SUNNY'S PUMPKIN AND CHICKEN BITES WITH SUNNY'S CREME FRAICHE DIPPING SAUCE

Sunny's Pumpkin and Chicken Bites with Sunny's Creme Fraiche Dipping Sauce image

Provided by Sunny Anderson

Categories     appetizer

Time 1h45m

Yield 48 bites

Number Of Ingredients 20

One 15-ounce can pumpkin puree
1 rotisserie chicken, skin discarded, meat shredded or chopped
1 stalk celery, finely chopped
1 clove garlic, grated on a rasp
2 teaspoons chopped fresh sage, 3 to 4 leaves
2 teaspoons chopped fresh thyme, 10 to 12 sprigs
1 cup walnuts, toasted and chopped
2 scallions, finely chopped
1/2 cup dried cranberries, chopped
1 teaspoon Hungarian paprika
Kosher salt and freshly ground black pepper
1 1/2 cup shredded Swiss or gruyere
24 empanada wrappers, such as Goya discos
2 eggs
Sunny's Creme Fraiche Dipping Sauce, to serve, recipe follows
8 ounces creme fraiche
3 scallions, cut into thirds
1 clove garlic, grated on a rasp
1 tablespoon hot sauce, such as Frank's Red Hot Sauce
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • For the filling: In a large bowl, combine the pumpkin puree, chicken, celery, garlic, sage, thyme, walnuts, scallions, dried cranberries and Hungarian paprika. Taste, making sure to get a bit of each ingredient in the sample. There should be a nice balance of sweet and savory; adding a nice pinch of salt can bring you to the right place. Stir before tasting again and adjust as needed. Once done with the salt, add a few grinds of black pepper. Add the cheese and stir to combine. Refrigerate until mix is firm and less sticky, about 20 minutes.
  • For the wrappers: Wrappers should be packed with paper between each. Remove one wrapper at a time along with the paper and roll and flatten each slightly with a rolling pin. If not packed with paper, roll on a sheet of wax paper. Cut each in half to create 48 half circles. Fill one side of each half with a heaping tablespoon of filling and fold the empty side over the filled side to create a triangle with a curved edge. Then, using the tines of a fork, close both open sides by pressing them together with the top 1/2 inch of the fork. Repeat for the rest.
  • In a small bowl whisk the eggs and 1 tablespoon water. Lightly brush one side of each bite and place the brushed side up on a parchment or nonstick aluminum foil-lined baking sheet. Bake until golden brown, 20 to 24 minutes. Serve with Sunny's Creme Fraiche Dipping Sauce.
  • In a food processor, add the creme fraiche, scallions, garlic and hot sauce. Taste the dip and season with a pinch of salt and a few grinds of black pepper. Blend again and taste, seasoning again if needed. Refrigerate at least 30 minutes before serving cold.

1 1/2 cups sour cream
Kosher salt and freshly ground black pepper

Steps:

  • Add 4 cups of water to a medium pot over high heat and bring to a boil. Put the ancho chiles in a medium bowl and pour in the boiling water. Season with salt and pepper, to taste. Transfer to a bowl or jar and store covered in the refrigerator.

BREAKFAST ENCHILADAS WITH RED SAUCE

Breakfast Enchiladas with Red Sauce image

Provided by Sunny Anderson

Categories     main-dish

Time 1h10m

Yield 4 to 6 servings

Number Of Ingredients 37

2 tablespoons vegetable oil
1/2 cup diced onion
Salt
2 cloves garlic, crushed
1 teaspoon ground cumin
2 tablespoons tomato paste
10 Roma tomatoes, seeded and chopped (about 3 cups)
1 cup chicken broth
1 pound ground turkey
1 clove garlic, minced
1 jalapeno, seeded and minced
3 tablespoons light brown sugar
1 teaspoon red pepper flakes
1 teaspoon salt
1 teaspoon chopped fresh sage leaves
1 teaspoon chopped fresh thyme leaves
1/4 teaspoon cayenne pepper
1/4 teaspoon black pepper
2 tablespoons vegetable oil
3 Roma tomatoes, seeded and chopped
1/4 cup freshly chopped cilantro leaves
8 eggs
2 tablespoons milk
2 tablespoons butter
8 (8-inch) flour tortillas, warmed
3/4 cup shredded Cheddar
3/4 cup shredded Monterey jack
1 cup sour cream
Sunny's Refried Beans, recipe follows
1 tablespoon vegetable oil
1 garlic clove, minced
1 jalapeno, minced
1/4 cup diced onions
1 packet Sazon seasoning (about 1 1/4 teaspoons)
2 (15.5-ounce) cans pinto beans
1 lime, juiced
Salt and freshly ground black pepper

Steps:

  • Preheat oven to 375 degrees F.
  • To make the red sauce: Heat the oil in a small saucepan over medium-high heat. Add onion and salt, and saute until onions start to soften, about 3 minutes. Add garlic, cumin, and tomato paste and saute until paste starts to brown, another 4 to 6 minutes. Add tomatoes and chicken broth. Bring to a boil, reduce heat to medium and simmer until tomatoes break down and sauce thickens, about 20 minutes. Season with salt, to taste.
  • To make the turkey sausage: In a large bowl, mix together all the ingredients but the oil with your hands. Heat the oil in a cast iron skillet over medium-high heat until pan is hot. Add sausage and brown until turkey is almost crispy, breaking up the sausage mixture as it cooks, about 10 minutes. Set aside.
  • In a bowl, mix together tomatoes and cilantro. Set aside.
  • To scramble the eggs: Whisk the eggs with the milk in a medium bowl. In a fry pan, over medium low heat, melt butter. Add eggs and let sit to form curds, about 30 seconds, then gently move curds around pan, let sit another 30 seconds and repeat until eggs are just cooked, about 3 to 4 minutes. Remove from heat.
  • To assemble enchiladas: Grease the baking dish lightly with oil. Heap 2 or 3 large spoonfuls of the turkey sausage into the center of a tortilla. Put another 2 spoonfuls of the egg mixture on top followed by the chopped tomato and 1 tablespoon of each cheese. Roll up tightly and place in the baking dish, seam side down. Repeat with remaining tortillas. Pour Red Sauce down the middle over tortillas and sprinkle with remaining cheese. Bake, until cheese is golden and bubbly, about 20 minutes. Serve with dollop of sour cream and Sunny's Refried Beans on the side.
  • In a saucepan, heat oil over medium heat. Add garlic, jalapeno, onion and Sazon. Saute until they start to soften, about 3 minutes. Add 1 can of pinto beans including the liquid in the can. Simmer until beans heat through and soften, another 4 to 5 minutes. Using a fork or potato masher, mash the beans. Drain the second can of pinto beans and add those to the pot. Stir mixture together and cook until beans warm through. Stir in lime juice and season, to taste, with salt and pepper. Serve with Breakfast Enchiladas.

  • In a large saucepan, place the crushed tomatoes, olive oil, balsamic vinegar, garlic powder, oregano, kosher salt, and whole basil leaves.
  • If desired, pulse with a blender: All crushed tomato brands are different, and some may be chunkier than other. If you’d like, pulse the sauce a bit in a blender or immersion blend to get to the desired texture (we like ours a little chunky, but you could make it fully smooth too).
