1/2 medium yellow onion
1/2 pound Yukon gold potato, (about 1 large)
1/2 pound sweet potato, (about 1 medium)
2 tablespoons all-purpose flour
1 teaspoon kosher salt
Pinch cayenne
1 large egg, lightly beaten
Vegetable oil
4 teaspoons light sour cream
4 teaspoons beet or regular horseradish
2 to 3 sprigs flat-leaf parsley

Steps:

  • Preheat the oven to 200 degrees F. Put a wire rack on a baking sheet and place in the oven.
  • Grate the onion on a box grater into a large bowl. Grate both potatoes into the same bowl, grating down the length of the potato to get long strands. Toss the potatoes with the onions as you work to keep them from discoloring. Put potato mixture in a clean dish towel and wring out excess liquid. Toss the latke mixture with the flour, salt, and cayenne. Stir in the egg.
  • Heat a 1/4-inch oil in a large cast iron or other heavy skillet over medium heat. Working in batches, spoon about 1/4 cup of the latke mixture into the skillet, pressing lightly to form 3-inch pancakes. Take care not to overcrowd the pan. Cook, turning once, until just golden, about 2 minutes per side. Transfer to the rack in the oven while you cook the remaining batter.
  • Serve the latkes topped with a small dollop of sour cream and horseradish. Garnish with a parsley leaf. Serve immediately.

8 ounces jumbo lump crab meat (about 1 cup)
2 tablespoons chopped cilantro, plus more for garnish
1/8 teaspoon crushed red pepper flakes
Zest and juice of 1/2 a small lemon
Kosher salt and freshly ground black pepper
1 small Fresno chile, seeded, halved lengthwise and thinly sliced, optional
Pinch of cayenne pepper, optional
Vegetable oil, for frying
1 small sweet potato (about 8 ounces), peeled, grated and squeezed dry
1 1/2 cups frozen shredded hash brown potatoes (about 6 ounces), thawed and squeezed dry
1 large egg
1/4 cup chickpea flour
2 tablespoons unsweetened applesauce
1/2 teaspoon ground cumin
1/2 teaspoon garam masala
1/2 teaspoon turmeric

Steps:

  • Combine the crab meat, cilantro, crushed red pepper, lemon zest, lemon juice, a pinch of salt, a couple grinds of black pepper and the Fresno chiles and cayenne pepper if using in a medium bowl. Gently stir together until just combined.
  • Heat 1/4-inch oil in a large high-sided saute pan between medium and medium-high heat until shimmering (about 325 degrees F on a deep-fry thermometer).
  • While the oil heats up, line a medium bowl with a dish towel and add the sweet potato and hash brown potatoes. Squeeze dry and then add to a large bowl. Add the egg, chickpea flour, applesauce, cumin, garam masala, turmeric, 1 1/2 teaspoons salt and a couple grinds of black pepper. Use your hands to combine the mixture well. Divide the mixture into 4 equal portions and form into thin patties, about 3 1/2-inches around and a little thicker than 1/4-inch. Transfer the latkes on to a large plate or baking sheet as you form them.
  • One by one, scoop up a latke with your hand, patting and reshaping if needed, and then carefully add to the hot oil. Once the latkes are in the oil, fry until golden brown on the first side, 5 to 6 minutes. Then use a second spatula to help flip the latkes over and cook until golden brown and cooked through, 5 to 6 minutes. Adjust the heat as needed to maintain a vigorous bubbling at all times. Transfer the latkes to a wire rack set over a baking sheet.
  • Serve the latkes topped with the crab salad and garnish with cilantro.

WARM CRAB AND POTATO SALAD

3 tablespoons olive oil
6 new potatoes, roasted at 375 degrees for 25 to 30 minutes, and quartered
2 green onions, thinly sliced
1 1/2 pounds lump crabmeat, picked over
1 jalapeno, finely diced
1/4 cup chopped cilantro leaves
Salt and freshly ground pepper
Carrot-Habanero Broth, recipe follows
3 cups fresh carrot juice (about 2 pounds, juiced)
1 teaspoon whole fennel seeds
1 teaspoon whole coriander seeds
1 teaspoon whole cumin seeds
1/2 habanero chile, chopped
Salt

Steps:

  • Heat oil in a large saute pan over medium-high heat. Add potatoes, onions, crab, and jalapeno to the pan and cook until just warmed through. Add the cilantro and season with salt and pepper.
  • Ladle about 1/4 cup of the Carrot-Habanero Broth into a shallow bowl. Mound 1/4 of the crab salad in the center of the bowl. Repeat with 4 other bowls.
  • Place all ingredients in a small nonreactive saucepan and cook until reduced by half. Strain.

2 packages (8 ounces each) imitation crabmeat
1 cup finely chopped onion
1/2 to 3/4 teaspoon salt

1/4 teaspoon dill weed
3 cups mayonnaise

Steps:

  • Place potatoes in a saucepan and cover with water; cover and bring to a boil over medium-high heat. Cook for 15-20 minutes or until tender. Drain and cool., In a large bowl, combine the potatoes, crab, onion, salt, pepper and dill. Add mayonnaise; toss to coat. Refrigerate for 2-3 hours before serving.

Steps:

  • In a large bowl, combine the first 4 ingredients. Stir in eggs until blended. Add potatoes; toss to coat., Heat 1/4 cup oil in a large nonstick skillet over medium heat. Drop batter by 1/4 cupfuls into oil; press lightly to flatten. Fry in batches until golden brown on both sides, using remaining oil as needed. Drain on paper towels. If desired, top with minced chives and serve with sour cream and applesauce.

1 large sweet potato, peeled and grated
½ onion, grated
2 eggs
¼ teaspoon black pepper
2 teaspoons olive oil, or more if needed
½ teaspoon salt
1 cup applesauce
1 cup plain nonfat yogurt

Steps:

  • Preheat oven to 200 degrees F (95 degrees C). Line a baking sheet with paper towels.
  • Fill a bowl with lightly-salted water. Rinse the grated sweet potato in the water, and drain into a sieve. Pat the grated sweet potato dry with a cloth or paper towels, then place into a bowl. Squeeze excess moisture from the grated onion, and place into the bowl with the sweet potato. Stir the eggs and pepper into the mixture until well combined.
  • Heat the olive oil in a nonstick skillet over medium heat until it shimmers, and spoon about 1 heaping tablespoon of the potato mixture per patty into the hot oil. Flatten the patties with a fork, and fry until golden brown and crisp on the bottom, 5 to 8 minutes. Flip and cook on the other side, sprinkle with salt, then set the cooked patties aside on the prepared baking sheet in the preheated oven while you finish cooking the latkes. Stir the potato mixture before cooking each batch of patties. Serve hot with applesauce and yogurt.

4 Maris Piper potatoes, peeled
1 medium onion
2 large eggs
2 tbsp plain flour or matzoh meal
vegetable, peanut or canola oil, for frying
soured cream
smoked salmon
finely chopped chives
apple sauce

Steps:

  • Coarsley grate the potatoes and onion into a large bowl, or use a food processor with a coarse grating blade. Leave the mixture to rest for about 15 mins so the liquid releases from the onions and potatoes. Carefully drain off the liquid for about 30 mins until the mixture is dry, then put in a cheese cloth and squeeze out the remaining liquid.
  • Add the eggs, flour, 1 tsp sea salt and pepper, and mix well. Pour the oil into the pan so that it is 2-3cm deep. Set over a medium heat for a few minutes until it ripples.
  • Carefully spoon in the mixture to the size you want - 2 tbsp for large latkes or 1 tbsp for small. Fry them in batches to avoid overcrowding the pan, and cook on each side until browned for 2 mins. Remove to a plate lined with kitchen paper, then season with a sprinkling of salt. Serve with the soured cream and smoked salmon, finished with a sprinkling of chives, or just apple sauce - both are traditional.
