WINTER ROOT MASH WITH BUTTERY CRUMBS



Winter root mash with buttery crumbs image

A little bit of this winter root mash goes a long way - make it a day ahead and cut the stress on Christmas Day

650g parsnips , cut into even chunks
650g swede , cut into same size chunks as the parsnips
142ml tub soured cream
1 rounded tbsp hot horseradish (English Provender is good)
2 tbsp fresh thyme leaves
butter , for greasing
50g butter
1 small onion , finely chopped
50g fresh white breadcrumbs (from about 4 slices)
a small handful thyme leaves, plus extra for scattering
25g parmesan , coarsely grated

Steps:

  • In a large pan of boiling salted water, cook the parsnips and swede, covered, for about 20 minutes until tender. Drain well, then mash them together using a masher or food processor until reasonably smooth but still with a bit of texture. Stir in the soured cream, horseradish and thyme and season with salt and pepper.
  • Spoon into a buttered shallow ovenproof dish and put to one side.
  • Make the topping. Melt the butter in a frying pan and cook the onion for 5-6 minutes, until gorgeously golden. Mix in the breadcrumbs and stir to brown and crisp a little. Season with salt and pepper and add the thyme. Take the pan off the heat. Spoon the mixture casually over the top of the mash. Scatter over the parmesan. (Can be made ahead to this point and kept covered in the fridge for up to a day. Or can be frozen for up to a month.)
  • Bake with the turkey (190C/gas 5/ fan 170C) for 35-40 minutes if doing from cold, 25-30 minutes if not, or 11⁄2-13⁄4 hours from frozen (put foil on top, and remove it for the last 10 minutes) - until golden and crisp on top. Serve scattered with a few more thyme sprigs and leaves.

A mixed mash of favourite winter root veg with a crispy herb topping, which can be chilled or frozen ahead

1 medium swede (about 600g), peeled and cut into chunks
500g parsnips , peeled and cut into chunks
25g butter , plus a little extra
4 tbsp golden syrup
200g fresh breadcrumbs
2 eggs , lightly beaten
1 tbsp olive oil
2 thyme sprigs, leaves stripped

Steps:

  • Bring a large pan of water to the boil, and add the swede chunks. Boil for 3 mins, then add the parsnips and boil the lot for 12 mins more or until tender. Drain well, then tip both together into a pan or bowl and mash well with the butter. Stir in the golden syrup, three-quarters of the breadcrumbs and the eggs with plenty of seasoning. Transfer to a baking dish and smooth the surface. Toss the remaining breadcrumbs with the oil, seasoning and thyme leaves, then scatter over the mash. Dot with a few knobs of butter. The dish can now be covered and chilled for up to 48 hrs, or frozen for up to a month - defrost completely before baking.
  • To serve, heat oven to 200C/180C fan/ gas 6 and bake for 40 mins or until piping hot and the crumbs are crisp.

SWEET POTATO AND PARSNIP MASH

1 1/4 pounds sweet potatoes
1 pound parsnips
1/3 cup heavy cream
2 tablespoons unsalted butter
1/2 teaspoon table salt
1 packed tablespoon freshly grated horseradish, divided
Additional salt and horseradish to taste
Sugar, maple syrup or honey, if needed to sweeten

Steps:

  • Peel the sweet potatoes and parsnips, and cut into 1/4-inch thick slices.
  • Combine the sweet potato and parsnip slices, cream, butter, salt and half of the horseradish in a 3- or 4-quart saucepan with a tight-fitting lid. Heat over low heat, stirring occasionally, until the vegetables have softened. This will take about 40 to 50 minutes.
  • Remove from heat and mash with a potato masher to desired texture. Stir in half of remaining horseradish, making sure to incorporate well. Taste and adjust seasoning with salt, additional horseradish and/or sweetener if needed. Serve hot.

4 1/2 lbs root vegetables (celeriac, potatoes, *swede, parsnips, carrots, Jerusalem artichokes)
salt & freshly ground black pepper, to taste
extra virgin olive oil or butter

Steps:

  • *NOTE: swedes are known in US as rutabagas. I've also used yams/sweet potatoes, turnips and fingerlings in this recipe. ~fyi~.
  • Feel free to use any single vegetable or a mixture of your favorites. Cookgirl says that a mixture of root vegetables is the way to go!
  • Peel the root vegetables then chop up into golf-ball sized pieces, place in salted boiling water and cook until very tender.
  • Drain in a colander.
  • Place the vegetables back in the pan and mash with a potato masher.
  • You can mash them as smooth or as chunky as you like. Season with salt and pepper, then enrich the flavor with extra virgin oil or butter, or both, to taste. (I prefer using both olive oil and butter.).
  • Jamie continues to say: once cooked, the mashed vegetables can be kept warm in a bowl covered with kitchen foil over simmering water. This is handy when cooking for a dinner party -- (especially when timing is of utmost importance.).

2kg mixed root vegetable , cut into small chunks , we used 1 swede, 1 celeriac and 6 carrots
50g butter
3 tbsp extra-virgin olive oil
2 tbsp wholegrain mustard

Steps:

  • Put the veg in a large pan of salted water. Bring to the boil and cook for 15 mins until tender. Drain well, then mash adding the butter, oil and mustard. Season generously. Mix together until the butter has melted, and serve piping hot. This can be made a day ahead and reheated in the pan with a touch more butter, or in the microwave.
