ALMOND PORK CHOPS WITH HONEY MUSTARD



Almond Pork Chops with Honey Mustard image

I love how crunchy almonds and sweet mustard sauce jazz up this tender pork dish. Usually I double the recipe. One chop is never enough for my gang of grown children and grandkids. -Lily Julow, Lawrenceville, Georgia

1/2 cup smoked almonds
1/2 cup dry bread crumbs
2 large eggs
1/3 cup all-purpose flour
1/4 teaspoon salt
1/8 teaspoon pepper
4 boneless pork loin chops (1 inch thick and 6 ounces each)
2 tablespoons olive oil
2 tablespoons butter
1/2 cup reduced-fat mayonnaise
1/4 cup honey
2 tablespoons Dijon mustard

Steps:

  • In a food processor, process the almonds until finely chopped. Transfer to a shallow bowl; add bread crumbs. In another bowl, beat the eggs. In a large bowl, combine flour, salt and pepper. Add 1 pork chop at a time and toss to coat. Dip pork chop in eggs, then coat with almond mixture. , Preheat oven to 400°. In a large skillet over medium heat, cook chops in oil and butter until lightly browned, 2-3 minutes on each side. Transfer to a rimmed baking sheet; bake, uncovered, until a thermometer inserted in pork reads 145°, 10-15 minutes. Meanwhile, in a small bowl, combine the mayonnaise, honey and mustard. Serve with pork chops.

PORK AMANDINE WITH ALMOND MILK SAUCE

Tender green beans are topped with an almond milk sauce and toasted almonds and served alongside juicy seared pork cutlets.

Number Of Ingredients 10

2 tablespoons olive oil
8 pork cutlets (each about 1/3-inch thick)
Kosher salt and freshly ground black pepper
2 tablespoons unsalted butter
1 cup sliced almonds
12 ounces haricot verts, trimmed
1 cup almond milk
1/2 cup sour cream
1 tablespoon Worcestershire sauce
2 tablespoons chopped fresh parsley, plus more, for serving

Steps:

  • Heat 1 tablespoon of the oil in a large skillet over medium-high heat. Sprinkle the pork with 1 teaspoon salt and 1/4 teaspoon pepper. Add 4 of the pork cutlets and brown, 1 to 2 minutes. Flip and continue cooking, about 1 minute more. Remove the pork from the skillet and transfer to a plate. Add the remaining 1 tablespoon oil and repeat with the remaining 4 cutlets. Transfer to the plate and set aside.
  • Add the butter and almonds to the skillet, stirring until both are browned but not burnt. Remove the almonds to a separate plate.
  • Add the haricot verts, almond milk, sour cream, Worcestershire and 1/2 teaspoon salt to the skillet. Cook until the beans are tender and cooked through and the mixture is starting to thicken, about 6 minutes. Stir in the parsley and reserved almonds.
  • Divide the haricot verts evenly among 4 plates and spoon some sauce over them. Top with 2 cutlets per plate and sprinkle with parsley.

This pork recipe is a staple in our house. It is easy to prepare and is quite tasty! I like to serve this dish with steamed broccoli with hollandaise sauce.

1 pound pork tenderloin, trimmed and cut into 1/2-inch thick medallions
1 teaspoon dried tarragon, crumbled
1 teaspoon garlic powder
4 tablespoons butter, divided
1 tablespoon all-purpose flour
¾ cup white wine
1 teaspoon chicken bouillon granules
1 tablespoon Dijon mustard
¼ cup heavy cream
½ cup toasted slivered almonds
¼ cup sliced green onions

Steps:

  • With a meat mallet, pound the tenderloin slices to 1/4-inch thick. Combine tarragon and garlic powder in a small bowl, and sprinkle the mixture over the cutlets. Rub the seasoning into the meat, cover, and refrigerate for 1 hour to blend the flavors.
  • Melt 1 tablespoon of butter in a skillet over medium heat until the foam disappears. Brown half of the tenderloin pieces in the butter, 3 to 4 minutes per side. Do not crowd pan. Repeat with the remainder of the pork pieces and 1 more tablespoon of butter. Set the pork pieces aside on a warm platter.
  • Melt remaining 2 tablespoons of butter in the skillet over medium heat; stir in the flour until smooth and the mixture starts to fry. Gradually whisk in wine, stirring constantly until the flour mixture and wine are blended; stir in chicken bouillon granules and Dijon mustard. Allow the sauce to boil for 1 minute; whisk in the cream. Bring the mixture almost to the boiling point, and stir in the almonds and green onions. Pour sauce over the pork, and serve.

Serve over your favorite noodles or rice. This uses a small pork tenderloin, which roasts quickly. The original recipe said to shred the meat, but I found that since it is not cooked slowly, the meat doesn't shred as easily as, say, pork shoulder. so I just cut it inot bite-size pieces. If you can't find almond butter, chunky peanut butter is a good substitute.

1/2 teaspoon canola oil
1/2 lb pork tenderloin, trimmed of fat
1/4 teaspoon salt, divided
1/4 teaspoon ground black pepper
1/2 cup almond butter
4 tablespoons water
5 tablespoons low sodium soy sauce
4 tablespoons rice vinegar
1 tablespoon fresh ginger, peeled and minced
3 teaspoons chili-garlic sauce
1 cup green onion, thinly sliced
1/2 cup of fresh mint, finely chopped

Steps:

  • Preheat oven to 425°F.
  • Drizzle oil in an ovenproof skillet. Sprinkle pork with 1/8 teaspoon salt and pepper; place pork in pan. Bake at 425° for 10 minutes. Turn pork over, and bake an additional 10 minutes or until a thermometer registers 155°F Place pork on a cutting board; let stand 10 minutes. Cut pork into bite-sized pieces.
  • Combine almond butter, water, remaining salt, soy sauce, vinegar, ginger and chili garlic sauce.
  • Place your favorite cooked hot noodles (or rice) in 4 bowls; top evenly with sauce, pork, onions, and mint.

I got this out of a yahoo article supposed to be like only 300 calories. I want to try it, and figured this is the perfect place to put it for safe keeping. Also try the honey mustard dipping sauce

1 cup coarse dry breadcrumbs, preferably whole-wheat (see Note)
1/2 cup sliced almonds
1 teaspoon garlic powder
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground pepper
1 large egg white, beaten
1 lb pork tenderloin, trimmed and cut diagonally into 1/2-inch-thick slices

Steps:

  • Preheat oven to 425°F Set a wire rack on a baking sheet and coat it with cooking spray.
  • 2. Place breadcrumbs, almonds, garlic powder, salt and pepper in a food processor; pulse until the almonds are coarsely chopped. Transfer the mixture to a shallow dish.
  • 3. Place egg white in another shallow dish. Dip both sides of each pork slice in egg white, then evenly coat with the almond mixture. (Discard any remaining egg white and almond mixture.) Place the pork on the prepared rack and coat on both sides with cooking spray.
  • 4. Bake the pork until golden brown and no longer pink in the center, 16 to 18 minutes.

  • Begin by heating a large skillet to medium-medium high heat. Coat pan with 2 tbsp avocado oil or olive oil.
  • Prepare your pork chops: pulse almonds in a food processor or blender for 5-10 seconds (ensure that it doesn't become almond flour and over pulsed). Set aside almonds in a shallow dish. Now whisk together the egg whites and set aside in a separate bowl.
  • Place pork chops in the egg white mixture first, then move it to the almond mixture completely covering all sides of your pork chop.
  • Place inside your skillet and cook 4-6 minutes per side (this will depend on the thickness of your pork chops). Do not overcook!! They can be the slightest pink on the inside, but internal temperature should be 165 degrees. Remove from the pan and set aside on a plate. Return your pan back to the burner. Turn the burner to medium.
