SUPER EASY BREAKFAST SAUSAGE LOAF
I was searching for a quick and easy breakfast for a group of picky youngsters and came up with my own super easy breakfast sausage loaf from ingredients normally found in any fridge. This can be as basic as dinner rolls/sausage/eggs/cheese...or jazz it up a bit with onions and green peppers. This can be put together the night before, frozen or made on the fly.

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Spray a 9x5-inch loaf pan with cooking spray.
- Heat a large skillet over medium-high heat and stir in the sausage and brown sugar. Cook and stir until the meat is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Transfer sausage to a bowl; wipe the skillet clean.
- Melt the butter in the clean skillet over low heat. In a bowl, whisk together the eggs, milk, salt, and black pepper. Pour the eggs into the skillet. Allow the eggs to cook undisturbed until they begin to set, then gently stir the eggs until the curds are separate and set but not dry, 5 to 7 minutes.
- Roll out the crescent roll dough, and line the bottom and sides of the prepared pan with 3/4 of the dough. Layer the sausage, scrambled eggs, and Colby-Monterey Jack cheese into the pan, then top with the remaining 1/4 of dough. Pinch the corners and sides of the dough together.
- Bake in the preheated oven until golden brown, 25 to 30 minutes.

GRILLED APPLE AND SWISS CHEESE SANDWICH
My mother taught me this recipe, and it has become one of my favorite quick meals. I find that Granny Smith apples work best, as well as a crunchy seed bread.

- Preheat a skillet over medium heat. Lightly brush one side of each slice of bread with the olive oil. Place 1 slice of bread, olive oil side down into the skillet, and arrange the apple slices evenly over the top. Sprinkle the Swiss cheese over the apple, then top with the remaining slice of bread, olive oil-side up. Cook until the bread is golden brown, then flip the sandwich over, and cook until the other side is golden brown and the cheese has melted, 1 to 2 more minutes.

BREAKFAST LOAF
Put the loaf together the night before and wrap it in aluminum foil, then you can just take it from the fridge in the morning and bake it. You may require a little longer baking time if you do it this way

- Preheat oven to 350 degrees.
- Slice the top off of the bread loaf; set aside for lid.
- Remove interior of the loaf, leaving 1" on all sides and bottom.
- Layer the following inside the loaf: bacon, red pepper, eggs, sprinkled with Parmesan cheese, black olives, tomato, cheese, and mushrooms.
- Replace the lid and wrap the entire loaf in aluminum foil.
- Place on a cookie sheet.
- Bake about 30 minutes or until heated throughout.
- Cut into 8 wedges.

- Cut bread in half crosswise. Make diagonal cuts, 1 in. apart, through bread but not through bottom. Combine all remaining ingredients. Spread half the butter mixture between bread slices. For last 5 minutes, remove foil covering bread to allow it to brown.

I saw this recipe on a TV show on Amish cooking in the 1980s, and I've adapted it to suit our tastes. The Swiss cheese and bacon make it very satisfying on cold fall and winter evenings.

- In a skillet, cook bacon over medium heat for 2 minutes on each side or until cooked but not crisp. Drain on a paper towel; set aside. , In a bowl, combine the egg, crackers, 4 tablespoons cheese, onion, garlic, salt, sage and pepper. Crumble beef over mixture and mix well. Shape into a loaf and place in a greased 5-3/4x3x2-in. loaf pan. Place bacon pieces over top. Bake, uncovered, at 350° for 30 minutes. Sprinkle with remaining cheese; bake 2-4 minutes longer or until a thermometer reads 160° and cheese is melted.

- Preheat the oven to 375*F. Butter a 9-inch X 5-inch loaf tin, and line with baking parchment. Set aside.

- Combine all of the dry ingredients in a large bowl and stir in the diced cheese. Make a well in the centre.
- Cream the butter together with the soft light brown sugar. Beat in the eggs, one at a time, then gradually beat in the milk and vanilla. Add all at once to the dry ingredients and stir together with a wooden spoon just to combine, without over-mixing. The batter should be a bit lumpy rather than smooth.
