Swordfish With Lemon Dill Wine Sauce image

This is a very easy yet quite elegant dish to prepare when having company or you just want to spoil someone.

Number Of Ingredients 7

4 swordfish steaks, about 1/2 inch thick
6 sprigs fresh dill, minced
1/2 cup unsalted butter
1 lemon, juice of
1/4 cup dry white wine
fresh ground pepper
1 tablespoon cornstarch

Steps:

  • Season swordfish with pepper and broil for 5 mins each side. Remove and keep warm.
  • In a medium skillet over medium heat, melt butter. Add lemon juice and white wine and dill. Season with pepper to taste.
  • remove some of the liquid and let cool. Add the cornstarch to cooled liquid and mix together until smooth. Add this back into skillet and simmer, stirring until slightly thickened.
  • Remove swordfish steaks and place on plates. Spoon sauce over each steak and garnish with dill sprigs.

Swordfish with Creamy Lemon Dill Wine Sauce image

4 units swordfish steaks
1 units pepper
0.5 cups unsalted butter
1 units lemon
0.25 cups dry white wine
6 units dill
4 ounces cream cheese

Steps:

  • Season swordfish steaks with pepper to taste and broil 5 minutes on each side. Remove and keep warm.
  • In a medium skillet over medium heat melt butter. Add lemon juice, white wine, and dill. Add cream cheese a little at a time stirring constantly until smooth and creamy.
  • Place swordfish steaks on plates and spoon sauce over each steak. Garnish with dill sprigs and serve.

1/2 cup mayonnaise
2 tablespoons fresh lemon juice
1 small garlic clove, pressed
1/2 teaspoon dried basil, crumbled
1/2 teaspoon dried thyme, crumbled
1/2 teaspoon dried tarragon, crumbled
1/2 teaspoon dried dillweed
2 6-ounce swordfish steaks
1/4 cup dry white wine

Steps:

  • Combine mayonnaise, lemon juice, garlic, basil, thyme, tarragon and dill in a small bowl. Season with salt and pepper. (Herb sauce can be prepared 2 days ahead. Cover and refrigerate.)
  • Butter 8-inch square baking dish. Spread each side of swordfish steaks with 1 tablespoon herb sauce. Place in prepared dish and chill 30 minutes.
  • Preheat oven to 400°F. Pour wine over swordfish. Bake until fish is just cooked through, about 17 minutes. Transfer to plates. Serve, passing remaining herb sauce separately.

This one is pretty simple and pretty yummy. I can't get enough of any kind of dill sauce so I make it quite frequently.

1/3 cup Italian dressing
2 (1/2 lb) swordfish steaks (about 1 lb) or 2 shark steaks, 1-inch thick (about 1 lb)
1/2 cup dry white wine
1/8 teaspoon pepper
1 tablespoon snipped fresh dill or 1 teaspoon dried dill weed
1 tablespoon dijon-style mustard
1/2 cup whipping cream or 1/2 cup heavy cream

Steps:

  • In large skillet, heat Italian dressing and cook fish over medium heat, turning once, 8 minutes or until fish flakes.
  • Remove to serving platter and keep warm.
  • Into skillet, add wine, then pepper, dill and mustard.
  • Bring to a boil, then simmer, stirring occasionally, 8 minutes.
  • Stir in cream and heat 1 minute or until thickened.
  • Serve over fish.
  • Garnish, if desired, with baby vegetables.
