3/4 cup evaporated milk
2 cups canned cream-style corn
2 cups fresh or frozen corn kernels
2 Tbsp unsalted butter, melted
3 Tbsp dark brown sugar
3 Tbsp cornstarch, mixed with 2 Tbsp. bourbon
1/2 tsp ground nutmeg
1/4 tsp salt
1/8 tsp ground white pepper

Steps:

  • 1. Preheat oven to 350F. Butter an 8 inch square baking dish.
  • 2. Whisk together the eggs and the milk. Stir in the remaining ingredients. Pour the mixture into the baking dish.
  • 3. Bake 45-48 min or until lightly browned. Serve warm.

2 large eggs
3/4 cup evaporated milk (I have used whipping cream)
2 cups cream-style corn
2 cups frozen corn kernels
2 tablespoons unsalted butter, melted
3 tablespoons dark brown sugar
3 tablespoons cornstarch, mixed
3 tablespoons Bourbon (rum goes well too)
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 350°F Butter an eight inch square baking dish.
  • Whisk together the eggs and milk. Stir in the remaining ingredients.
  • Pour the mixture into the baking dish. Bake 45 to 50 minutes or until lightly browned. Serve warm.

18 ounces or 2 1/2 cups canned sweet corn, drained
14 ounces, or 1 3/4 cups canned creamed corn
1 1/3 cups milk
1 1/3 cups heavy cream
Generous 1/3 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt

Steps:

  • Preheat oven to 375 degrees F.
  • Butter a glass 12 by 10-inch baking dish and set aside
  • In a large bowl, whisk eggs together. Using a spoon, stir in sweet corn, creamed corn, milk, cream, flour, baking powder, and salt. Pour mixture into butteed baking dish. Cook for 1 hour until it is golden brown and slightly puffed up on the top. Serve immediately.

1/2 cup sugar
3 tablespoons all-purpose flour
3 large eggs
1 cup whole milk
1/4 cup butter, melted
1/2 teaspoon salt
1/2 teaspoon pepper
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (14-3/4 ounces) cream-style corn

Steps:

  • In a large bowl, combine sugar and flour. Whisk in the eggs, milk, butter, salt and pepper. Stir in the corn and cream-style corn. , Pour into a greased 1-1/2-qt. baking dish. Bake, uncovered, at 350° for 45-50 minutes or until a knife inserted in the center comes out clean.

1/4 teaspoon white pepper
1/4 teaspoon salt

Steps:

  • Preheat oven to 350°. 1.Spray an 8″ square baking dish with cooking spray. 2.In a small bowl, mix the cornstarch and bourbon. 3.In a large bowl, whisk the eggs and milk until combined. Whisk in the cornstarch and bourbon mixture. Add the rest of the ingredients and stir with a spoon. Pour into prepared baking dish. Bake 45-48 minutes or until lightly browned and no longer jiggly in the center. Serve warm. Note: I usually have to bake it longer, especially if making a double-batch.

  • Pour the batter into the prepared pan and bake for 45 to 50 minutes or until lightly golden and no longer wiggly in the center. Allow to sit 10 minutes before serving. Serve warm with the candied Jalapeños.
  • Add the sugar, honey, apple cider vinegar and a pinch of salt to a small sauce pan. Bring to a boil over high heat, stirring often to dissolve the sugar. Add the jalapeños and cook 1 minute longer, remove from the heat. Allow the mixture to cool and then store in a glass jar for up to 1 week in the fridge.
