STEAK N GRAVY
Try this one on for size if you love shrooms, otherwise omit them. This is my husband's favorite (and we eat game at least 3 nights a week). Serve with rice or mashed potatoes, and green beans. Now THIS is good eatin'!

- Cut all fat and gristle off the meat, and pound each steak out with a meat tenderizer until they are thin but not tearing. In a shallow bowl, combine flour, bay leaf, salt and pepper. Dredge steaks in the flour mixture until evenly coated.
- Heat 1 tablespoon olive oil in a large heavy skillet over medium heat. Saute onions until soft and translucent. Stir in mushrooms and garlic, and cook until tender. Remove from skillet and set aside. Heat remaining oil, and fry each steak for 2 minutes on each side, or until golden brown. Return onion mixture to skillet. Stir in gravy and milk. Reduce heat, cover, and simmer for 30 to 40 minutes. Stir occasionally to prevent sticking.

EASY AND TASTY SALISBURY STEAK WITH GRAVY
Salisbury steak is a hearty meal that just sticks to your ribs. This recipe is easy to prepare and tastes great. Adding the patties to the slow cooker allows the meat to absorb the flavors from the gravy. Pure comfort food.

- 1. Mix ground beef, onion, garlic, parsley, salt, pepper, bread crumbs, and milk. Mix well with your hands. Form into patties. Cook them on the stove in a little olive oil and until just about done. Then place in Crock Pot.
- 2. In the pan you just cooked patties, add gravy, Worcestershire sauce, pepper, and ketchup. Stir to get all that good flavor off the bottom of the pan. Just enough to heat and mix then add DRAINED mushrooms and mix.
- 3. Then pour over patties in the Crock Pot and cook on low for three hours.
SMOTHERED ROUND STEAK WITH GRAVY
This is one of the first recipes I learned to cook when I was a teenager. Mom taught me to cook over the phone, after I got home from school every day. She was working and I didn't think about it at the time, but later I realized my calls were reassuring to her, since she knew I was safely home. Even when Mom told me how to do it, I nearly always tweaked it! Most of the time, it turned out okay. Mashed potatoes and biscuits are perfect with this, along with a vegetable.

- Sprinkle each side of the round steak pieces with salt and pepper, rubbing seasoning into the meat.
- Combine 1/2 cup flour and garlic powder in a 1-gallon resealable bag. Add steak pieces, seal bag, and shake to evenly coat all the pieces.
- Heat 1/3 cup of oil in a large skillet over medium heat until hot. Add seasoned and floured steak pieces to the skillet in a single layer in batches and cook until browned, 4 to 5 minutes per side. Remove from the skillet and keep warm. Repeat with remaining pieces, adding more oil, if necessary, until all are browned.
- Add onion slices to the same skillet and stir, coating onions with pan drippings, until onion slices have separated and are just beginning to soften, about 2 minutes. Move onions to one side of the skillet and return browned steak pieces to the skillet. Spread steak evenly in the skillet and place onions on top.
- Stir together water, beef base, and Worcestershire sauce in a microwave-safe container. Microwave on high for 1 minute, stir, and pour into the skillet. Cover, reduce heat to a simmer, and cook until the steak is tender, about 45 minutes.
- Remove the steak from the skillet and add reserved 1/2 cup of flour to the pan drippings. Increase heat to medium; stir briskly and cook until bubbly, 2 to 3 minutes.
- Stir in milk and keep stirring until gravy bubbles again. Return steak, onions, and any accumulated juices to the skillet, cover, and reduce heat to a simmer. Simmer, stirring occasionally, until flavors are well combined, about 10 minutes.

- Pat the steaks dry, then season them generously with salt and pepper.
- Heat the olive oil in a skillet over medium-high heat. Cook for 3-4 minutes on each side, or until deeply browned.
- Transfer the steaks to a plate to rest.
- In a measuring cup, whisk together the beef stock, Worcestershire sauce, and flour until smooth. Pour into the pan that you cooked the steaks in.
- Bring the gravy to a simmer over medium heat, scraping up any browned bits from the bottom of the pan. Simmer for 3-5 minutes, or until the gravy is glossy and thick enough to coat the back of a spoon. Season to taste with salt and pepper.
- Return the steaks to the pan and turn them to coat with gravy. Cook 1-2 minutes to rewarm, if desired.

GRANNY'S STEAK AND GRAVY

- Sprinkle both sides of the steak with the salt, cayenne, and black pepper. Rub seasoning into meat. In a large skillet, heat oil over high heat until hot. Add steak and cook on high until browned, turning steak every 3 to 4 minutes. (Lower heat if necessary.) The steak should be well browned on both sides. Remove steak and add onions and bell peppers to pan. Cook until wilted. Place steak on top of onions and bell peppers and add 1/4 cup of water. Lower heat to medium, cover and simmer for 1 1/2 hours, turning steak every 20 minutes. (Note: when lifting lid of pot, let the water from the lid drain into the pot.) When steak is tender, remove steak and place on a platter. Mix cornstarch with 1/4 cup of water and add to the pot. Stir to make a gravy. Serve gravy over hot rice with steak.
COUNTRY-STYLE STEAK & GRAVY
A true Southern classic! This is all about pleasure and taste, no worries about fat content, etc. A repeated request when both my kids are home. Nothing fancy, just great eating. Mashed potatoes are a must with this. If my mom is here, we have to double the gravy and make biscuits, but if she isn't here, I leave the biscuits off.....just an overload for me! We usually add a side of roasted green beans or asparagus. Put your treadmill on high the next day...you will need the extra exercise....but I've found it is worth it to see the enjoyment on my kids' faces. Freshly ground black pepper, and freshly ground sea salt make all the difference. Prep time does not include marinating time (2 hours). The recipe as posted is perfect for me, and I don't add any other seasonings. However, if you feel you have to ....add some garlic powder for extra flavor. Personally I don't think it needs it....tastes like Grandma's the way it is posted, and that is perfect to me.

- Combine 1/2 tbsp sea salt and 1/2 tbsp white vinegar with a cup of water in a bowl or pan large enough to hold your meat. Stir until salt is dissolved. Add the cubed steak, and add additional water to cover the meat. Let this rest in the refrigerator for 2 hours. This will flavor the meat and make it tender.
- Combine 1 1/2 cups flour and 1 tbsp freshly ground black pepper; stir well. Remove the meat from the marinade, draining well. Dredge the meat in the flour mixture.
- Pour oil into a heavy skillet, to a depth of 1/2 inches. Heat to 375 degrees. Add the meat and fry a few pieces at a time, 6 to 7 minutes on each side or until lightly browned. Remove from the skillet and drain well on paper towels. Keep warm.
- Drain the pan drippings until you only have 2 tbsp of oil in the skillet. Place the skillet over low heat. Add 2 tbsp flour, stirring until smooth. Cook for 1 minute, stirring constantly. Gradually add the milk and cook over medium heat, stirring constantly, until the mixture is thickened and bubbly. Stir in 1/4 tsp salt and 1/2 tsp black pepper. Serve the meat with the gravy. Enjoy.

- Pound into steak (you'll have some left).
- Cut steak into 6 pieces.
- Heat oil in large Dutch oven.
- Brown steaks on both sides.
- Remove from skillet.
- Add flour left from pounding, and cook for 2 minutes.

- Combine Salisbury steak ingredients, except the olive oil, in a large bowl until thoroughly mixed, then divide into 8 evenly shaped patties. Set aside.
- In a large pan, melt the butter over medium heat, then add the onion and cook for 3-4 minutes or until lightly softened. Stir in the flour until a paste forms, then add the Worchestershire sauce and stir to combine. Slowly whisk in the beef stock and bring mixture to a low boil over medium heat. Cook until thickened, about 10 minutes, season with salt and pepper as desired, then reduce heat to the lowest setting while cooking the steaks.
- In a second large non-stick pan over medium/medium-high heat, add 1 tablespoon olive oil. - Heat a large oven-proof skillet over medium heat. Add the cooking oil. Brown the steaks on both sides and set aside.
- Pour off most of the oil, leaving about 1/3 of a cup. Add 1/3 C of flour to the oil and stir over medium/low heat until light brown. Stir continuously so it doesn't burn. Add onion and mushrooms. Cook and stir for about a minute.
