4 quarts water
2 lb fresh asparagus spears, trimmed (about 35 spears per lb)
2 packages (5.2 oz each) Boursin® cheese with garlic and herbs, softened
1 cup heavy whipping cream
3/4 cup shredded fresh Parmesan cheese
2 medium plum (Roma) tomatoes, seeded and chopped
1 teaspoon fresh thyme leaves

Steps:

  • Heat oven to 400°F.
  • To blanch asparagus, heat 4 quarts water (add 1 tablespoon salt, if desired) in 6-quart Dutch oven to boiling. Add asparagus; cook 3 to 4 minutes or until asparagus is crisp-tender. Remove asparagus, and immediately immerse in bowl of ice cold water. Let stand 5 minutes. Drain well; pat dry with paper towels.
  • Place asparagus spears in ungreased 13x9-inch (3-quart) baking dish.
  • In medium bowl, mix Boursin™ cheese and whipping cream with whisk or fork until blended. Stir in Parmesan cheese; spread over asparagus. Top with tomatoes.
  • Bake 15 to 20 minutes or until heated through. Sprinkle with thyme.

1/4 pound prosciutto, thinly sliced
2 pounds asparagus, tough ends trimmed, rinsed and patted dry
Salt
Freshly ground black pepper
3 tablespoons extra-virgin olive oil
1 1/2 tablespoons minced garlic
2 teaspoons fresh lemon juice
1/4 cup pine nuts
3 hard-boiled eggs, sliced

Steps:

  • Preheat the oven to 350 degrees F.
  • Place asparagus in a baking dish and season with salt and pepper.
  • Heat a small saute pan over medium heat. Add olive oil and garlic and then lemon juice and pine nuts. Toast until nuts begin to brown slightly. Remove from heat and drizzle over asparagus. Roast in the oven until just cooked. Serve warm or at room temperature with eggs and prosciutto.

1 tablespoon olive oil
4 garlic cloves, minced
1 tablespoon parsley, chopped
black pepper, to taste

Steps:

  • Break tough ends off asparagus.
  • Place in Ziploc bag.
  • Cook garlic and parsley in oil for 3 minutes.
  • Pour garlic oil over asparagus.
  • Toss to coat.
  • Lay coated asparagus stalks in baking tray, making sure they don't overlap.
  • Sprinkle with salt and pepper.
  • Bake in 400º oven for 5-8 minutes, or until asparagus is tender.
  • NOTES: For extra flavor and a classy presentation, wrap 4-5 stalks together with a slice of uncooked bacon, securing with a toothpick.
  • Repeat with remaining stalks.
  • Spoon any left over garlic oil over bunches.
  • Bake additional 5 minutes.

2 tablespoons butter
