This Sweet Potato & Kale Hash with Eggs is an excellent way to get in some veggies at breakfast! A one-dish meal ready in 30 minutes!

2 Tablespoons olive oil
3 cups peeled & cubed sweet potato
1 cup diced onion
1 teaspoon Paprika
1/4 teaspoon salt
2 cloves garlic, minced
1 cup chopped mushrooms
3 cups chopped kale
4 Davidson's Safest Choice™ pasteurized eggs
season to taste

Steps:

  • Heat a cast iron skillet with the olive oil over medium-high heat. Add the sweet potato, onion, paprika and salt. Cook for about 10 minutes, stirring frequently, or until the potatoes start to soften.
  • Add in the garlic, mushrooms, and kale. Stir to combine and cook until the kale starts to wilt, about 3 minutes.
  • Reduce heat to low. Create 4 little pockets of space for the eggs. Crack 1 pasteurized egg into each pocket. Cover and cook until the egg whites are cooked and the yolk is slightly runny, approximately 5 minutes.
  • Remove from heat, season to taste if needed, and enjoy!

Corned beef hash is one of my all-time-favorite diner breakfasts. This lightened-up version ditches the meat, swaps the white potato for sweet, and introduces a few fistfuls of healthy kale. Lunch is a dairy-free risotto that's as indulgent as those made with butter and parmesan, while dinner is an aromatic, filling, and flavorful vegetable chili that I like to serve it with extra jalapenos.

2 1/2 tablespoons coconut oil
1 medium sweet potato, peeled and cut into 1/4-inch dice
Kosher salt and freshly ground black pepper
4 kale leaves and tender stems, thinly sliced (about 2 cups)
1/2 red bell pepper, cut into 1/4-inch dice
1 scallion, finely sliced
1/2 teaspoon ground cumin
1/2 teaspoon paprika
2 large eggs

Steps:

  • Set a large skillet over medium-high heat. Add 2 tablespoons of the coconut oil, the sweet potato, and a pinch of salt and cook until the potatoes begin to soften and brown, about 5 minutes. Add the kale, bell pepper, scallion, cumin, paprika, a pinch of salt, and a twist of black pepper and cook until the kale wilts and softens, about 5 minutes. Taste, adding salt and pepper as needed.
  • Meanwhile, in a small nonstick skillet, heat the remaining 1/2 tablespoon coconut oil over medium heat. When the pan is hot, carefully crack the eggs into the pan. Cover and cook until the whites are set but the yolks are still runny, about 3 minutes. Season with a pinch of salt and a twist of black pepper.
  • Top the hash with the eggs and serve.

3 sweet potatoes (about 2 1/2 pounds)
3 tablespoons olive oil
3 cloves garlic, chopped
1 onion, diced
1 red bell pepper, diced
Kosher salt and ground black pepper
4 cups baby spinach
1 tablespoon butter
4 eggs
8 fresh basil leaves, torn or chopped
1/4 cup grated Parmesan

Steps:

  • Preheat the oven to 400 degrees F.
  • Place the sweet potatoes on a baking sheet, puncture with a fork, and roast until tender but still slightly underdone, about 30 minutes. Remove from the oven and let cool. Peel and cut into 1-inch cubes; set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the garlic, onions and peppers and cook until soft, about 5 minutes. Add the diced sweet potatoes and some salt and pepper; continue to cook, stirring occasionally, until the potatoes are cooked through, 10 to 15 minutes. Turn the heat to low and stir in the spinach.
  • Melt the butter in a large nonstick skillet over medium-high heat and fry the eggs until the whites are set and the yolks are still runny. Spoon the hash onto four plates and top each serving with a fried egg. Garnish with basil and Parmesan.

  • Heat 4 tablespoons of extra virgin olive oil in a large skillet over medium heat. Once hot, add in the finely diced sweet potatoes, finely sliced shallot, cumin, paprika, red pepper flakes, and season very generously with Kosher salt and freshly ground black pepper. You could also add in 1 finely diced red bell pepper if you have one (I didn’t have one, but I will probably add this next time).
  • Cook mixture, stirring occasionally, until sweet potatoes are cooked through and tender, about 15-18 minutes.
  • If using frozen kale (recommended, it’s so quick and easy!), heat it according to package directions, then wrap kale in a couple paper towels and wring out any excess moisture. If using fresh kale, remove ribs and stems and roughly chop leaves.
  • Add kale into the skillet approximately during the last 5 minutes of cooking. Taste the hash and season with additional salt or pepper if needed.
