CHICKEN FRICASSéE WITH SHOESTRING POTATOES



Chicken Fricassée with Shoestring Potatoes image

Shredded chicken, quickly heated in a blended, creamy mixture of heavy cream, cream cheese, and corn, topped with cheese and shoestring potatoes, and then baked.

Number Of Ingredients 8

2.2 lbs chicken thighs (or 1 kg)
1 cup heavy whipping cream
1 can whole corn kernel (drained, 15.25 oz or 432 g)
1 package cream cheese (softened, 8 oz)
1/2 to 3/4 sliced green olives
Salt and ground black pepper to taste
2 cups shredded mozzarella or other melting cheese of your choice
Store-bought shoestring potatoes (enough to form a single layer)

Steps:

  • Preheat to 350 degrees F.
  • Boil chicken in either chicken stock or water with salt and ground black pepper until fully cooked. Remove from the liquid, let cool enough to handle, and roughly shred. Place into a medium pot and reserve.
  • Blend heavy cream, corn, and cream cheese in a blender until obtaining a thick, creamy, homogeneous mixture. You may need to stop blender more than once and stir. Pour over the chicken, add the sliced olives, salt and pepper to taste, and cook mixture on medium heat, stirring, for 2-4 minutes.
  • Place mixture into a medium baking dish, top evenly with the shredded cheese, and bake for about 20 minutes. Remove from the oven and top with the shoestring potatoes. Serve by itself, with white rice, or a fresh salad. Enjoy!

FRICASSEE OF SQUID AND POTATOES

1 1/2 pounds squid, or a firm-fleshed fish like salmon or catfish
4 tablespoons olive oil
2 onions (about 8 ounces), peeled and sliced thin
1 1/2 pounds tiny potatoes (the size of large cherry tomatoes), peeled
4 large cloves garlic, peeled and chopped (1 tablespoon)
1 teaspoons herbes de Provence or Italian seasoning
1 pound cherry tomatoes, cleaned
1/2 cup oil-cured black olive pieces (about 3 ounces)
1/2 cup dry white wine
3/4 teaspoon salt
2 tablespoons coarsely chopped parsley

Steps:

  • Be sure that the plastic-like pen, and all bones and cartilage, have been removed from the body of the squid and that the beak has been removed from the tentacles. If the black surface skin has not already been removed, pull it off and discard. Rinse the squid body and tentacles well under cool water and cut them into 1 1/2-inch pieces. Set aside.
  • Heat the olive oil in a saucepan until hot but not smoking. Add the onion and saute it about 2 minutes. Add the potatoes, cover, and reduce the heat to low. Cook about 15 minutes, until the potatoes are tender. The recipe can be prepared to this point a few hours before serving and set aside in the saucepan.
  • About 10 to 15 minutes before serving, reheat the potatoes and add the squid, garlic, herbes de Provence, tomatoes, olives, wine and salt. Cover, bring to a boil, and cook for 3 to 4 minutes, removing the lid long enough to stir the mixture occasionally, just until the squid are tender when pierced with a fork.
  • Transfer the contents of the saucepan to a serving dish, sprinkle with the parsley and serve.

6 medium potatoes, peeled & sliced 1/4''
1/2 lb. salted pork fat
2 medium onions, coarsely chopped
1/4 cup sugar
salt & pepper to taste
1/2 cup butter (approximate)
1/4 cup vegetable oil (approximate)

Steps:

  • Soak potatoe slices in water. Slice pork fat and heat on low in a heavy, large skillet, until reduced to crispy slices. Leave rendered fat in pan, but remove crispy slices. Add onions to pan and sauté on medium-high heat until just transluscent. Add potatoes and coat in fat. Add a small amount of water, salt, pepper and sugar. Add more water until it almost covers the potatoes - it should NEVER cover the potoates, but almost. Bring to a boil and then reduce the heat to simmer until just cooked through but not mushy, stirring occasionally until much of the water has evaporated.

1 tbsp groundnut oil
4 lean smoked back bacon rashers, chopped and rind removed
6 skinless chicken breast fillets
700g new potato , thickly sliced
250g asparagus spear , trimmed and diagonally sliced (keep tips whole)
225ml dry fruity cider (or ½ a can)
1 tbsp cornflour , blended with a little water
250ml carton Soya Dream
2 tbsp chopped flatleaf parsley

Steps:

  • Heat the oil in a large frying pan, then fry the bacon for 5 mins on a medium heat until golden. Remove with a slotted spoon and set aside. Add the chicken to the pan, then lightly fry for 4-5 mins to brown on both sides (you may need to brown the chicken in two batches if your pan is not large enough).
  • Meanwhile, cook the potatoes in a pan of salted boiling water for 10 mins or until tender. Cook the asparagus in a steamer over the potatoes for 6-8 mins or microwave in a covered dish with 2 tbsp water for 4-5 mins.
  • Pour the cider over the chicken, bring to the boil then reduce heat. Put the bacon back in the pan and simmer for 10-15 mins until the chicken is cooked through. Stir in the cornflour paste until lightly thickened, then add the Soya Dream and season. Stir in the drained vegetables and sprinkle with chopped parsley before serving.
