Salmon Sweet Potato Fish Cakes with Herbs image

These delicious sweet potato salmon fish cakes are made with fresh herbs for added flavour and moisture. They contain a handful of ingredients and, with a little preparation, can be ready in minutes!

Provided by Monika Dabrowski

Categories     Dinner

Time 52m

Number Of Ingredients 8

8.82 ounces cooked salmon
14.82 ounces sweet potato (just under 1lb (peeled weight), cubed)
3 tablespoons chives (finely chopped)
2 tablespoons parsley (leaves only, finely chopped)
1½ tablespoons dill (leaves only, finely chopped)
Fine sea salt and white pepper to taste
2 tablespoons breadcrumbs
2 tablespoons olive oil for frying

Steps:

  • Unless using leftover salmon place raw salmon fillet on top of a baking sheet lined with non-stick baking paper, season and drizzle with oil or mist with cooking spray. Bake in the centre of the oven at 375 F/ 190 C/ gas mark 5 for about 15 minutes or until fully cooked, taking care not to overcook it. Remove from the oven, flake the salmon (discard the skin if present) and set aside to cool before combining with the rest of the ingredients.
  • Peel, cube and boil the sweet potatoes in salted water for about 10 minutes, until tender but not mushy (do not overcook them). Remove from the heat, drain thoroughly and mash coarsely using a fork (the mixture shouldn't be smooth). Set aside to cool.
  • Combine the flaked salmon with the sweet potato, herbs and seasoning. Stir thoroughly making sure the mixture retains its coarse texture. Adjust the seasoning if needed.
  • Form small balls (they should be firm), place in the breadcrumbs and press down a little to form fish cakes (do this gently so the fish cakes do not end up being too flat).
  • In a large non-stick pan heat up 1 tablespoon of oil and fry the salmon fish cakes over a medium heat until lightly browned (approx. 2 minutes). Gently turn them over, add another tablespoon of oil and fry for 2 more minutes.
  • Remove from the pan and serve immediately.

SALMON AND SWEET POTATO CAKES WITH AGRODOLCE RELISH AND ARUGULA

Salmon and Sweet Potato Cakes with Agrodolce Relish and Arugula image

Provided by Rachael Ray : Food Network

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 21

1 large sweet potato, peeled and cut into small chunks
Salt
3 (6-ounce) pieces salmon fillet
1 cup white wine
1 bay leaf
Freshly ground black pepper
1 tablespoon seafood seasoning, a palmful (recommended: Old Bay)
1 1/2 cups cracker crumbs (recommended: Saltines)
1 egg, lightly beaten
1 tablespoon finely chopped thyme leaves
1 tablespoon hot sauce
2 scallions, finely chopped
3 to 4 tablespoons finely chopped fresh dill
3 tablespoons extra-virgin olive oil
1 small red onion, thinly sliced
2 small ribs celery, finely chopped
2 cloves garlic, chopped
1 pint grape or cherry tomatoes, halved or quartered
2 tablespoons red wine vinegar
1 rounded teaspoon sugar
4 cups arugula or baby arugula leaves

Steps:

  • Put the potatoes in a small pot, cover with water, and bring to a boil over high heat. Salt the water and cook until tender, 10 to 12 minutes. Drain, then return the potatoes to the pot and mash.
  • Meanwhile, put the salmon fillets in a skillet with the wine, bay leaf, and enough water to come up to the top of the fillets, but do not cover. Bring to a boil over medium heat, then reduce heat to a simmer and poach until opaque about 8 to 10 minutes. Remove the skin and transfer the salmon to a bowl. Flake the fish with a fork and season with salt and pepper, to taste. Add the mashed sweet potatoes to the bowl along with the seafood seasoning, half of the cracker crumbs, the egg, thyme, hot sauce, scallions, and dill. Mix to combine. The fish cake mixture needs to be just firm enough to mold into cakes. If its too wet, add a few more crumbs.
  • Heat 2 skillets, side by side, 1 with 2 tablespoons extra-virgin olive oil (2 turns of the pan) over medium heat, the other with 1 tablespoon extra-virgin olive oil (a turn of the pan) over medium-high heat. Form the salmon mixture into 4 (4-inch) patties, coat in the remaining crumbs, and then add them to the first pan. Cook the fish cakes until light golden, about 2 to 3 minutes on each side. Add the red onions, celery, and garlic to the second pan and cook 3 to 4 minutes. Add the tomatoes, season with salt and pepper, to taste, and cook 2 minutes more. Stir the vinegar into the sauce, then sprinkle the sugar over top and toss to coat the tomatoes. And arugula.
  • Arrange the fish cakes on individual serving plates alongside the arugula. Top with the agrodolce relish and serve.

POTATO'N SALMON CAKES

Potato'n Salmon Cakes image

Quick easy recipe to make after a hard day's work. For the mashed potatoes use plain cooked potatoes mashed with no added ingredients. Just cook extra potatoes the night before and take out what you will need for this recipe. If you want a little spice add 1/2 tsp hot pepper flakes I like a bit of Tartar sauce and a green salad along side or a couple of steamed vegetables. Great summer dish. This recipe goes a long way from one small can of salmon. I would like to stress use leftover cooked potatoes not left over mashed potatoes that already have got a lot of extra ingredients in them!

  • 2. Poke a few holes in sweet potatoes, then wrap in foil. Bake for 45 minutes to 1 hour until soft. Once complete, unwrap them and place in the fridge/freezer to quickly cool down to at least room temperature. Once cool remove the potato skins and discard. Place the flesh in a bowl and mash gently.
  • 3. Slice the salmon filet into 2 pieces, one should be about 25% of the whole piece and the other 75%. For the 75% portion, finely chop and mince the salmon using the sharp knife. Chop until it's sticky. For the remaining 25%, chop it into small chunks about 1/4-inch in size.
  • 4. Add the salmon to the bowl with the mashed sweet potatoes, along with the remaining ingredients (except the oil). Mix well. If the mixture is too wet and not firm enough to stick together, add tablespoons of chickpea panko until it gets firm.

  • Place sweet potato cubes into the bowl of a food processor with the blade attached. Pulse in short intervals until the sweet potatoes look very grated.
  • Next add in drained wild salmon, egg, panko, cumin, garlic powder and cayenne into the bowl of the food processor with the sweet potato. Generously season with salt and pepper. Pulse again until all of the ingredients are combined.
  • Unplug the food processor and remove the blade. Use your hands to form four even patties about ½ inch thick. You’ll need to compact them with your hands so they stick together well. Place on a plate.
  • Add coconut oil or olive oil to a nonstick skillet or griddle and place over medium heat. Add each patty to the skillet and cook about 2-4 minutes, until golden brown underneath, then carefully flip patty and cook another 2-4 minutes. Remove from heat and transfer to buns, lettuce wraps, or on top of a salad.
