Garlic and Vinegar Glazed Pork Chops with Scallions image

Glaze stir-fried bell peppers and slices of pork with a garlicky soy and cider vinegar sauce.

Number Of Ingredients 11

1/2 cup soy sauce
1/2 cup cider vinegar
2 tablespoons brown sugar or molasses
1 tablespoon cornstarch
3 garlic cloves, finely grated
2 scallions, chopped (white and green parts)
2 tablespoons vegetable oil
3 red, yellow or orange bell peppers, or a mix, sliced
Kosher salt and freshly ground black pepper
Four 3/4-inch-thick boneless pork chops, cut into 1/4-inch-thick slices
2 cups cooked white rice, for serving

Steps:

  • Mix the soy sauce, vinegar, brown sugar, cornstarch, garlic and scallions together in a small bowl and set aside.
  • Heat the oil in a large nonstick skillet over medium-high heat. Once hot, add the bell peppers, 1/2 teaspoon salt and a few grinds of pepper. Cook, stirring constantly, until crisp-tender, about 3 minutes. Add the pork and cook, stirring constantly, 1 minute. Add the reserved soy sauce mixture and boil until the pork is cooked through and glazed, 1 to 2 minutes. Serve with rice.

8-oz. boneless pork loin chops,
1/2 inches thick
Kosher salt and
coarse black pepper
3 tbsp. EVOO
1 small bunch scallions or
2-3 spring onions, whites
and greens finely chopped
4 cloves garlic, chopped
4 sprigs rosemary, stripped
2 tbsp. fresh thyme leaves
1 lemon, zested, then cut
into wedges
1 tsp. fennel seeds

Steps:

  • Preheat an outdoor grill or indoor grill pan to medium, about 325°. 1. Place the pork chops in a shallow dish; season with salt and pepper and dress with EVOO. On a chopping board, finely chop and combine the scallions (or spring onions), garlic, rosemary, thyme, lemon zest and fennel seeds; slather evenly over the chops. 2. Grill the chops for 12 to 15 minutes, turning occasionally. Let the chops rest, then slice and douse with lemon juice. Serve with corn or broccolini.

4 tablespoons olive oil, or more to taste
4 tablespoons soy sauce
4 tablespoons fresh lemon juice
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh rosemary
2 tablespoons chopped fresh thyme
1 tablespoon coriander seeds, ground
1 clove garlic, minced
1 lemon, zested
4 (6 ounce) bone-in pork chops (1 inch thick)

Steps:

  • Whisk olive oil, soy sauce, lemon juice, parsley, rosemary, thyme, ground coriander, garlic, and lemon zest together in a shallow dish. Add pork chops and toss to evenly coat. Cover the dish with plastic wrap and marinate in the refrigerator for at least 1 hour, turning chops halfway through.
  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Remove chops from the marinade and gently shake off excess. Discard the remaining marinade.
  • Place chops on the preheated grill and reduce heat to medium. Cook until no longer pink in the center, about 8 minutes per side. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). Let rest for 5 minutes before serving.

This is a very tasty way to serve your pork chops, I love grilling and this is just another recipe that makes it so easy to cook in the summer!!

Number Of Ingredients 10

6 center-cut pork loin chops with bone (1 1/4 inch thickness)
5 garlic cloves (2 cut in thin slices, and 3 cloves minced)
1 cup white wine, Riesling or 1 cup Chardonnay wine
2 tablespoons olive oil
1 teaspoon white sugar
2 tablespoons fresh oregano leaves, roughly chopped
2 teaspoons fresh thyme leaves
2 tablespoons fresh sage, roughly chopped
2 tablespoons fresh rosemary, roughly chopped
salt and pepper

Steps:

  • Place the chops on a cutting board, using a small sharp knife, cut small slits into the sides of the chop. Insert a garlic slice into each chop. Place the chops in a large sealable bag. In a blender, combine the wine, oil, minced garlic and sugar. Blend on high speed. Add the fresh herbs, salt and pepper and continue to blend until smooth. Pour this marinade over the chops and ensure that the chops are coated evenly. Marinate in the refrigerator for 4 hours.
  • Once chops are almost done marinating, preheat barbecue to medium high 375F, for direct grilling. Brush the grill with oil to prevent sticking. Remove the chops from the marinade, drizzle with oil and season with salt and pepper. Place the pork chops directly on the grill and cook for 4-5 minutes per side. Half way through cooking give the chops a quarter turn to create a diamond char pattern. Flip the chops and continue to cook for another 4-5 minutes or until desired doneness. Remove from grill; allow to rest under foil for 15 minutes.
