SUNFLOWER SEED VEGAN CHEESE AND TOMATO BAKE



Sunflower Seed Vegan Cheese and Tomato Bake image

Sunflower seed cheese and tomato bake is comfort food that's also loaded in nutrition. No flour, no eggs, no butter, no dairy, no junk in this healthy potato recipe.

2 cups / 300 g cherry tomatoes, cut into half
1 onion, peeled and sliced
1 red pepper, seeds and stem removed, cut into strips
1 lb / 450 g white potatoes, cut into slices
2 cups / 280 g sunflower seeds
2-4 tbsp nutritional yeast, depending on how much you like the flavour
1 tsp yeast extract
3 cloves of garlic
1 tsp turmeric
½ tsp cayenne pepper
2 cups / 500 ml water

Steps:

  • Blend together all of the sunflower seed cheese sauce ingredients together.
  • In a large baking dish (10-12″) place a layer of sliced potatoes, sprinkle in the onion pepper and cherry tomatoes.
  • Pour over one-third of the sunflower cheese sauce, trying to fill in the gaps in between.
  • Repeat steps 2-3 a couple of more times until the dish is full.
  • Bake in the middle of the oven for 75-90 mins at 190 C / 375 F.
  • Test that the potato is cooked by sliding in a knife and remove from the oven when cooked.
  • If the potato is not cooked at the topping is golden then reduce the heat by a quarter, move to the bottom of the oven and continue to bake.
  • Enjoy as soon as it's cool enough to eat. It is however just as delicious cold the next day.

A tasty accompaniment to steamed fish, grilled or BBQd meats, which is also low in those fats which are bad for you. The sunflower seeds add texture and crunch as well as a good dose of energy-giving vitamin B1, a vitamin essential to all Zaar addicts spending long hours on the computer. Adapted from a 'Pan or Wok' recipe card from International Masters Publishers.

350 g waxy potatoes
2 red onions
3 garlic cloves
1 tablespoon olive oil
2 tablespoons sunflower seeds
2 tablespoons fresh flat leaf parsley, finely chopped, plus a few unchopped sprigs for garnish
1 small lemon, juice of
salt & freshly ground black pepper, to taste

Steps:

  • Wash, peel and finely dice the potatoes into small even-sized dice. Peel and chop the onions, and peel and finely chop the garlic.
  • Heat the oil in a large, non-stick pan or wok, then add the potatoes, onion and garlic, and sauté for 15 minutes, stirring frequently, until the onions and garlic have softened and the potatoes are fully cooked.
  • Stir the sunflower seeds, chopped parsley and lemon juice into the pan or wok, season to taste, and toss the mixture until all the ingredients are thoroughly combined and heated through.
  • Garnish with the reserved parsley and serve.

1 large sweet potato, diced in 1 1/2 cm square pieces
1/4 cup raisins
4 tablespoons sunflower seeds, shelled
2 tablespoons olive oil
salt and pepper, to taste

Steps:

  • Preheat oven to 425 degrees.
  • Chop sweet potato. Spread evenly over bottom of large glass baking pan.
  • Sprinkle raisins and sunflower seeds evenly over potato pieces.
  • Coat liberally with olive oil (drizzle over and stir things up, then spread evenly again.).
  • Bake for 20-30 minutes, until tender.
  • Serve and enjoy!
