This simple and easy recipe for Mesquite Grilled Chicken Marinade is the perfect recipe for summer. Great for smoky-flavored chicken breasts or thighs.

1/4 cup Olive Oil
1/4 cup Apple Cider Vinegar
1/4 cup Brown Sugar
2 tsp Salt
1 tsp Pepper
1 tsp Garlic Powder
1 tsp Mesquite-flavored Liquid Smoke
4 dashes Worcestershire Sauce
4 Chicken Breasts or Thighs

Steps:

  • In a small bowl, whisk together the olive oil, apple cider vinegar, brown sugar, salt, pepper, garlic powder, liquid smoke, and Worcestershire sauce.
  • Place chicken in a large Ziploc bag. Pour marinade over the top of chicken. Seal and marinade a minimum 2 hours or overnight.
  • Once done marinating, grill the chicken until cooked, flipping halfway through. (Be careful. Since there is quite a bit of sugar in the marinade, watch closely so the chicken does not burn.)

This is my own creation, I hope you enjoy it as much as my family does... never any leftovers.. and it makes a bunch!

1 chicken
2 jar(s) bertolli alfredo sauce
1 c sour cream
1 stick butter
1 green bell pepper=chopped
2 jalepeno peppers=chopped
1 large onion=chopped
1 pkg stuffing mix=dry
2 can(s) mushroom pieces
3/4 pkg penne pasta=cooked
1 pkg shredded pepper jack cheese
ground pepper to taste

Steps:

  • 1. I cook the whole chicken overnight in a crock pot on low, in the morning I let it cool, then seperate and bone it.. I use 1/2 the chicken in the casserole.. and save 1/2 for another time.
  • 2. Place water on to boil for the penne pasta.. place chicken in large mixing bowl. melt butter in skillet and add onion and peppers and saute till tender.
  • 3. mix all with the chicken except use only 1/2 the cheese, save 1/2 for top. place mixture in 9x13 glass casserole dish, and top with cheese bake in 350 degree oven for 30 min. ENJOY!

This Mesquite Chicken Bake brings all the sweet smokey goodness of Mesquite smoked BBQ into a quick and easy family dinner.

2 lbs chicken breast (3-4 chicken breasts)
1 tbsp mesquite seasoning
1/2 cup BBQ sauce ((mesquite flavored optional))
1/4 cup finely diced onion
1/2 cup cheddar cheese
2 slices crispy crumbled bacon (about 2 oz)

Steps:

  • Preheat the oven to 400˚F.
  • Season each side of the chicken with the mesquite seasoning and lay flat in a large baking dish.
  • Drizzle BBQ sauce over the top of each chicken breast and sprinkle with diced onion.
  • Bake uncovered for 20 minutes, then remove the dish, add cheese and bacon to the top and return to oven for 5-10 minute or until the cheese is melted and the chicken is done (internal temperature of 165˚F.)

Even your pickiest of eaters will love these Baked Creamy Chicken Taquitos from Six Sisters. And you can feel good about dinner because they are baked instead of fried.

4 ounces cream cheese
⅓ cup green salsa
1 Tablespoon lime juice
½ teaspoon cumin
1 teaspoon chili powder
½ teaspoon onion powder
¼ teaspoon garlic powder
1 teaspoon cilantro (dried)
2 green onions (sliced)
3 boneless chicken breasts (cooked and shredded)
1 cup Pepper Jack Cheese (shredded)
20 flour tortillas (6 inch)
salt (to taste)
8 ounces Creamy Cilantro salad dressing (for dipping)

Steps:

  • Heat oven to 425 degrees
  • Line a baking sheet with foil and lightly coat with cooking spray.
  • Heat cream cheese in the microwave for about 20-30 seconds so that it is soft and easy to stir.
  • Add green salsa, lime juice, cumin, chili powder, onion powder and garlic powder. Stir to combine.
  • Then add cilantro and green onions.
  • Add chicken and Pepper Jack cheese and combine well.
  • Place 2-3 Tablespoons of chicken mixture on the lower third of a tortilla, keeping it about 1/2 inch from the edges and roll it up as tight as you can. Place seam side down on the baking sheet.
  • Lay all of the filled taquitos on the baking sheet and make sure they are not touching each other. Spray the tops lightly with cooking spray and sprinkle some salt on top.
  • Place pan in oven and bake for 15-20 minutes or until crisp and the ends start to get golden brown.
  • Dip in creamy cilantro dressing if desired.
