THAI GREEN CURRY MEATBALLS WITH ZOODLES



Thai Green Curry Meatballs with Zoodles image

3 tablespoons vegetable oil
3 tablespoons Thai green curry paste
Two 13.5-ounce cans coconut milk
One 14-ounce bag plain frozen meatballs, thawed
Kosher salt and freshly ground black pepper
Two 16-ounce packages fresh zucchini noodles (zoodles)
1 red Thai bird chile, sliced very thin on the bias
1/2 cup fresh basil leaves
1/2 cup fresh cilantro leaves
2 teaspoons toasted black sesame seeds
2 teaspoons toasted white sesame seeds
1 lime, cut into wedges

Steps:

  • Heat 2 tablespoons oil in a large saucepan or wide pot over medium heat. Add curry paste and bloom in the oil, stirring frequently, until very fragrant, about 2 minutes. Stir in coconut milk and bring to a simmer. Add thawed meatballs and continue to simmer, stirring frequently, until meatballs are heated through, another 3 to 5 minutes. Season with salt and pepper to taste.
  • Heat the remaining tablespoon oil in another large pan over medium-high heat. Add the zoodles and a pinch of salt and cook, stirring occasionally, until zoodles are warmed through and some of their moisture has evaporated, about 5 minutes.
  • Evenly divide the zoodles among 4 bowls. Ladle curry over zoodles and top each with a few meatballs. Top each with sliced Thai bird chiles, basil, cilantro and black and white sesame seeds. Serve with lime wedges.

2 tablespoons salted butter
1 tablespoon olive oil
1/2 cup roughly chopped white onions
4 hot dogs, sliced into 1/2-inch rounds
1 cup ketchup
1/4 cup honey
1 tablespoon yellow curry powder, plus more for dusting
Freshly cracked black pepper
2 servings frozen shoestring fries, cooked according to directions on package (frying method preferred)
4 hot dog buns, toasted on a dry pan

Steps:

  • Cook the wieners: In a large pan, add the butter, oil and onions and cook over medium heat until the onions have softened, about 6 minutes. Add the hot dogs and cook, stirring occasionally, until the hot dogs take on some color, about 5 minutes.
  • Make the sauce: In a small bowl, stir the ketchup, honey, curry powder and a few grinds of black pepper until combined. Pour over the hot dogs and onions and cook until the ketchup color deepens and the consistency thickens a bit, about 5 minutes.
  • Build the hot dogs: Add an equal amount of prepared fries to each opened bun. Top with an equal amount of the curry wiener mixture and a dusting of curry powder to finish. Serve.

One of the first meals many home cooks attempt is spaghetti and meatballs. It's simple yet comforting, and whether we grew up eating it from a can or homemade, the dish has a rightful place in our childhood memories. I first learned to twirl my fork with spaghetti from the can, and somewhere along the way, maybe when it was decided that I would enjoy the nuances of a different version, my mom's homemade spaghetti and meatballs arrived at the table. But this recipe isn't hers; it's yours! Now let's get down to it: According to the poll I posted, you all had mixed feelings about using dried herbs versus fresh, but dried won with 51 percent of the votes. It was so close, I'll leave you fresh-herb lovers with a tip: If you go with fresh, use three times more than the amount of dried herbs in the recipe. And although no one asked, you should know that this recipe goes well with garlic bread. And tons of it. So here it is: a recipe curated by you and for you. 1 pound ground beef
1/3 cup Italian seasoned breadcrumbs
1/4 cup grated Parmesan cheese
2 large cloves garlic, grated
1/2 teaspoon dried parsley
1/2 teaspoon dried basil
Kosher salt and freshly ground pepper
1/4 cup milk
1 large egg
1 teaspoon Worcestershire sauce
1/4 cup extra-virgin olive oil
2 tablespoons extra-virgin olive oil
1 onion, finely chopped
2 large cloves garlic, grated
1/2 teaspoon dried parsley
1/2 teaspoon dried basil
Kosher salt and freshly ground pepper
1/4 cup dry red wine
1 28-ounce can crushed tomatoes
1/2 cup low-sodium chicken broth
1 teaspoon sugar
12 ounces spaghetti
Grated Parmesan cheese, for topping

Steps:

  • Make the meatballs: Combine the beef, breadcrumbs, cheese, garlic, parsley, basil and 3/4 teaspoon each salt and pepper in a large bowl. Whisk together the milk, egg and Worcestershire sauce in a small bowl. Pour over the meat and gently mix with your hands until well blended. Roll into 12 golf ball-size meatballs. Refrigerate until chilled, at least 20 minutes.
  • Heat the olive oil in a large Dutch oven or other pot over medium-high heat. Add the meatballs in a single layer and cook, turning, until well browned all over, 6 to 8 minutes. Remove the meatballs to a plate and set aside. Discard the oil and gently wipe out the pot with a paper towel.
  • Make the sauce: Heat the olive oil in the same pot over medium heat. Add the onion and cook, stirring, until translucent, about 5 minutes. Stir in the garlic, parsley, basil and 1/2 teaspoon each salt and pepper; cook 1 minute. Add the wine and cook, scraping up the browned bits from the bottom of the pot, until the wine is nearly evaporated, about 2 minutes. Stir in the tomatoes, chicken broth, sugar and 1/2 cup water.
  • Add the meatballs to the sauce. Bring to a simmer, then reduce the heat to low and cook until the meatballs are cooked through and the sauce thickens slightly, 18 to 20 minutes; season with salt and pepper.
  • Meanwhile, bring a large pot of salted water to a boil. Add the spaghetti and cook as the label directs for al dente. Reserve 1/2 cup cooking water, then drain. Return the spaghetti to the pasta pot, ladle in about half of the sauce and toss well to coat, adding more sauce if necessary. Divide the spaghetti and meatballs among bowls. Top with Parmesan and serve with the remaining sauce.

Nonstick cooking spray, for the baking dish
3 tablespoons olive oil
1/2 onion, diced
1 green bell pepper, cored, seeded and diced
Kosher salt and freshly ground black pepper
2 cloves garlic, minced
1 teaspoon Italian seasoning
Half a 32-ounce bag frozen store-bought meatballs, defrosted and sliced in half
One 32-ounce jar marinara sauce
Two 8-ounce bags Italian cheese blend
One 5-ounce bag garlic croutons, crushed

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9-by-13-inch baking dish with nonstick cooking spray.
  • Heat the olive oil in a medium skillet over medium heat. Add the onion and green pepper, then sprinkle with salt and pepper and saute until tender, about 5 minutes. Add the garlic and Italian seasoning and cook for another 1 to 2 minutes. Remove from the heat and set aside.
  • In a large bowl, combine the meatballs, marinara sauce and cheese. Add the cooked onion and pepper mixture. Mix to combine, then transfer to the prepared baking dish. Top with the crushed croutons. Bake until the cheese is melted and bubbling, 30 to 35 minutes. (If the topping starts to get too brown, loosely cover with foil toward the end of the bake.)

SUNNY'S SWEET 'N SOUR GARDEN COLLARDS

1 tablespoon olive oil
4 slices bacon, cut into small pieces
1 medium onion, chopped
1 bunch collards, trimmed, ribs discarded and thinly sliced
4 sun-dried tomatoes, chopped
2 tablespoons balsamic vinegar
Kosher salt and freshly ground black pepper

Steps:

  • In a saute pan on medium heat, add the oil, bacon and onions and cook until the fat has rendered, the bacon is crisp and the onions are tender. Add the collards and sun-dried tomatoes to the pan and continue to cook until the greens wilt, about 2 minutes. Add in the balsamic vinegar and season with salt and pepper, to taste. Transfer to a serving bowl and serve immediately.

CURRY COCONUT CHICKEN BREASTS

4 boneless, skinless chicken breasts, sliced in half horizontally and pounded thin
1 generous tablespoon curry powder
Salt and freshly ground black pepper
Vegetable oil, for frying
1/2 cup all-purpose flour
3 eggs
2 tablespoons milk
1/2 teaspoon cayenne pepper
1 cup sweetened shredded coconut flakes
1 cup panko breadcrumbs

Steps:

  • Sprinkle the chicken on both sides with a pinch of curry powder, a pinch of salt and a grind of pepper. Allow to rest on the counter at room temperature for about an hour.
  • In a large pan with straight sides, add enough oil to fill 2 inches deep. Heat the oil to 350 degrees F.
  • Meanwhile, dredge the chicken. On 1 plate, combine the flour and a pinch of salt. In a bowl, whisk together the eggs, milk, cayenne and a pinch of salt. On another plate, add the coconut, the remaining curry powder, breadcrumbs and a pinch of salt. Stir to combine, turning the coconut yellow. To dredge, first place the chicken breasts in the flour and coat on all sides. Shake off any excess flour and dunk in the egg mixture. Remove and press all sides into the coconut mixture.
  • Fry the chicken in batches to keep the oil temperature around 330 to 350 degrees F. Cook until deep golden brown on 1 side, 4 to 5 minutes. Flip and cook about 4 more minutes. Remove to a paper towel-lined plate and sprinkle with salt. Serve warm.

  • Add ground pork, 1 teaspoon salt, 1/2 small grated onion, ginger, 1 grated garlic clove, cilantro, bread crumbs and milk to a bowl. Use hands to mix until combined. Do not over mix! Use a small cookie scoop to form into meatballs. You should get about 21-23 meatballs.
  • Heat oil in a large skillet over a medium heat. Once oil is hot, add meatballs. Cook until brown on top and bottom, about 3-4 minutes per side. Remove from pan, and set aside.
  • Add remaining olive oil to pan. Reduce heat to medium-low. Add onion, sauté until slightly softened, about 2-3 minutes. Add garlic, cook another 30 seconds. Add curry paste, cook 30 seconds. Whisk in coconut milk, agave, remaining salt, and peanut butter. Bring to a boil and reduce to a simmer until thickened, about 7-8 minutes.
  • Add meatballs back to the sauce and simmer another 2-3 minutes. Garnish with more cilantro, and coconut. Serve with brown rice.
