cutting board and let it rest covered with aluminum foil for 5 minutes. This allows the juices to redistribute through the meat.
  • Cut against the grain: Slice thinly against the grain and serve with your favorite sauce.

To fully enjoy beef sirloin tip steak cooked on the stove top or the grill make sure it is sliced thin and tenderized. Mix the marinade and let it spend some quality time soaking up the flavors before you sear it.

1 lb beef sirloin tip steak, thin sliced, blade tenderized*
3 tbsp soy sauce
1 tbsp brown sugar
5 tsp rice vinegar (or another mild vinegar)
3 tbsp vegetable oil**
2 cloves garlic, minced
3 green onions
salt and pepper, to taste for seasoning
toasted sesame seeds (optional), for garnish

Steps:

  • 1. Dissolve the brown sugar in the rice vinegar. Thinly slice the whites and light green parts of the onions (reserve the greens to use as garnish). Add them to the vinegar and sugar, add the garlic, soy sauce, vegetable oil and mix everything. 2. In a non-reactive container or plastic bag thoroughly coat the sirloin tip steak with marinade. Place in the refrigerator and let marinate for 6 hrs or up to 24 hrs (with this beef cut longer is better). 3. When ready to cook, bring the steak to room temperature. Scrape off the marinade and discard, lightly season with salt and pepper. 4. Heat a grilling pan or cast iron skillet over medium-high for about 2-3 minutes. Add a bit of cooking oil and sear the thin sliced sirloin tip steaks for about 1-2 minutes per side, depending on how large their surface. Alternatively, heat your grill to medium-high and cook for 1-2 minutes on each side. 5. Rest the seared steaks loosely covered with foil to keep warm, about 4-5 minutes. Cut against the grain for a more tender bite of beef. Serve spinkled with sesame seeds and the reserved green onion (sliced small and on the diagonal).

One 1 1/2-pound sirloin steak
Kosher salt and freshly ground pepper
2 tablespoons vegetable oil
Poblano Pesto, recipe follows
2 poblano peppers
1/2 cup grated Parmesan
1/4 cup fresh cilantro leaves, roughly chopped
2 cloves garlic, coarsely chopped
1 tablespoon chili powder
1/2 cup vegetable oil
Kosher salt

Steps:

  • Season the steak liberally with salt and pepper, and allow to sit at room temperature for 15 to 30 minutes. Meanwhile, heat a grill pan over medium-high heat. Brush the steak with vegetable oil and cook on grill pan, undisturbed for 3 minutes. Flip the steak over and cook until the steak is 130 degrees F for medium rare, about 3 minutes more. Remove to a cutting board, and allow to rest a full 5 minutes before slicing. Cut the steak with a sharp knife against the grain into thin slices. Fan slices out onto a serving platter and top with the Poblano Pesto.
  • Char the poblano peppers on top of a gas burner, on a grill, or under the broiler) until all of the sides are blackened. Place in a bowl covered tightly with plastic wrap, allowing the steam to help loosen the skin. With your fingers or a spoon, scrape and discard the blackened skin then remove the seeds and core. Coarsely chop the poblanos, and place into a mini food processor. Add the Parmesan, cilantro, garlic, chili powder and oil and process until well combined, but not totally smooth. Taste and season with salt.

3 lb sirloin tip steak, sliced thinly
11/2 Tbsp steak seasoning
2 Tbsp cumin
2 Tbsp granulated garlic
2 Tbsp chopped chive
11/2 Tbsp paprika
2-3 Tbsp extra virgin olive oil
8 mini sweet peppers,sliced into strips
2 large onion sliced into rings
1 can(s) sliced mushrooms, drained reserve liquid
1/3 c all purpose flour
1/2 c liquid from sliced mushrooms, or more water if needed
4 c minute maid rice, cooked according to package

Steps:

  • 1. Freeze Sirloin Tip steaks partially so it can be sliced easily into thin slices. I like to slice steaks on the bias.
  • 2. These are the main spices. plus the addition of paprika.
  • 3. Slice the peppers and onions into desired size. Set aside until needed.
  • 4. Next combine all of the spices in a small bowl then blend together and sprinkle liberally over sliced steak. Allow to sit at room temperature for at least 45 minutes to allow the flavors to blend together.
  • 5. In the meantime Cook rice according to package directions, and set aside till needed after meat has finished cooking.
  • 6. Add olive oil to large skillet, and heat over medium high heat, add enough of the thin sliced meat to cover bottom of skillet, and brown on all sides. Do not over crowd skillet, remove to a large platter. Repeat as needed until all of the beef is cooked. Set aside till needed.
  • 7. Now add the sliced veggies to the skillet and cook until crisp tender. Add additional olive oil if needed.
  • 8. Add meat back into skillet with veggies and continue to cook together. Add in the drained sliced mushrooms, stir to blend together.
  • 9. Continue cooking meat mixture over low heat, & make a slurry of the reserved mushroom liquid combined with the flour in a small bowl, then pour over the beef mixture, and allow to simmer over low heat. Add in additional beef broth or water if needed to prevent meat from sticking to skillet. adding just enough liquid to make a thin gravy. Serve over cooked rice or noodles. Garnish with chopped green onion tops or chive. ENJOY
