FRIED GREEN PLANTAINS (TOSTONES DE PLATANO VERDE)

Oil, for frying
4 ripe plantains, peeled
Salt
Garlic Mojo, recipe follows
8 garlic cloves
1 teaspoon salt
1/2 cup sour orange juice or 1/4 cup sweet orange juice
plus 1/8 cup fresh lime or lemon juice

Steps:

  • Preheat oil in a fryer or Dutch oven to 365 degrees F.
  • Peel the plantains and cut into 1-inch pieces. Place into preheated oil and fry for 5 minutes or until they begin to brown. Drain them on a paper-towel lines plate. Flatten them using a Tostonera or the bottom of a metal can and fry again at 385 degrees F for approximately 3 minutes. Drain again and sprinkle with salt and Garlic Mojo. For softer fried plantains, soak for a few minutes in salted water after the first fry, drain and fry again.
  • Chop up the garlic very thinly or crush using a mortar and pestle or food processor with the salt to form a thick paste. In a mixing bowl, combine the garlic paste and juice, and let the mixture sit at room temperature for 30 minutes or longer.

¼ cup peanut oil for frying
2 tablespoons butter
3 yellow plantains (very ripe), peeled and cut in 1-inch-thick slices
3 tablespoons brown sugar
¼ teaspoon salt

Steps:

  • Heat peanut oil and butter in a large skillet over medium-high heat until the butter begins to sizzle. Gently toss plantain slices with brown sugar, then place into hot oil. Fry until the plantains begin to turn golden brown, then turn over, and continue frying until they have caramelized, about 2 minutes per side.
  • Drain plantains on a paper towel-lined plate and sprinkle with salt before serving.

Steps:

  • Pre-heat the oven to 350 degrees and line the baking sheet with parchment paper.
  • Cut the edges, peel, and slice the plantain thinly using a knife or mandolin. In a bowl, combine sliced plantains, salt, oil and mix well.
  • Arrange the sliced plantains in a single layer and bake in a pre-heated 350 degrees oven for 25 to 30 minutes until they start to brown the edges and turns crispy. Turn plantains to the other side after 10 minutes.
  • Allow the plantains to cool and serve.

  • Now for the platano,first cut the ends of the platanos.
  • Then cut a slice down the middle of the platano and peel.
  • Ok then cut the platano in oval slices and fry in oil.cook until golden brown.
