1 3/4 1 3/4 CUPS
INGREDIENTS
1 1 1 cup mayonnaise
3 3 3 tbsp. brandy
3 3 3 tbsp. ketchup
2 2 2 tbsp. sour cream
2 2 2 tsp. Dijon mustard
1 Zest and juice of 1 lemon
to salt and freshly ground black pepper, to taste
INSTRUCTIONS
Combine ingredients in a bowl; stir until smooth.

CLARIFIED BUTTER WITH GARLIC AND CHIVES
1 ABOUT 1 CUP

INGREDIENTS
2 2 2 cloves crushed garlic
2 2 2 small fresh red Thai chiles, sliced in half

TARTAR SAUCE

INGREDIENTS
1 1 1 cup mayonnaise
1/3 1/3 1/3 cup capers, drained and finely chopped
1 1 1 small shallot, finely chopped
1 1 1 tbsp. finely chopped parsley
10 10 10 cornichons, finely chopped
1 Zest and juice of 1 lemon
to salt and freshly ground black pepper, to taste

Stir ingredients in a bowl until combined.

DIABLO SAUCE
2 ABOUT 2 CUPS
INGREDIENTS
2 2 2 tbsp. olive oil
2 2 2 tbsp. unsalted butter
6 6 6 cloves garlic, roughly chopped
1 1 1 serrano chile, stemmed, seeded and roughly chopped
1/2 1/2 1/2 a small yellow onion, roughly chopped
1 1 1 tbsp. dark red chile powder
2 2 2 tsp. packed brown sugar
1 1 1 tsp. smoked paprika
1 1 can 1 (16-oz.) can crushed tomatoes
to salt and freshly ground black pepper, to taste
1 1 1 tbsp. fresh lemon juice
INSTRUCTIONS

Steps:

  • Bring sliced lemon, salt, and 3 cups water to a boil in a large pot fitted with a pasta strainer of steamer insert. Add crab clusters of legs; cook, covered until meat is heated through, about 8 minutes. If crab is frozen it may take a little longer, 10-12 minutes. Uncover; transfer crab to a cutting board or paper-lined surface. Serve with dipping sauces.

I ended up getting some snow crab legs on sale at the market. I wanted something a little different from plain steamed, boiled, or grilled crab legs, so I ended up throwing a few things together to make this awesome crab leg dish. Enjoy! This would be great with shrimp as well.

1 pound Snow Crab clusters, thawed if necessary
¼ cup butter
1 clove garlic, minced
1 ½ teaspoons dried parsley
⅛ teaspoon salt
¼ teaspoon fresh-ground black pepper

Steps:

  • Cut a slit, length-wise, into the shell of each piece of crab.
  • Melt the butter in a large skillet over medium heat; cook the garlic in the butter until translucent; stir in the parsley, salt, and pepper. Continue to heat mixture until bubbling. Add the crab legs; toss to coat; allow to simmer in the butter mixture until completely heated, 5 to 6 minutes.

  • In a medium saucepan melt 4 Tbsp butter and add 2 minced garlic cloves, 1/4 tsp salt, and 1/8 tsp black pepper. Stir 30 seconds until fragrant then remove from heat. Off the heat, squeeze in 1/2 Tbsp lemon juice. Divide between ramekins to serve.
  • Place a trivet in a 6 qt Instant Pot and add 1 cup water. Add 3-4 clusters of fresh or frozen crab legs per batch folding the legs to fit more in (thawed are easier to fit than frozen).
  • Place wire rack or basket at the bottom of a large stockpot. Add 1 cup of water. Place crab legs over the rack (as many as your pot will accommodate). Bring the water to a boil then cover and steam cook until fragrant and steaming hot (5-10 minutes). Frozen crab legs will take longer, thawed crab legs cook faster).
  • Using heavy-duty aluminum foil, create a foil pack with 4 clusters of crab legs. Using a long sheet of foil with the crab legs in the center, bring the two ends together and fold them together twice. Fold the other two ends together twice to seal the foil packet. Do not add water since it will steam cook with the natural moisture from the crab legs.
